CREAMED SPINACH

Creamed Spinach image

Provided by Tyler Florence

Categories     side-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 8

3 pounds spinach
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 cloves garlic, lightly smashed
3/4 cup heavy cream
1 teaspoon freshly ground nutmeg
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • Wash the spinach in several changes of water to get rid of any grit. Drain the spinach but keep some of the water clinging to the leaves. Heat the butter and oil in a large skillet over medium-high heat and add the spinach and garlic. Cook, turning frequently, until the spinach has wilted down evenly. Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
  • Heat the skillet again over medium-high heat and add the cream and nutmeg; cook until it reduces a bit, about 5 minutes. Add the spinach and parmesan and season with salt and pepper. Cook until the spinach is hot, about 5 more minutes. Serve immediately.

CHICKEN WITH PROSCIUTTO SPINACH CREAM SAUCE

Chicken with Prosciutto Spinach Cream Sauce image

Tender chicken accompanied by a prosciutto and spinach cream sauce! Delicious and very rich!

Provided by Nellie Fiorenzi

Categories     World Cuisine Recipes     European     Italian

Time 45m

Yield 4

Number Of Ingredients 15

2 eggs
1 cup milk
2 cups Italian seasoned bread crumbs
1 teaspoon garlic powder
1 teaspoon paprika
salt and pepper to taste
¼ cup vegetable oil
4 thin-sliced skinless, boneless chicken breast halves
½ cup white wine
1 tablespoon all-purpose flour
1 pint heavy cream
1 teaspoon minced garlic
1 ½ cups diced prosciutto
3 cups chopped fresh spinach
1 cup shredded mozzarella cheese

Steps:

  • Beat the eggs and milk together in a small bowl; set aside. Stir the bread crumbs, garlic powder, paprika, salt, and pepper together in a separate bowl.
  • Heat the vegetable oil in a skillet over medium heat. Dip the chicken breasts into the egg mixture and press into the bread crumbs, shaking off the excess bread crumbs. Cook the chicken breasts in the hot oil until golden brown on both sides, no longer pink in the center, and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove the chicken breasts from the pan, set aside, and keep warm. Pour the white wine into the pan; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Increase temperature to medium-high and stir in the flour. Cook and stir until the wine has reduced to half its original volume, about 1 minute. Whisk in the cream and garlic and bring to a simmer. Season to taste with salt and pepper; cook and stir until thickened, about 8 minutes. Stir in the prosciutto, spinach, and mozzarella cheese; cook and stir until the cheese has melted and the spinach has wilted. Pour the sauce over the chicken breasts to serve.

Sauteed Spinach with Parmesan Cheese image

Provided by Food Network

Categories     side-dish

Time 20m

Yield 6 servings

Number Of Ingredients 7

2 bunches spinach
2 tablespoons olive oil
3 to 4 cloves garlic, minced
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 small tomatoes, peeled, seeded, and diced
1/2 cup freshly grated Parmesan cheese

Steps:

  • Thoroughly wash and dry spinach and remove stems.
  • Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat. Saute garlic about one minute. Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes. Add salt, pepper, and tomatoes. Cook an additional minute. Stir in grated Parmesan, remove from heat, taste, and adjust seasonings. Serve immediately. If spinach releases too much water, you can drain mixture in a colander before serving. Taste and adjust seasonings again after draining.

THE BEST CREAMED SPINACH

The Best Creamed Spinach image

Use frozen or fresh spinach for this easy creamed spinach recipe that's the ultimate cozy side dish! It comes together in just 25 minutes and has that restaurant-quality taste you crave.

Provided by Natasha Bull

Categories     Side Dish

Time 25m

Number Of Ingredients 9

1 pound frozen chopped spinach or 2 pounds fresh (see notes)
2 tablespoons butter
1/2 medium onion (chopped)
2 cloves garlic (minced)
3/4 cup heavy/whipping cream
4 ounces cream cheese (1/2 block Philly) (softened)
1 cup freshly grated parmesan cheese
Pinch nutmeg
Salt & pepper (to taste)

Steps:

  • Frozen spinach: Thaw the spinach under running water (or try microwaving it for a few minutes to speed up the process), then squeeze out as much of the excess water as you can. Fresh spinach: Boil a pot of water. Add the spinach and cook for about 1 minute. Drain it and rinse it under cool water. Squeeze out excess water. Chop if desired.
  • In a pot, sauté the butter and onion over medium heat until it's lightly browned (about 5-7 minutes).
  • Reduce heat (I keep it on medium-low for this step, but you can increase heat as needed). Stir in the garlic, followed by the heavy cream, cream cheese, parmesan, and nutmeg. It will take a few minutes for the cream cheese to melt in, especially if the cream cheese is cold. I break it up with my spoon/stir it continuously. The sauce should thicken up as it cooks.
  • Stir in the spinach and let it heat through. If you want more liquid, add in a splash more cream. If there's too much liquid, you may need to cook the spinach for a few more minutes to reduce the sauce to your liking.
  • Season with salt & pepper as needed (I am pretty generous with both).

