COCONUT BANANA CREAM PIE
This amazing Coconut Banana Cream pie has a triple dose of coconut and an amazing homemade custard. The buttery coconut crust totally sets this pie apart adding amazing flavor and crunch.

Steps:
- Spray a 9 inch pie plate with nonstick cooking spray & set aside.
- In a large skillet, melt butter. Add coconut and continue to cook over medium heat until coconut just turns golden brown. Press the coconut into prepared pie plate. Chill 30 minutes.
- In a small bowl, whisk together the egg yolks, ¼ cup granulated sugar, cornstarch, salt, and flour. Slowly whisk in 1 cup of half and half.
- In a medium saucepan, combine the remaining half & half and ½ cup sugar and bring just to a boil medium heat. Slowly stir in the egg mixture and continue to cook, stirring constantly until thick & bubbly.
- Remove from heat and add food coloring (if using), 2 teaspoons of vanilla and 1 ½ cups of coconut, stirring until evenly combined. Pour into a bowl and cover the surface with plastic wrap (Plastic should be directly on the surface of the warm custard). Refrigerate for 4-6 hours.
- Whip the heavy cream in a chilled bowl until soft peaks form. Add the powdered sugar and vanilla and continue to whip until peaks are just stiff.
- Layer sliced bananas in cooled crust. Pour chilled filling over bananas. Spread whipped cream over the top and shape it into a decorative mound. Sprinkle The top evenly with ½ cup toasted coconut and serve immediately

- In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
- Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

- Dissolve cornstarch in water in heavy saucepan; stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly. Remove from heat; add butter and vanilla. Cool slightly. Fold in coconut.
- Slice bananas; dip in lemon juice and drain. Arrange on bottom of pie crust. Pour filling over bananas; cover.
- Chill 4 hours or until set. Top with whipped cream. Garnish with toasted coconut and sliced bananas, if desired.

GRANDMA'S BANANA CREAM PIE
My grandmother was a wonderful cook, made great pies, and this was my favorite. She always used a homemade pie crust and served it with a dollop of Cool Whip or whipped cream on top. She didn't give me any idea how many bananas to use...so I guessed. She would also use the same custard, making a half batch, for the filling in cream puffs.

- TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
- In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
- In a medium saucepan, scald remaining milk, stirring constantly.
- While you continue stirring the milk in the pot, add a small amount of the scalded milk to the flour paste and a small amount to the egg/sugar mixture.
- Pour both mixtures into the pot with the scalded milk and stir well.
- Cook over medium heat, stirring constantly, until thickened. Remove from heat.
- Add butter and vanilla, and stir well.
- TO ASSEMBLE PIE: Pour a layer of custard filling in in the pie shell.
- Place a layer of sliced bananas on top of the filling, then repeat with custard & bananas, and ending with a final top layer of custard.
- Refrigerate once the custard has cooled.
- Serve with whipped cream or Cool Whip.

- Preheat oven to 350. Combine the graham cracker crumbs, sugar and pinch of salt until combined. Stir in melted butter and mix thoroughly, until all the graham cracker crumbs are coated with butter. Press the crumbs into the bottom and up the sides of a springform pan (I used a 9 inch pan). Make sure the crumbs go all the way up the sides, nearly to the top. The crust needs to be high enough to hold in the generous amount of filling that will be added later. Bake the crust for about 10 minutes, until golden brown and fragrant. Cool to room temperature and then carefully transfer to the refrigerator to cool completely.
- In a saucepan over medium heat, bring the cream and milk to a simmer, whisking a couple of times. Meanwhile, in a medium bowl, whisk sugar, cornstarch, salt and egg yolks until combined. Once the milk is simmering, slowly add a cup of the warm milk into the egg mixture, whisking constantly (this will help bring up the temperature of the egg mixture without scrambling the eggs). Once the cup of milk is incorporated, slowly pour the entire egg mixture into the saucepan, whisking while you pour. Bring the mixture to a boil, and boil for about 5 minutes, whisking constantly. The mixture will thicken. Remove from the heat and whisk in vanilla extract and butter.
- Whip the heavy cream, powdered sugar and vanilla until stiff peaks form. Spread whipped cream onto the top of the pie and refrigerate until ready to serve. Right before serving, garnish the pie with additional sliced bananas and shredded coconut*. Store any remaining pie in the fridge.
COCONUT BANANA CREAM PIE - CRAZY FOR CRUST

- Place the sugar, salt, cornstarch, and milk in a medium saucepan. Cook over medium-high heat, whisking/stirring almost constantly, until thick and bubbly (about 7-8 minutes), then reduce the heat to low and cook 2 minutes more.
- Stir a small amount of hot milk mixture into the lightly beaten eggs. Make sure you’re whisking the entire time so you don’t scramble the eggs. Pour the milk and egg mixture back into the pan. Bring to a boil and cook, stirring constantly, 2 minutes more. It will boil very quickly after you add it back to the pan.
