Noodle kugel is a traditional Jewish holiday dish of egg noodles baked in a sweet or savory custard.

- Combine the brown sugar, flour, cinnamon, and salt in a medium bowl. Using your fingers, mix until no lumps of brown sugar remain. Rub in the butter with your fingertips until the mixture has a clumpy, crumbly texture. Refrigerate until ready to use.
- Preheat the oven to 325°F and set an oven rack in the middle position. Butter a 9 x 13-inch baking dish.
- Bring a large pot of unsalted water to a boil. Cook the noodles for 6 to 8 minutes, or according to package instructions, until tender. Drain well.
- In a large bowl, whisk the eggs. Add the sour cream and softened cream cheese and whisk to combine. Add the half & half, sugar, salt, vanilla, and cinnamon, and whisk until completely smooth.
- Spread the cooked noodles evenly in the prepared baking dish. Pour the custard mixture evenly over top. Cover the dish tightly with aluminum foil and bake for 35 minutes. Remove and discard the foil. The custard should be just set. Sprinkle the streusel topping evenly over the top, making sure to cover all the noodles. Bake for 35 to 40 minutes more, until the streusel topping is crisp. Let cool for about 20 minutes, then cut into squares and serve.
- Make Ahead: The kugel and topping can be assembled and stored separately in the fridge up to a day ahead of time, and then baked before serving. (The kugel with the streusel topping may also be fully cooked a day ahead of time and reheated, however the texture will be denser than if baked fresh. To reheat, cover with foil and place in a 325°F oven for 25 minutes; remove and discard the foil, and continue baking for 20 to 25 minutes more, or until warm throughout and crisp on top.)

APPLE NOODLE KUGEL

- Preheat oven to 375 degrees F. Grease a 9-by-13-inch casserole dish with butter or baking spray.
- Bring a large pot of salted water to a boil. Cook the noodles for 4 minutes, then drain and set aside.
- In a large mixing bowl, Whisk together the butter, cottage cheese, sour cream, sugar, eggs, and cinnamon. Stir in the noodles, raisins and chopped apples.
- Prepare the topping: in a small bowl, combine the sugar, cinnamon and salt using a fork.
- Pour filling into the prepared casserole dish, and top evenly with the cinnamon sugar mixture.
- Bake until custard is set and top is golden brown, approximately 40 to 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with cooking spray. Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente. Drain.
- In a large bowl, mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce. Stir in noodles and raisins.

This is a really easy, really delicious way of making a great kugel. The recipe calls for wide noodles and I will post it that way, but I prefer medium noodles. The recipe was in a pamphlet from Comstock-Wilderness and we enjoyed it, I hope you do too.

- Preheat oven to 350 degrees Fahrenheit.
- Cook noodles according to package directions.
- Place cooked noodles in a 9x13 pan sprayed with cooking spray.
- Combine 1 cup sugar, apple pie filling, eggs, sour cream, vanilla and 1 1/2 teaspoons ground cinnamon.
- Pour apple mixture over noodles and sprinkle with raisins.(I lightly stir mixture at this time).
- In a medim bowl, combine cornflakes, 1 teaspoon ground cinnamon and 1/2 cup sugar.
- Sprinkle over entire top of noodles.
- Top with butter pieces.
- Bake 45 minutes or until brown and bubbly.

- Preheat oven to 350 degrees F. Bring a large pot of water to a boil. Add egg noodles, stir, and boil until tender. Drain. Melt 2 tbsp of butter in the hot noodles and stir to coat.
- In a food processor or blender, combine eggs, vanilla, cinnamon, sugar, cream cheese, cottage cheese and sour cream. Blend the ingredients until creamy.
- Add creamy mixture to the noodles in the pot along with the raisins. Drain the pineapple chunks and dice them into small pieces, then add them to the pot. Stir all ingredients until thoroughly mixed. Pour the noodles into a greased 9×13 baking dish.
- Combine graham cracker crumbs, melted butter, sugar and cinnamon in a small mixing bowl to form a crumbly topping.Sprinkle the topping evenly over the top of the kugel.
- Cover dish with foil and place in the oven. Bake the kugel for 40 minutes. Remove the foil and bake for 20 minutes more until the top is golden brown.May be served warm or cold. Refrigerate if you don't plan on serving it the same day you make it. If you want to reheat your kugel, place it in a 350-degree oven for 15-20 minutes, or until heated through.

- 1. Put eggs and sour cream into a bowl and mix on medium speed until combined. Mix in 1/2 cup sugar, 1/2 cup melted butter and the softened cream cheese. Set aside.
- 2. Heat 2 tbsp. butter in a large skillet over medium heat. Stir in 2 tbsp. sugar, 1/2 tsp.cinnamon and 1/4 tsp. nutmeg. Add apples; gently toss to coat. Cook, tossing occasionally, until soft, 8 to 10 minutes.

- Preheat oven to 350 degrees. Prepare and spray a 9 x 13 inch baking pan or two 8 x 8s with nonstick spray. I used a layer of parchment paper too, so that it wouldn’t stick. (For a smaller batch, halve the recipe and use only one 8 x 8 inch pan.)
- Boil the egg noodles according to the package instructions, but underboil them by boiling for a few minutes less than instructed. (I boiled mine for only about 5 minutes). This way, they won’t get soggy when you cook them again in the oven.
- When the noodles are done, add in half the butter (3 tbsp) to prevent them from sticking. The heat from the noodles should melt it.
- Melt the other half of the butter (3 tbsp) in the microwave or on the stove top. Beat or hand-whisk the cream cheese, melted butter, and sugar in a large bowl until creamy and smooth.
