My twins wouldn't eat anything that even resembled a vegetable, but they ate seconds and sometimes thirds of this fabulous spinach. I received the recipe from a friend several years ago, and it's been part of my Thanksgiving menu ever since. I usually double or triple the recipe. My children aren't the only ones who want extra servings!

1 large onion, finely chopped
4 green onions, finely chopped
4 bacon strips, diced
2 tablespoons plus 2 teaspoons butter
1 garlic clove, minced
1/2 cup all-purpose flour
1-1/4 teaspoons salt
1/4 teaspoon pepper
2-1/2 cups milk
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1/2 cup half-and-half cream

Steps:

  • In a large skillet, cook the onions and bacon in butter over medium heat until bacon is crisp. Add garlic; cook 1 minute longer. Stir in the flour, salt and pepper until blended. , Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in spinach and cream; cook 3-5 minutes longer or until heated through.

Love spinach? So do we! This easy side dish is made with BACON and a creamy béchamel sauce. This makes a great side with roast chicken, seared fish, or a holiday dinner.

1 pound fresh spinach, about 2 large bunches, thoroughly cleaned
3 to 4 strips of bacon, uncooked, finely chopped
1 medium onion, finely chopped
1 clove garlic, finely chopped (about 1 teaspoon)
A pinch of nutmeg
Salt and pepper to taste
For the béchamel cream sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk

Steps:

  • Blanch and chop the spinach: Blanch the spinach in a pot of boiling water until the spinach is wilted, about 30 seconds to 2 minutes. Drain and rinse in cold water to stop the spinach from cooking further. Squeeze the spinach to remove all the moisture possible. Chop the spinach and set aside.
  • Sauté the bacon, onions, garlic: Heat a large skillet on medium high. Add the chopped bacon and sauté until the bacon begins to render some of its fat. Add the chopped onion and garlic. Sauté until onions are translucent.
  • Make the béchamel sauce: Melt the butter in a small saucepan on medium/low heat until it just starts to bubble. Add the flour and cook, stirring until smooth, about 2 minutes. Slowly add the milk, whisking continuously, cooking until thick.
  • Finish the dish and serve: Combine spinach, bacon and onion mixture, and béchamel sauce into one pan. Add nutmeg, salt, and pepper to taste. Bring to a simmer, remove from heat and serve.

1 1/4 pounds spinach, tough stems discarded, leaves rinsed well (do not pat dry)
10 ounces white pearl onions (about 2 1/2 cups)
5 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/4 cups milk
3 ounces slab bacon, cut into 1/4-inch dice (about 3/4 cups)
Coarse salt and freshly ground pepper
Generous pinch of freshly grated nutmeg
1/2 cup heavy cream
2 teaspoons lemon juice

Steps:

  • Heat a large pot over high heat until hot. Cook spinach (with water still clinging to leaves) in pot, covered, until beginning to wilt, about 1 minute. Stir, and cook, covered, 1 minute more. Uncover; stir spinach until completely wilted.
  • Transfer to a colander; rinse under cold water. Squeeze spinach dry in a clean kitchen towel. Finely chop; set aside.
  • Bring a medium saucepan of water to a boil. Add onions; cook until skins soften, about 3 minutes. Remove onions with a slotted spoon (reserve water in pot); rinse under cold water. Trim root ends, and remove skins. Halve onions if large.
  • Return onions to cooking water. Cook until tender, about 10 minutes. Drain, and rinse under cold water.
  • Melt 4 tablespoons butter in a medium saucepan over medium heat. Add flour, and whisk until smooth. Whisking constantly, pour in milk in a slow, steady stream. Boil, whisking constantly, 1 minute. Remove from heat.
  • Melt remaining tablespoon butter in a large saucepan over medium heat. Add bacon; cook, stirring occasionally, until well browned, about 6 minutes. Stir in onions and spinach. Stir in cream and reserved milk mixture. Add 1 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Cook, stirring occasionally, until heated through and thickened, about 10 minutes (adjust heat if necessary; do not let boil). Stir in lemon juice. Season with salt and pepper, if desired.

