1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups frozen corn, thawed
1 cup finely chopped sweet red pepper
3/4 cup finely chopped green pepper
1/2 cup finely chopped red onion
1 tablespoon minced fresh parsley
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons red wine vinegar
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
Tortilla chips

Steps:

  • In a large bowl, combine the beans, corn, peppers, onion and parsley. Combine the sour cream, mayonnaise, vinegar and seasonings; pour over corn mixture and toss gently to coat. Serve with tortilla chips. Refrigerate leftovers.

2 packages (8 ounces each) fat-free cream cheese, cubed
1 can (15 ounces) black beans, rinsed and drained, divided
3/4 cup shredded reduced-fat cheddar cheese
6 green onions, chopped
1-1/2 teaspoons ground cumin
Dash cayenne pepper
TOPPING:
1/4 cup shredded reduced-fat cheddar cheese
2 tablespoons diced fresh tomato
2 tablespoons chopped green onion
Tortilla chips

Steps:

  • In a food processor, cover and process cream cheese until smooth. Add half of the beans; cover and pulse until blended. Transfer to a bowl; stir in the cheese, onions, cumin, cayenne and remaining beans. Cover and refrigerate for 8 hours or overnight., Just before serving, garnish with cheese, tomato and onion. Serve with tortilla chips.

2 tablespoons vegetable oil or lard
1 large white onion, finely chopped
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon ground fennel seeds
2 (15-ounce) cans black beans, drained

Steps:

  • Heat oil in a large skillet over medium-high. Add onion and 1/2 tsp. salt and cook, stirring occasionally, until caramelized, about 15 minutes. Stir in fennel and cook 30 seconds. Add beans, remaining 1 tsp. salt, and 2 Tbsp. water and heat through, stirring to combine. Transfer to a food processor or blender and purée until smooth.
  • Do Ahead
  • Bean spread can be stored in an airtight container and chilled for up to 3 days. Bring to room temperature before serving.

1 3/4 cups black beans, rinsed and drained (about 1 14-oz can)
2 tablespoons lime juice
1/2 cup mild salsa (or use whatever "heat" you like)
2 tablespoons fresh parsley, chopped
1/2 teaspoon cumin
1 1/2 tablespoons tahini or 1 1/2 tablespoons peanut butter

Steps:

  • Combine first five ingredients in a blender. (Or save the salsa to add later, if you want more salsa chunks in your dip.).
  • Blend until very smooth.
  • Drizzle in the tahini, and salsa if you didn't yet, and blend again till well combined.
  • Refrigerate until ready to serve.

My personal preference is to add a little more cayenne pepper for heat, but this is also a great mild dip. In Mexico, Frijoles de la Olla (slow cooked beans in a pot) are typically prepared in large clay pots over an open fire with pepper and spices. You can achieve similar results at home with a large pot or a pressure cooker!

1 pound dried black beans, rinsed and picked over
3 tablespoons extra-virgin olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1 jalapeno pepper, halved and seeded
2 teaspoons ground cumin
2 teaspoons dried oregano, preferably Mexican
Kosher salt
Queso fresco and fresh cilantro, for topping (optional)

Steps:

  • Soak the beans in a pot of water overnight. Drain.
  • Heat the olive oil in the pot over medium heat. Add the onion, garlic, jalapeno and cumin and cook, stirring occasionally, about 5 minutes. Add the oregano and the beans, then add enough water to cover (about 9 cups). Increase the heat to medium high and bring to a boil, then reduce the heat to medium low, partially cover and cook, stirring occasionally, until the beans are just tender, about 3 hours.
  • Add 2 teaspoons salt and simmer, uncovered, stirring occasionally, until the liquid is mostly absorbed, about 45 minutes. Season with salt. Let sit 15 minutes before serving; top with queso fresco and cilantro, if desired.

⅛ teaspoon onion powder
1 pinch garlic powder
1 pinch crushed red pepper flakes
1 pinch ground black pepper

Steps:

1 16-ounce can of refried beans (any kind, but pinto is most common)
4 ounces cream cheese, softened
1/2 cup sour cream
2 tablespoons taco seasoning
1 4-ounce can of green chiles
1 cup of shredded cheddar cheese, divided
pico de gallo, for serving
Tortilla chips, for serving

Steps:

  • Preheat the oven to 350-degrees Fahrenheit, and ensure your cream cheese and sour cream are softened.
  • In a large bowl, combine the refried beans, softened cream cheese, sour cream, taco seasoning, green chiles and half of the shredded cheese.
  • Using an electric mixer, beat the mixture together until smooth and creamy, about 1 minute. Spread the mixture into an 8x8" baking dish.
  • Sprinkle the remaining cheddar on top. Bake the bean dip for 20 minutes, or until the edges start to barely bubble.
  • Let cool slightly, and then spread store-bought pico de gallo on top before serving with tortilla chips.

  • Peel the garlic. Drain the black beans, but don't rinse them. Juice the lime.
