Creamed Spinach with Golden Breadcrumb Topping image

Easy and delicious. Sautéed breadcrumbs top a mixture of spinach, cheese, and sour cream.

Yield Makes 18 servings

Number Of Ingredients 9

1/4 cup (1/2 stick) butter
2 cups fresh breadcrumbs (made from white bread)
6 10-ounce packages frozen chopped spinach, thawed, squeezed dry
4 cups sour cream
2 cups whole milk
2 cups (about 8 ounces) grated extra-sharp cheddar cheese
1 cup chopped onion
1/4 teaspoon ground nutmeg
2 large eggs, beaten to blend

Steps:

  • Melt butter in large nonstick skillet over medium heat. Add breadcrumbs; sauté until golden, about 2 minutes. Set aside.
  • Preheat oven to 350°F. Butter two 8x8-inch glass baking dishes. Mix spinach, sour cream, milk, cheese, onion, and nutmeg in large bowl. Season with salt and pepper. Mix in eggs. Divide spinach mixture between dishes. (Can be made 6 hours ahead. Cover; chill.) Top with breadcrumbs. Bake until set, about 30 minutes.

2 large eggs, beaten
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 medium onion, chopped
1 cup shredded cheddar cheese
2/3 cup mayonnaise
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the eggs, spinach, soup, onion, cheese and mayonnaise. Spoon into a greased 8-in. square baking dish. Toss the bread crumbs and butter; sprinkle over spinach mixture. Bake, uncovered, at 350° for 35-40 minutes or until heated through and topping is golden brown.

  • Next, prepare the spinach. Thinly slice the shallot and finely chop the garlic. Heat the olive oil in a skillet over medium heat. Add the garlic and shallot and cook until the shallot is translucent.
  • Add the spinach a handful at a time, letting it wilt before you add more. This way you won't overcrowd the pan. Once you have added all of the spinach, add the cream cheese and another tablespoon of Parmesan. Stir until the cheese has melted. Season the spinach with salt and pepper to taste.