CREAMED SPINACH WITH PARMESAN AND PROSCIUTTO

CREAMED SPINACH WITH PARMESAN AND PROSCIUTTO image

Categories     Leafy Green     Braise     Dinner

Yield 4 people

Number Of Ingredients 11

4 tablespoons unsalted butter
8 slices (thin) prosciutto, chopped fine
2 (10-ounce) bags curly-leaf spinach, stemmed and torn into bite-sized pieces
1 small onion, chopped fine
2 teaspoons minced fresh sage
4 garlic cloves, minced
1/8 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 3/4 cups whole milk
3/4 cup grated Parmesan cheese
Salt and pepper

Steps:

  • 1. Melt 1 tablespoon butter in large Dutch oven over medium heat. Cook half of prosciutto until lightly browned and crisp, about 5 minutes; transfer to paper towel-lined plate. Add spinach to pot in handfuls, stirring to allow each batch to wilt slightly before adding next. Continue to cook until spinach is uniformly wilted and glossy, about 1 minute. Transfer spinach to colander set over bowl and press with wooden spoon to release extra liquid. 2. Wipe out Dutch oven and melt remaining butter over medium heat. Add onion, remaining prosciutto, and sage and cook until onion is softened, about 5 minutes. Stir in garlic and nutmeg and cook until fragrant, about 30 seconds. Stir in flour and cook until golden, about 1 minute. Whisk in milk and simmer, stirring constantly, until thickened, about 3 minutes. 3. Return spinach to pot and stir until heated through, about 1 minute. Off heat, stir in 1/2 cup Parmesan and season with salt and pepper. Transfer to serving bowl, sprinkle with remaining Parmesan, and top with crispy prosciutto. Serve.

  • If you are using bouillon cubes instead of meat/vegetable broth, start by dissolving it in the water according to directions on the package. You might need more than 1 bouillon cube. Consider you’ll need at least 5 cups of stock.
  • We’ll also need to get ready our spinach. If you are using a pack of baby spinach or a pack of spinach that’s already washed and dried, you can skip the next step completely.
  • But if you are using fresh spinach from the local market or your garden, make sure you wash it thoroughly. I like to wash spinach under the cold running water and leave it to drain before I’m preparing the rest of the ingredients. You can also pat-dry it with a paper towel. Remove hard stems, and shred green leaves with a sharp knife. Don’t worry if you still get some pieces of stems in. Once cooked, they’ll be soft and tender, and I actually love feeling those slightly uneven texture bites.
  • Finely chop shallot or a small white onion. Add it to a large skillet pan placed over medium-low heat together with some olive oil. Saute for a minute or two, add rice. Start mixing it into shallots and olive oil in the pan.

  • Creamed Spinach. Let’s start simple. This is a side that goes with lots of dishes and is really easy to make. When you begin to cook it, you may worry that you have used too much spinach.
  • Spinach, Radish and Steak Salad. Spinach is so full of vitamins you can practically taste the goodness! We love nothing better than to serve it with slices of rare steak, a few chopped peppery radishes, and a sour cream sauce.
  • Spinach Mushroom and Leek Pasta. We love pasta, but it tends to look a little bland. Including a few handfuls of wilted spinach as part of the creamy sauce is a surefire way to add a burst of color and texture.
  • Spinach and Ricotta Calzone. For those who aren’t familiar with different pizzas, a calzone is basically a pizza with all of the toppings on the inside instead of on the top.
  • Spinach and Zucchini Gratin. Ever made a gratin and worried that you’ve got too many sliced vegetables. This thing is like a miracle. The trick is to pile your sliced zucchini and spinach as high as you can.
  • Green Machine Smoothie. Breakfast can sometimes be a bit of a chore, but that shouldn’t mean that you miss out on essential vitamins to start your day!
  • Greek Spinach and Feta Stuffed Parcels. One country that knows how to cook spinach is Greece. It goes so well with feta! And, when it is combined between layers of crisp and flaky pastry, it is the taste to die for!
  • Prosciutto and Fig Spinach Salad. When you’ve got an ingredient as good as spinach, sometimes you are best leaving it in its natural state. This salad is carried by all of its lovely ingredients.
  • Spinach Stuffed Pasta Shells. Cheese and spinach go together so well. Because it reduces down and is super soft, it makes the ideal filling for little pasta shells or ravioli.
  • Mixed Vegetable Lasagne. Ok, so spinach might not be the star of the show in this dish, but it complements the other actors really well. We love a vegetarian lasagna as it is a sneaky way to get the kids to eat up all of their vegetables.
