CREAMY APPLE-RICOTTA BREAD PUDDING



Creamy Apple-Ricotta Bread Pudding image

Cinnamon raisin bread cubes and apple chunks are baked in a sweetened ricotta and egg custard for a creamy bread pudding. Serve for dessert or brunch.

Number Of Ingredients 9

1 container (15 oz.) POLLY-O Original Ricotta Cheese
2 cups milk
2 eggs
3/4 cup sugar
8 slices cinnamon-raisin bread, cubed
1 large apple, peeled, chopped
1 tsp. vanilla
2 Tbsp. sugar
1/8 tsp. ground cinnamon

Steps:

  • Preheat oven to 350°F. Beat ricotta cheese in large bowl with wire whisk until creamy. Add milk, eggs and 3/4 cup sugar; beat until well blended. Add bread cubes, apples and vanilla; stir gently until bread cubes are evenly moistened.
  • Pour into greased 3-qt. shallow baking dish.
  • Bake 45 to 50 min. or until center is almost set. Combine 2 Tbsp. sugar and the cinnamon; sprinkle over pudding. Cool. Store leftover pudding in refrigerator.

1 pkg unflavored gelatin
1/2 c cold water
1 c heavy cream
3/4 c granular splenda or equivalent liquid splenda
1-2 tsp pure vanilla extract
15 oz whole milk ricotta cheese

Steps:

  • 1. In a medium pot, evenly sprinkle the gelatin over the cold water. Let stand 5 minutes.
  • 2. Cook and stir over low heat until the gelatin is completely dissolved but don't let it boil.
  • 3. Whisk in the cream, Splenda and vanilla. Pour the cream mixture into a blender. Add the ricotta cheese. Blend on high speed until pureed and smooth.
  • 4. Pour into 6 custard cups or small dessert dishes. Chill at least 2 hours or until set.
