ORANGE CREAMSICLE PIE

Tickle your taste buds with this super-tangy orange Creamsicle pie, made all the more delicious with the addition of marmalade.

1 cup boiling water
1 (3-ounce) box orange jello
4 ounces unsalted butter, plus more for greasing pan
2 cups graham cracker crumbs
3 tablespoons sugar
1 1/4 cups whipping cream
1/4 cup orange marmalade
1 tablespoon orange zest
1/4 cup whipping cream, whipped to stiff peaks, for garnish
Orange slices, or orange zest, for garnish

Steps:

  • Gather the ingredients.
  • Heavily grease a 7-inch tart pan with butter and set aside.
  • Add the boiling water to the jello powder and stir to dissolve. Set aside to cool.
  • Melt the butter in a saucepan, add the graham cracker crumbs and sugar, and mix thoroughly. Once mixed, check to see the crumb will set by squeezing a little in your hand. It should hold together, but not be soggy. If it's too dry, it will need a little more butter; if too greasy, just add a touch more crumb.
  • Using your hands, press the mixture into the greased tart pan, evenly across the bottom and up the sides. Using a flat-bottomed glass or cup, push the crumb down to create a firm crust. Place in the refrigerator to chill.
  • Whip 1 1/4 cups of the cream with a hand or electric whisk until firm, but not stiff. Gently pour the jello, marmalade, and 1 tablespoon of the zest into the cream and stir carefully with a metal spoon until thoroughly mixed. Try not to flatten the cream.
  • Carefully pour the mixture into the pie crust. Tap the pan on a work surface to release any air bubbles then place it in the freezer for about 1 hour. Once frozen, wrap in plastic wrap if you are not eating immediately.
  • Remove the pie from the freezer at least 30 minutes before eating (or it will be too hard).
  • Before serving, whip the remaining 1/4 cup cream and spoon or pipe in generous swirls onto each slice of pie; add a small slice of orange or a sprinkle of orange zest.
  • Enjoy.

1½ cups vanilla wafer crumbs
6 tablespoons unsalted butter, melted
1 (14-ounce) can sweetened condensed milk
5 large egg yolks
1 teaspoon orange zest
½ cup fresh orange juice
¼ cup fresh lemon juice
Sweetened whipped cream or thawed frozen whipped topping
Garnish: orange zest, orange slice

Steps:

  • Preheat oven to 350°. In a medium bowl, stir together wafer crumbs and melted butter. Firmly press mixture into bottom and up sides of a 9-inch pie plate. Bake for 12 minutes or until golden brown. Let cool completely. In a large bowl, whisk together condensed milk and next 4 ingredients until smooth. Pour into cooled crust. Bake for 15 to 20 minutes or until center has set. Let pie cool to room temperature, then refrigerate for at least 3 hours or until chilled. Top pie with whipped cream, and garnish with zest and orange slice, if desired.

18 graham crackers, finely crushed (about 1-1/4 cup crumbs)
1/4 cup white sugar
1/3 cup margarine or 1/3 cup butter, melted
1 quart vanilla ice cream, softened
6 ounces orange juice concentrate, thawed
Cool Whip or whipped cream, to garnish
orange slice, to garnish (optional)

Steps:

  • In small bowl, combine crumbs, sugar and margarine; press onto bottom and sides of 9-inch pie plate; set aside.
  • In large bowl, with electric mixer on medium speed, blend ice cream and orange juice concentrate; spread in prepared crust.
  • Freeze until firm, about 4 hours.
  • Before serving, garnish with Cool Whip or whipped cream, and orange slices if desired.

1 1/2 cups (6 ounces) pecan halves
1 tablespoon sugar
6 tablespoons (3/4 stick) butter, melted
8 ounces whipped cream cheese
Zest and juice of 1 orange
1 packet (.03 ounces) sugar-free orange gelatin
1 cup heavy cream
Fresh mint sprigs, for garnish (optional)

Steps:

  • Preheat the oven to 350°F.
  • In the bowl of a mini food processor, chop the pecans until very fine and transfer to a 9-inch pie plate. Stir the sugar into the pecans and add the melted butter. Mix until the pecans are completely moistened. Press the nuts evenly into the pan with your fingers to create an even crust. Bake until the crust is golden, 6 to 8 minutes. Set aside to cool. (Pop it into the freezer or fridge to speed up this process.)
  • When the crust is completely cool, make the filling. Mix the cream cheese together with the orange juice in a bowl until smooth. Open the gelatin packet, add 1/2 teaspoon to the cream cheese mixture, and stir vigorously until well mixed. Pour the mixture into the chilled crust and spread it evenly with a spoon or spatula. Pour the heavy cream and remaining gelatin into a clean bowl. With an electric hand mixer, beat the cream until soft peaks form. Pour the cream over the cream cheese filling and spread it decoratively over the top. Sprinkle the orange zest over the pie and refrigerate for at least 2 hours.
  • To serve, cut into 8 slices, plate, and garnish with a sprig of mint.

This has all the luscious flavors of a creamsicle bar: orange, vanilla and chocolate. We love this simple pie. I find the ice cream and sherbet soften nicely if stored in the door of the freezer. Perhaps yours works the same way. Otherwise you may microwave at 50% for about 30 seconds. Cooking time is actually freezing time.

1 (9 ounce) box famous chocolate wafers, crushed (reserve 1/2 cup for topping)
1/2 cup butter, melted
1 quart vanilla ice cream, softened slightly
1 quart Orange sherbet, softened slightly
1 (11 ounce) jar fudge sauce (optional)

Steps:

  • For the crust, combine all but 1/2 cup of the chocolate crumbs with the butter in a 10-inch pie plate. Press into the bottom and up the sides of the plate. Do not bake: the soft ice cream mels into the crumbs so they adhere nicely when sliced.
  • Drizzle 1/3 of the fudge sauce over the crumbs. Layer 1/2 of vanilla ice cream in shell and drizzle another 1/3 of fudge sauce over. Add orange sherbet and drizzle with remaining fudge sauce. Top with remaining vanilla ice cream and sprinkle with reserved crumb. Freeze.
  • To serve, let sit out at room temperature 10-15 minutes before slicing.
