CREAMY STINGING NETTLE RECIPE
High in vitamins, minerals, and protein, the stinging nettle is also simple and delicious as a creamy side dish, Balkan-style.

- Clean and rinse one pound stinging nettles. Bring a large pot of water to a boil. Add nettles and cook until wilted, about 5-10 minutes. Drain in a colander.
- In a large cast iron or non-stick skillet, heat the two tablespoons butter and two garlic cloves over medium heat, until garlic is fragrant, about 30 seconds.
- Whisk in one tablespoon flour and cook until smooth and bubbly, about one minute.
- Add the nettle and 1/2 cup reserved cooking liquid. Simmer the nettle, stirring, until the liquid has evaporated, about 10 minutes.
- In a small bowl, whisk together 1/3 cup milk and two tablespoons sour cream. Stir into the nettles. Add a pinch of nutmeg; season with salt and pepper to taste. Cook over medium heat until mixture thickens, about 3-5 minutes.
- Add a swirl of sour cream on top if you wish. Enjoy!

Steps:
- Pick the nettles using gloves.
- Remove the stems and blanche the leaves in boiling salted water for one minute.
- Drain and rough chop.
- Cook the pasta.
- Heat the cream in a large saute pan. Once it simmers add the nettles and reduce the misture by half.
- Drain your pasta and put into a big dish and add the Nettle Cream sauce. Add grated nutmeg, cheese and seasonings. Give it a toss and serve hot.

Stinging nettle is one of the most nutritious foods native to North America. I absolutely love it in soup, in place of basil in pesto, or simply steamed with butter. This is one of my favorite ways of preparing nettles, though. With cream and cheese, how can one go wrong? Serve as a side dish with fried oysters or in a small bowl on its own. A dollop of creme fraiche or ricotta cheese on top would be classy.

- Bring a large pot of salted water to a boil. Add nettles; cook until wilted, about 4 minutes. Drain, reserving cooking water.
- Transfer drained nettles to a blender; blend until smooth.
- Melt butter in a large skillet over medium-low heat. Add shallots; cook and stir until very soft, about 10 minutes. Stir in heavy cream, salt, and pepper. Simmer until cream coats the back of a spoon, about 2 minutes. Stir in Parmesan cheese and blended nettles until well-combined.

- Drop the nettle leaves into a medium sized stockpot, sprinkle with salt and pour in 1 to 2 tablespoons water. Set the pot over medium-low heat on your stove, and cover it with a tight-fitting lid. Allow the nettles to wilt until they release their juice, soften and grow limp - about 20 minutes. Remove the nettle leaves with a slotted spoon and transfer them to a fine-mesh sieve , press them firmly with the back of a wooden spoon so their juice runs out, then set them aside while you prepare the omelet.
- Warm the clarified butter in a large and well-seasoned cast-iron skillet ) over medium-high heat. When it melts, pour in the eggs, swirl the pan to promote an even layer of egg and let them cook in the hot butter until the edges begin to ruffle ever so slightly - about 5 to 10 seconds. Reduce the heat to low, and cover the skillet with a lid for 20 to 30 seconds or until the eggs set. Lift off the cover, and fill one side of the omelet with the wilted nettles, sprinkle with chives and top with slices of cheddar cheese. Fold the unfilled half of the omelet over the filling, return the lid and let it sit a further 20 to 30 seconds, then serve.
