This macaroni and cheese takes on a subtle coastal flair with the addition of shrimp. I used cooked salad shrimp as I found the size comparable to the elbow macaroni.

½ cup elbow macaroni
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
¾ cup 1% milk
½ cup shredded sharp Cheddar cheese
1 ½ tablespoons sour cream
½ teaspoon Cajun seasoning
1 cup frozen salad shrimp
2 tablespoons panko bread crumbs
2 tablespoons shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour 5 cups water into a saucepan. Cover and bring to a boil over high heat. Add macaroni and boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Stir in flour until a smooth paste is formed. Slowly pour in milk, stirring to incorporate. Add 1/2 cup Cheddar cheese, sour cream, and Cajun seasoning. Drain macaroni and stir into the sauce. Add frozen shrimp and stir to combine.
  • Pour macaroni mixture into an oval au gratin dish. Top with panko bread crumbs and 2 tablespoons Cheddar cheese.
  • Bake in the preheated oven until bubbly and golden, about 20 minutes.

Shrimp Macaroni and Cheese is gooey, rich, creamy comfort food kicked up a notch with Old Bay seasoned shrimp. This is a creamy, rich, and decadent seafood macaroni and cheese recipe for an 'over the top' experience.

1 1/4 cups uncooked pasta (elbows, medium shells, Cavatappi)
1/2 lb shrimp (peeled, deveined, and tails removed)
1 teaspoon Old Bay Seasoning
2 tablespoons butter (divided)
1 1/2 cups shredded Cheddar Jack cheese
1 cup heavy cream
1 Egg
4 ounces processed cheese food (Velveeta cheese)
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Cut the processed cheese food into small cubes and set aside.
  • Bring a large sauce pan of water to a boil. Sprinkle in a pinch of salt.
  • Add the pasta and cook according to the package directions.
  • At the same time, cut each shrimp into 2 or 3 bite sized pieces and sprinkle with the Old Bay seasoning. Click for Old Bay Seasoning.
  • Heat a skillet over medium heat and add 1 tablespoon of butter.
  • Cook the shrimp for about 2 minutes, stirring often until pink and opaque. Remove from the heat and set aside. Do not overcook as they will cook a bit more during baking.
  • Drain the water off the pasta and return it to the cooking pot over low heat.
  • Stir 1 tablespoon butter into the pasta until melted and turn off the heat.
  • Preheat the oven to 350 degrees F (180 degrees C).
  • Whisk together the egg and heavy cream.
  • To the pasta, add the heavy cream mixture, 1 cup of shredded cheese, and the processed cheese food cubes (Velveeta cheese).
  • Pour in the shrimp and butter from the skillet, scraping the pan to get all the butter.
  • Mix it all together and season with the salt and pepper.
  • Pour the pasta mixture, divided evenly, into two 20 oz oven safe baking dishes. Click for 20 oz oven safe baking dishes.
  • Sprinkle the tops with the remaining 1/2 cup of shredded cheese.
  • Bake for 30 - 35 minutes until heated through and bubbling around the edges.

This baked mac and cheese - perfect for a large crowd or as a side dish - is super simple to make. The cream cheese gives it richness and a little tang.

1 pound elbow macaroni
2 1/2 cups half and half
1/8 to 1/4 teaspoon cayenne pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces gruyere cheese, shredded (about 1 cup)
1 cup panko bread crumbs
4 tablespoons unsalted butter, melted

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and the reserved pasta water to the saucepan and stir to combine. (It will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Season to taste with salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs with the butter and a sprinkle of salt in a small bowl and sprinkle evenly over the top of the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

1 8-ounce package frozen shrimp, such as sea cuisine shrimp scampi
9 tablespoon butter, divided
1/3 cup flour
2 cup milk
4 cup shredded gruyere cheese
2 cup shredded sharp cheddar
½ cup shredded swiss cheese
1½ cup fresh breadcrumbs
2 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cook the shrimp as directed on the package. Remove the shrimp tails and discard.
  • Meanwhile, melt 6 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour until blended. Gradually whisk in the milk; bring to a simmer and cook for 3 minutes. Stir in the Gruyère until melted. Stir in the Cheddar, Swiss, salt, and pepper until blended.

1/2 teaspoon minced garlic
4 ounces grated cheddar cheese
4 ounces grated fontina cheese
4 ounces grated gruyere cheese
1/4 cup fresh bread crumbs
1/2 teaspoon Essence or Creole Seasoning
4 tablespoons butter, plus 2 tablespoons, plus 1 tablespoon
4 tablespoons flour
2 cups half and half
3/4 teaspoon salt
1/4 teaspoon ground white pepper
1/4 teaspoon Emeril's Red Hot Sauce
8 1/2 ounces grated Parmigiano-Reggiano, or other good-quality parmesan cheese (about 2 cups)
1 pound elbow macaroni

Steps:

  • In a heavy, medium saucepan melt 4 tablespoons of the butter over low heat. Add the flour and stir to combine. Cook, stirring constantly, for 3 minutes. Increase the heat to medium and whisk in the half and half little by little. Cook until thickened, about 4 to 5 minutes, stirring frequently. Remove from the heat, season with the salt, pepper, hot sauce and 4 ounces of the grated parmesan. Stir until cheese is melted and sauce is smooth. Cover and set aside.
  • Preheat the oven to 350 degrees F.
  • Fill a large pot with water and bring to a boil over high heat. Add salt to taste and, while stirring, add the macaroni. Return to a boil, reduce the heat to a low boil and cook for about 5 minutes, or until macaroni is very al dente (slightly undercooked). Drain in a colander and return the macaroni to the pot. Add 2 tablespoons of the butter and the garlic and stir to combine. Add the bechamel sauce and stir until well combined. Set aside.
  • Using the remaining tablespoon of butter, grease a 3-quart baking dish or casserole and set aside.
  • In a large bowl combine 4 ounces of the remaining parmesan cheese, cheddar, fontina and gruyere cheeses. Toss to combine.
  • Place one-third of the macaroni in the bottom of the prepared baking dish. Top with one-third of the mixed cheeses. Top with another third of the macaroni and another third of the cheese mixture. Repeat with the remaining macaroni and cheese mixture. In a small bowl combine the bread crumbs, remaining 1/2 ounce of grated parmesan, and the Essence and toss to combine. Sprinkle this over the top of the macaroni and cheese.
  • Bake for 40 to 45 minutes, or until the macaroni and cheese is bubbly and hot and the top is golden brown. Remove from the oven and allow to sit for 5 minutes before serving.
