WARM BLUE CHEESE DIP WITH GARLIC AND BACON
Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
- Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
- Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
- Bake covered in the preheated oven 30 minutes, or until lightly browned.

WARM AND CREAMY BACON DIP
Steps:
- Bring cream cheese to room temperature. Preheat oven to 400 degrees.
- In a bowl, combine all ingredients. Place in 1-quart baking dish. Cover. Heat 25-30 minutes or until hot.
- Serve with assorted fresh vegetables, crackers and/or chips. Makes 3 cups.
- *Serving option: Dip may also be placed in hollowed round sourdough loaf, wrapped in foil and heated in 400 degree oven for 30 minutes.
BLUE CHEESE AND WALNUT SPREAD
This spread is also delicious served on apple or pear wedges. Rub them first with lemon juice to prevent discoloration.

- Preheat oven to 350 degrees.
- Bake walnuts in single layer in an shallow pan for 6-8 minutes or until toasted and fragrant., stirring after 3 minutes.
- Cook bacon in skillet over medium high heat, stirring often, 10 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 1 tbsp drippings in skillet. Add minced garlic to hot drippings and saute for 1 minute.

BLUE CHEESE AND BACON DIP
This easy appetizer recipe is creamy and flavorful with chunks of blue cheese and bacon.

- In a frying pan over medium heat cook the bacon until crisp. Drain on paper towel and crumble. Set aside 2 TBSP for topping the dip.
- Leave about 2 to 3 TBSP bacon grease in the frying pan and saute the minced garlic 2 to 3 minutes or until just starting to turn golden. Remove from heat.
- In a large mixing bowl beat the cream cheese and half and half until smooth and well blended.
- Add the blue cheese, garlic, 1 TBSP of the chives, and 2 TBSP walnuts. Mix gently until combined
- Put dip into an oven proof bowl with lid and heat in the oven at 350 degrees for 20 to 30 minutes or until mixture is bubbly. Stir occasionally.
- Remove from oven and sprinkle with remaining bacon, chives and walnuts.
- Serve on a platter with grapes and crackers
