With turkey and broccoli, this special scalloped potato dish is a meal in itself. Using a jar of Alfredo sauce makes the preparation time minimal. -Lissa Hutson, Phelan, California

1 jar (16 ounces) Alfredo sauce
1 cup whole milk
1 teaspoon garlic powder
3 pounds potatoes, peeled and thinly sliced
5 tablespoons grated Parmesan cheese, divided
Salt and pepper to taste
2 to 3 cups cubed cooked turkey
3 cups frozen chopped broccoli, thawed
2 cups shredded Swiss cheese, divided

Steps:

  • In a large bowl, combine the Alfredo sauce, milk and garlic powder. Pour a fourth of the mixture into a greased 13x9-in. baking dish. Layer with a fourth of the potatoes; sprinkle with 1 tablespoon Parmesan cheese, salt and pepper., In a large bowl, combine the turkey, broccoli and 1-1/2 cups Swiss cheese; spoon a third over potatoes. Repeat layers twice. Top with remaining potatoes. Sprinkle with remaining Swiss and Parmesan cheeses. Spread with remaining Alfredo sauce mixture., Cover and bake at 400° for 45 minutes. Reduce heat to 350°. Bake, uncovered, 30 minutes longer or until potatoes are tender. Let stand for 15 minutes before serving.

1 1/2 pounds Yukon gold potatoes
1 1/2 pounds russet or red skin potatoes
1 cup Alfredo sauce
1 cup three Italian Asiago, Parmesan, and Romano cheese blend
4 cloves garlic
1/2 cup heavy cream
1/3 cup chopped flat-leaf parsley
4 tablespoons unsalted butter
flaky sea salt
freshly cracked black peppercorns

Steps:

  • Rinse potatoes and cut off any bad spots. I leave the potato skin on for more flavor.
  • Cut the potatoes in half or into quarters, make sure the potatoes chunks are all about the same size so they're all done at the same time.
  • Put the potatoes into a stockpot and fill the pot until the potatoes are just covered.
  • Add two tablespoons of Kosher salt to the pot.
  • Place the potatoes over med-high heat and cook for 12-15 minutes.
  • While the potatoes are boiling, place a saucepan over medium heat and melt the unsalted butter.
  • When the butter is melted add the Alfredo sauce, heavy cream, minced garlic, and chopped flat-leaf parsley.
  • Test the potatoes to make sure they can be pierced with a fork.
  • Drain your potatoes, I let my cooked potatoes drain in a colander for 4-5 minutes.
  • Place the potatoes back into the stockpot and place it over low heat for 3-4 minutes.
  • Use your preferred potato masher and begin smashing the potatoes, add the melted butter and Alfredo sauce mixture.
  • Mix the potatoes until they are your preferred consistency. I like mine smashed potatoes to be a little chunky but feel free to mash them until they're smooth, it's your call.
  • Add more salt, I prefer finishing salt and more freshly cracked black peppercorns at this stage of the recipe.
  • Serve

This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

2 cups cream (heavy, or 35% cream is best)
1/4 cup butter (cold)
1/4 cup Parmesan cheese (grated)
salt and pepper (ideally white pepper)
pasta (fettucini, penne or tortellini are great, or use a non-wheat pasta for a gluten free recipe)
fresh parsley (chopped for garnish)
1 clove garlic (chopped (optional))
extra parmesan cheese

Steps:

  • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
  • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
  • In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
  • When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).

5 lb Yukon potatoes (13 med-large potatoes)
Optional: 1 bay leaf and 2 pierced garlic cloves
2 cups heavy cream
1 medium onion (finely diced)
1 large carrot (grated)
1 can Alfredo Sauce (15 oz)
1 Tbsp salt + more to taste
3 Tbsp unsalted butter
1 Tbsp canola oil

Steps:

