CREAMED ONIONS AND PEAS
This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Steps:
- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

- In a Dutch oven or large kettle, bring 8 cups water to a boil. Add pearl onions; boil until tender, 6-7 minutes. Drain and rinse in cold water; peel and set aside., In a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually stir in broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the parsley, cheese and onions., Pour into an ungreased 1-1/2-qt. baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 15 minutes; stir. Top with pimientos if desired. Bake, uncovered, 10 minutes longer or until bubbly and heated through.

- 1. Cook pearl onions according to instructions on package.
- 2. In a large sauce pan melt butter(do not let it brown) then stir in flour,salt and pepper with a whisk. Let this mixture simmer on low while whisking continuously for one full minute.
- 3. Add milk still whisking and bring to boil, lower heat and let simmer for 3 minutes...always whisking and not letting it brown on the bottom.
- 4. Add cooked onions and serve or store in refrigerator to use within the next few days.

PEARL ONIONS IN CREAM SAUCE

- To peel the onions, bring 4 quarts of water to a boil and add onions (including skin).
- Bring back to a boil and boil for three minutes. Drain and immediately plunge onions into an ice water bath. Drain and cut the root end off of each onion; then pinch the other end and the onion will pop right out of their skins. Discard skins.
- Place onions in a 4 quart pan along with cream, bay leaves, parsley, garlic, nutmeg, salt and pepper. Over medium low heat, cook covered for ten minutes stirring a few times during the cooking process. Mixture should be somewhat thickened.
- Remove cover and add in chicken stock and simmer for five minutes or more until the mixture has thickened and onions are tender. (Note: If the mixture is not thick enough for your taste, however the onions are fully cooked, mix a tablespoon of corn starch with 2 teaspoons of water and slowly add to hot onion mixture until desired consistency is achieved. This step is only necessary if you like a thick cream sauce.)
- Discard the smashed garlic and bay leaves and season with salt and pepper to taste.
- Serve immediately.

- 1. Preheat one Frigidaire Gallery® Double Wall Ovens to 400°F. Grease a 2-quart shallow baking dish with 1/2 tablespoon butter. 2. Spread the onions in the dish, sprinkle with salt and pepper, and dot with the remaining tablespoon butter. Roast until tender and caramelized, about 30 minutes. 3. Meanwhile, bring a large saucepan of water to a boil over high heat on a Frigidaire Induction Cooktop. Add the cauliflower and 1 tablespoon salt. Boil until very tender, about 10 minutes. Use a slotted spoon to transfer the cauliflower to a food processor. Puree until very smooth, scraping down the sides of the bowl occasionally. - Place stock and wine in a medium pan over high heat. Reduce liquid by half; set aside.
- Bring a medium saucepan of water to a boil. Add onions; cook 10 minutes. Drain, and cool. Using a paring knife, remove skins.
- Place flour and reduced liquid in the bowl of a food processor. Pulse until combined.
