CLAM CHOWDER RECIPE
Clam chowder is one of my all-time favorite comfort soups. Luckily it's very easy to make. This recipe is a keeper. I can confidently say this New England Style Clam Chowder rivals my favorite restaurant version! P.S. this recipe has a much lower fat content. This lighter clam chowder only has 1 cup of cream for the entire pot but maintains it's super creamy appeal and has incredible satisfying flavor.

- In a heavy bottomed soup pot or dutch oven, Saute chopped bacon over med/high heat until browned, then remove with a slotted spoon and set aside on paper towels. You should have about 3-4 Tbsp bacon fat in the pot; remove extra fat if you wish, but I left it in ;).
- In the same pot with bacon fat add in 2 sliced carrots, 2 stalks celery (diced), 1 small onion (finely diced) and saute over med/high until soft and golden (7-8 min). Sprinkle with 4 Tbsp flour and stir to combine. Sautee another minute.
- Stir in 2 cups chicken broth, 1 bay leaf, 1/2 tsp tabasco, 2 cans chopped clams with juice, 1 1/2 tsp worcestershire sauce, 1/2 tsp thyme, 1/4 tsp pepper, and about 1 to 1 1/2 tsp salt or to taste. Bring to a light boil.
- Add 1 1/2 lbs cubed potatoes, 1 cup heavy cream and 2 cups milk. Stir to combine, cover and lightly boil until potatoes are easily pierced with a fork, stirring occasionally (17-20 mins). It will thicken as it cools. If it's too thick, you can add a little milk to thin it out.
- To serve, garnish with your browned bacon, finely chopped cilantro (cilantro takes it to the next level) and serve with crackers or crusty bread.
CREAMY LINGUINE WITH CLAM SAUCE
Very easy, quick and sinfully satisfying. Great with a tossed green salad with vinaigrette dressing.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta, stirring occasionally, until cooked through but still slightly firm, about 11 minutes. Drain well.
- Heat the butter and olive oil in a skillet over medium heat until it begins to brown slightly. Stir in the onion; cook and stir until the onion becomes lightly golden, about 10 minutes. Stir in the garlic and cook for 1 minute more. Add the reserved clam juice and wine. Simmer until reduced by half, about 15 minutes. Stir in the Alfredo sauce and clams; cook and stir until heated through, about 5 minutes.
- Serve the clam sauce over the linguine, and sprinkle with Parmesan cheese and red pepper flakes.

CLAM CHOWDER

- In a large pot over medium-high heat add the bacon and cook until slightly crisp and no longer pink. Remove it to a plate with a slotted spoon.
- Add the onion, celery, and garlic and cook until tender. Add the flour and stir.
- Add in the juice from the clams, chicken broth, milk, and half and half, then stir until there aren't any clumps. Add in the potatoes.
- Bring the pot to a boil and reduce heat to a simmer until the potatoes are tender and the soup is thick. Stir in the clams and salt and pepper to taste. Top with crumbled bacon and serve.

- Heat a large soup pan over medium heat. Add bacon and cook until crispy, 5 to 7 minutes. Add butter, potatoes, celery, carrots, onion, salt, and black pepper. Reduce heat to low. Cook and stir 10 minutes. Sprinkle in flour and stir 1 minute. Add milk, clam juice, clams, lemon juice, thyme, cayenne pepper, garlic salt, and onion powder. - IN a 4-quart pot, add 1 medium bay leaf, 1 (8 ounce) bottle clam juice, 1 (15 ounce) can chicken broth, and the strained juice from one (10 ounce) can baby clams (reserve clams and set aside).
- ADD 1-2 tablespoons pre-cooked crumbled bacon, 1/4 teaspoon dried thyme, 1/4-1/2 teaspoon Old Bay Seasoning, and 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion; STIR.
- BRING mixture to a boil, then reduce heat to medium.
- COVER and cook for 7 minutes, or until potatoes are firm-tender.
- UNCOVER and reduce heat to medium-low; ADD 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes, and 1 (15-16 ounce) jar traditional Alfredo sauce; BLEND well.
- STIR in the reserved clams, 2 tablespoons snipped green onions, and 2 teaspoons fresh lemon juice.

- Add bacon to sauce pan and cook on medium low heat until crispy.
- Add onion and cook until translucent.
- Add clam juice from both cans.
- Add potatoes.

- Place a large pot over medium heat, and when the pan is hot, add the bacon. Sauté until the bacon renders it's fat and is crispy.
- Scoop out the bacon bits and set them aside. Pour out some of the bacon fat if there's too much, you'll need around 2-3 tablespoons in the pan.
- Add the onion, garlic, and celery to the pan. Sauté over medium low temperature until the onion begins to turn translucent and is soft.
- Add the thyme, stir to combine, then add the bay leaf, reserved juice from the clams, the bottle of clam juice, and the chicken stock.
- Stir to combine again, then add the potatoes and bacon bits. Bring to a boil, then lower the heat to maintain a simmer. Cook until the potatoes are tender, 15-20 minutes. When the potatoes are done, remove the bay leaf.
- Then using a ladle, scoop out 2 cups of the cooked potatoes, draining off excess liquid, and add them to a blender. Don't worry about spooning out the other ingredients with the potatoes, this won't matter.
- Add the coconut cream to the blender with the potatoes, then blend on low speed just until the potatoes are mostly smooth.
- Add the potato/coconut cream mixture back to the chowder and stir to combine. Turn the heat off and add the clams. Stir again, then season to taste with salt and pepper.
- Serve immediately. Any leftovers reheat well on the stove top. This soup doesn't freeze super well because the potatoes tend to come out with a mushy texture.
ONE POT CLAM CHOWDER
One Pot Clam Chowder is an easy recipe that can be made on the stove or in your instant pot! This classic New England chowder is rich, thick, and so creamy!

- Heat a medium size soup pot over medium heat and add in the butter and onion. Stir and cook until the onion becomes translucent and add in the garlic, salt, pepper and fresh thyme.
- Stir and cook until the garlic and thyme become fragrant.
- Add in the potatoes and clams and pour in the clam juice and 1 ½ cups of the chicken broth.
- Stir to combine and bring it to a boil over high heat.
- Cook for 8-10 minutes or until the potatoes are just cooked but not super soft.
- Reduce the heat to low medium and pour in the milk. Mix the flour and heavy cream together.
- Pour it into the soup and stir to combine.
- Bring the soup to a low simmer and stir every thirty seconds to prevent burning. Simmer until the soup has thickened. If it thickens too much, add in the remaining chicken broth, stir and remove it from the heat.
- Serve immediately with bread, bacon, chopped green onions as desired.
- Set the instant pot to sauté mode. Add in the butter and onion and stir every minute or so until the onion becomes translucent.
- Turn the instant pot off and add in the garlic, salt, pepper and fresh thyme. Stir and let it cook with the residual heat from the pan.
- Add in the potatoes and clams and pour in the clam juice and 1 ½ cups of chicken broth.
- Place the lid on the instant pot and close the quick release valve.
- Set the instant pot to manual mode for 6 minutes.
- Once cooked, quick release the pressure, being careful not to burn yourself with the hot steam.
- Remove the lid once all of the steam has been released and pour in the milk. Mix the heavy cream and flour together in a bowl and pour it into the pot as well. Stir to combine.
- Set the instant pot to the low sauté mode.
- Let the broth simmer and thicken as you stir the entire time to prevent burning.
- Once it has thickened slightly, turn the instant pot off and continue stirring for 2-3 minutes until the pot cools down. The soup will continue to thicken as it cools. If it thickens too much, pour in the remaining chicken broth and stir. Serve immediately.