  • Wash, peel and cut potatoes in quarters. Place them in the pot and cover with water (optional - add 1 bay leaf and 2 pierced garlic cloves to infuse potatoes with extra flavor). Bring to a boil and cook additional 12-15 min. Add 1 Tbsp of salt only after water starts to boil. Don't overcook, potatoes should be smoothly pierced with a knife but not crumbly.
  • While potatoes are cooking, dice onion and grate carrot. Add 1 Tbsp of canola oil to a large skillet and heat to medium high. Once the skillet is preheated, melt 2 Tbsp of butter and stir in onion. Saute onion for 5 min. Add carrot and saute for 3 more minutes until softened.
  • Place onion/carrot mix in the blender & pulse a few times to make the mix more fine (this step is optional).
  • Melt 1 Tbsp of butter in the same skillet and add blended carrot mix. Stir in 2 cups heavy cream and bring mixture to boil. Add 1/2 tsp salt, or more to taste.
  • Remove skillet from the heat, add 1 can of Alfredo Sauce and stir.
  • Drain cooked potatoes (and remove garlic and bay leaf if used). Pour sauce over potatoes and cover with lid. Wrap the pot with a blanket or a few towels for a minimum of 2 hours before serving (this step is NOT optional and infuses the potatoes with some fantastic flavor).

1/2 cup shredded sargento 6 cheese Italian cheese blend (2 oz.)

Steps:

  • Grease a 13" x 9" baking dish.
  • In a small saucepan, combine cream, milk, garlic, salt and pepper; bring just to a simmer over medium heat; remove from heat; let stand while preparing potatoes.
  • Peel and thinly slice potatoes.
  • Layer half of the potatoes in prepared baking dish; top with half of the cream mixture and half of the cheeses; repeat layering once with remaining potatoes, cream mixture and cheeses.
  • Drizzle the melted butter and sprinkle paprika evenly over top.
  • Bake in a preheated 350 degree oven for 55 to 60 minutes or until potatoes are tender.
  • Let stand 5 to 10 minutes before serving.

Steps:

  • Breeze Alfredo Sauce: Melt butter in a medium saucepan over medium heat. Add 3 tablespoons flour; cook and stir for 1 minute. Slowly whisk in Almond Breeze almondmilk and broth. Cook, whisking constantly, until mixture is thickened and bubbly. Reduce heat to low and stir in cream cheese. Toss Parmesan cheese with the remaining tablespoon of flour. Add a small handful at a time to the sauce, whisking until smooth and melted before adding more. Season with garlic salt and pepper.
  • Option 1 - Tacos: Place sauce in a small saucepan and cook over low heat until sauce is hot. Stir in cheese, chiles, and seasoning blend and cook until cheese is melted, stirring occasionally.
  • Option 2 - Loaded Baked Potatoes: Pierce potatoes with a fork and place on a microwave-safe plate. Microwave on high for 10 to 12 minutes or until potatoes are soft when gently squeezed. While potatoes are cooking, place sauce in a small saucepan and cook over low heat until sauce is hot. Stir in cheese and sour cream and cook until cheese is melted, stirring frequently. Stir in broccoli. Carefully cut potatoes in half and fluff the insides. Stir half the sauce into each potato. Place potatoes on 4 plates and top with remaining sauce. Sprinkle with bacon bits and green onions, if desired.
  • Option 3 - Alfredo Pizza: Preheat oven to 425 degrees F and line a large baking sheet with foil. Spread sauce onto pizza and sprinkle evenly with cheese. Finish with any desired toppings, such as thinly sliced red onion, sliced olives, sliced bell peppers, cooked and crumbled Italian turkey sausage, or diced ham. Place pizza on baking sheet. Bake for 15 minutes or until lightly browned around the edges.
  • Option 4 - Spinach and Tomato Alfredo Chicken: Melt butter in a large skillet over medium heat. Add chicken and cook for 5 minutes on each side or until lightly browned and cooked through. Remove chicken from skillet. Add sauce and basil to skillet. Cook for 2 to 3 minutes or until sauce is hot. Add spinach and tomatoes and cook until spinach is wilted. Add chicken back to skillet and turn to coat with sauce.

  • Bake 45 minutes. Remove foil. Sprinkle with remaining 1 1/2 cups mozzarella cheese. Bake 15 minutes longer or until potatoes are tender and top is golden brown. Let stand 10 to 15 minutes before serving.
