RITA'S SPINACH CASSEROLE
This is a quick and delicious way to get kids to eat spinach! Ground beef and tomato sauce are layered in a casserole with spinach and mozzarella cheese.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Bring a pan of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes.
- Crumble ground beef into a skillet over medium-high heat. Cook, stirring constantly until evenly browned. Drain excess grease, and stir in the tomato sauce, sour cream and thyme.
- Place the cooked pasta into the bottom of a 2 quart casserole dish. Pour the ground beef mixture over the pasta. Cover with a layer of spinach. Top with shredded cheese.
- Bake for 30 minutes in the preheated oven, until heated through and lightly browned on the top.

I created this casserole while trying to use up some ingredients I had. It came out sooooo good. Sometimes I had some green pepper and/or mushrooms. It's a regular favorite!

Steps:
- Brown ground beef in a skillet with onion and garlic. Drain.
- While beef is browning, prepare pasta in a large pot according to package directions. Drain pasta and set aside.
- Return empty pasta pot to stove and over med-low heat, stir together tomato sauce and cream cheese until cream cheese is melted and mixture is smooth.
- Reduce heat to low. Add 1 cup of the cheddar cheese; stir well. Add thyme, oregano, basil, salt and pepper. Stir well.
- Add drained pasta, drained browned beef mixture and drained spinach to pot. Gently stir to combine and coat well.
- Pour into a 13 x 9" baking dish or similar size casserole dish. Sprinkle with remaining 1 cup cheddar cheese.
- Bake at 350 for 25-30 minutes or until cheese is melted and starting to slightly brown.

- Preheat oven to 350 degrees F.
- Spray 9x13-inch baking dish with nonstick cooking spray; set aside.
- Cook pasta according to package directions and drain.
- Place spinach on paper towel and squeeze until almost all moisture has been removed.
- Add oil to a large nonstick skillet and place over medium heat. Add onion and garlic and sauté until tender.
- Add chicken and cook until no longer pink, stirring occasionally.
- Stir in tomatoes, marinara sauce, tomato paste, basil, oregano and crushed red pepper flakes. Bring to a boil and then reduce heat.
- Simmer 5 minutes, uncovered stirring occasionally.
- Combine pasta, spinach, chicken mixture and 1/4 cup cheese in a large mixing bowl.
- Spoon into prepared baking dish and sprinkle with remaining 1/4 cup Parmesan cheese over the top.
- Bake for 20 minutes and serve.

- Preheat oven to 350 degrees F.
- Lightly grease a 9x13-inch baking dish.
- Cook pasta according to al dente package directions and drain.
- Heat oil in saucepan over medium heat. Add mushrooms and saute for 1 minute and set them aside.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot. Melt cream cheese into the pasta. Stir pasta sauce, Italian seasoning, and red pepper flakes into the pasta mixture.

- In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
- Add spinach and cook until wilted. Set aside.
- Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
- Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
- Add salt and pepper to taste.
- Place in a large baking dish, cover in a layer of shredded cheese.
- Cover with tin foil and place in a 350°F oven for 30 minutes.
- Uncover and place back in oven for another 10 minutes.
