1/4 cup chopped chives
2 tablespoons minced onions
2 -3 garlic cloves, minced
1 lb feta cheese
3 -4 tablespoons olive oil, to make spreadable

Steps:

  • Process basil leaves, chives and onions in food processor until fine.
  • Add feta and garlic and process until well mixed.
  • Slowly add enough olive oil to make spreadable.

I found this on a Greek recipe site. It looks a lot like a feta spread that I have had a Greek restaurant I love, so anxious to try.

1 lb feta cheese
1 cup basil leaves, loosely packed
1/4 cup chives, chopped
2 -3 garlic cloves
olive oil

Steps:

  • Process basil and and chives in food processor until fine. Add feta and garlic until well mixed. Add enough olive oil to make spreadable.
  • Spread on bread, crostini, or little pizzas, dollop on pasta, or add to soups or vegetables.

1 (4 ounce) package crumbled garlic and herb feta cheese
4 ounces fat free cream cheese
salt and pepper to taste
1 sprig fresh basil for garnish

Steps:

  • Combine the feta cheese and cream cheese in the container of a food processor or blender. Process until well blended. Remove to a serving dish and season with salt and pepper. Garnish with a sprig of basil, and serve.