4 ounces sliced bacon
4 to 6 cups fresh spinach leaves, washed well and drained
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/2 cup heavy cream, heated
Fine sea salt and freshly ground black pepper
Freshly grated nutmeg

Steps:

  • Heat a nonstick skillet over low heat. Add bacon and cook until crispy, about 8 minutes. Transfer bacon to a paper-towel-lined plate to drain; reserve bacon fat. When bacon has cooled, crumble and set aside.
  • Fill a large saucepan with 2 inches of water. Fit with a steamer basket. Bring to a boil over medium-high heat, then reduce to a simmer. Add spinach to steamer basket, cover, and steam until wilted, about 2 minutes. Transfer spinach to a colander set over a large bowl to drain, reserving drained water; let cool slightly.
  • Place butter and 2 tablespoons reserved bacon fat in a heavy-bottomed saucepan. Heat over medium-high heat until melted and beginning to bubble. Whisk in flour, and cook, whisking, until well combined, 2 to 3 minutes. Whisk in cream and bring to a boil over high heat. Reduce heat and let simmer until thickened, 2 to 3 minutes.
  • Add spinach and cook, stirring occasionally, 5 minutes. Add some of the reserved spinach water if mixture seems too thick. Season with salt, pepper, and nutmeg; stir in bacon. Transfer creamed spinach to a serving bowl; serve immediately.

4 slices bacon
1 small onion, minced
2 cloves garlic, minced

This recipe is guaranteed to put a smile on any spinach-lover's face and will compliment any meal, since this is a creamed spinach recipe it is not a dish that bakes out totally firm. To remove the bitterness from the frozen spinach I like to microwave it in a little water for 10 minutes or until boiling, rinse until cold water then squeeze dry, if you don't mind the strong taste then you can omit this step. Prep time does not include cooking the bacon.

1/2 lb bacon (cooked until crisp then chopped)
1 (300 g) package frozen spinach (thawed under hot water then squeeze dry)
5 tablespoons butter (or use the bacon grease from the bacon it must be at least 5 tablespoons)
1 medium onion, finely chopped
1 -2 tablespoon fresh garlic
1/4-1/2 teaspoon cayenne pepper
2 teaspoons seasoning salt
1 (10 ounce) can sliced mushrooms, drained (or use fresh sauteed sliced mushroomed)
3 tablespoons flour (use 4 tablespoons for a thicker sauce)
2 cups 18% cereal cream (or use half and half cream)
1 1/2 cups grated cheddar cheese
2/3 cup grated parmesan cheese, divided
1/2 teaspoon black pepper (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter an 9-inch baking dish (or use an 8 x 8-inch baking dish).
  • In a medium saucepan melt 5 tablespoons butter over medium heat; add in onions and saute for about 4 minutes (or until soft).
  • Add in garlic, mushrooms, cooked bacon, cayenne pepper and seasoned salt, saute for 1 minute.
  • Add in flour and stir with a wooden spoon and stir constantly for 2 minutes.
  • Slowly add in the cream; bring to a boil over medium heat stirring constantly until thickened and smooth (this should take about 3-4 minutes).
  • Reduce the heat to low and add in the spinach and stir until combined and mixed into the cream sauce.
  • Mix in the cheddar cheese and 1/3 cup grated Parmesan cheese; stir until the cheese has melted.
  • Season with black pepper to taste.
  • Transfer to prepared baking dish.
  • Sprinkle with 1/3 (or to taste) Parmesan cheese.
  • Bake for about 25 minutes or until browned on top and bubbly.
  • Let sit for 20 minutes before spooning out of the baking dish, this only gets better the longer you leave it sit, but you won't be able to keep your spoon out of the dish lol!.
