In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

2 cups frozen green peas, thawed
⅔ cup water
⅛ teaspoon salt
3 tablespoons butter
⅓ cup heavy cream
2 tablespoons all-purpose flour
1 tablespoon white sugar

Steps:

  • In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.
  • In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

My family loves canned creamed corn but I can't stand it. I finally came up with this recipe so we could all get along at supper. LOL!

1 (10 -16 ounce) package frozen corn, cooked
water, for cooking corn
3 tablespoons butter
3 tablespoons flour
2 cups milk
2 -3 tablespoons sugar
salt and pepper (optional)

Steps:

  • Cook corn according to package directions; I use the microwave.
  • Melt butter in saucepan, stir in flour and blend well.
  • Add milk, about 1/2 cup at a time, and blend with whisk.
  • Cook over medium heat until thickened.
  • Stir in sugar, salt and pepper.
  • Add cooked, drained corn.
  • Hint: sometimes I use part milk, part cream.

1/3 cup sliced fresh mushrooms
4 teaspoons thinly sliced green onion
2 tablespoons plus 1-1/2 teaspoons butter
4 teaspoons all-purpose flour
1/2 cup chicken broth
1/3 cup heavy whipping cream
Dash each salt and pepper
1/3 cup frozen peas, thawed
2 tablespoons shredded Parmesan cheese

Steps:

  • In a small skillet, saute the corn, mushrooms and onion in butter until mushrooms are tender. Stir in flour until blended; gradually add broth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add the cream, salt and pepper; stir in peas and cheese.

  • Bring water, peas, and salt to a boil in a saucepan; cook until peas are just tender, about 2 minutes. Drain and return peas to saucepan. Reduce heat to medium and stir in flour. Add butter and enough milk to barely cover peas. Cook and stir until thickened, 5 to 10 minutes.

3 lb sugar snap peas, trimmed
12 ears corn, shucked
1 cup heavy cream
2 bunches scallions (white and pale green parts only), thinly sliced
1 tablespoon kosher salt
1 tablespoon black pepper

Steps:

  • Cook sugar snaps in 6 batches in an 8-quart pot of boiling salted water until crisp-tender, about 1 minute (return to a boil between batches). Transfer with a slotted spoon to a large bowl of ice and cold water to stop cooking. Drain sugar snaps and pat dry with paper towels.
  • Cook corn in 2 batches in same pot of boiling water until just tender, about 3 minutes (return to a boil between batches). Transfer to bowl of ice and cold water to stop cooking. Drain corn and pat dry with paper towels. Cut off kernels and discard cobs.
  • Just before serving, boil cream and scallions in a wide 6- to 8-quart heavy pot over high heat until slightly thickened, about 2 minutes. Add sugar snaps, corn, salt, and pepper and cook, tossing, until vegetables are coated and heated through, about 2 minutes.

2 Tablespoons butter
2 Tablespoons flour
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Heat undrained peas in a small saucepan.
  • In a second small saucepan; melt butter. Add flour and whisk for 30 seconds.
  • Add milk to the butter mixture, stirring over medium heat until thickened.
  • Pour the mixture into the peas, and continue to cook until thickened to your desired consistency. Add salt and black pepper, and stir before serving.

1 lb frozen peas
2 tbsp olive oil
3 garlic cloves (minced, or 1 tbsp garlic powder)
Kosher salt and fresh ground pepper (to taste)
8 oz cream cheese (cubed, use light)
1/3 cup milk (2% or whole)
1/2 cup shredded cheddar Cheese (low fat or fat free)
3 tbsp chopped parsley
1 tsp chili flakes (or to taste (optional))

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add in the peas and stir frequently until thawed.
  • Stir in the garlic, salt, and pepper and sauté for 3-4 minutes.
  • Add in cream cheese, milk, and mix until fully combined about 2-3 minutes.
  • Over medium heat, stir in shredded cheese and cook until all cheese melts and you get a thicker consistency. About 3-4 minutes. Then remove from heat.
  • Serve and garnish with chopped parsley and chili flakes, if desired Enjoy!
