Dried chip beef with scrambled eggs and bacon casserole! This is great as a fix-ahead dish and it freezes nicely as well. I say that this will serve 10, but folks love it so much they generally go back for more!

6 slices bacon
¼ cup butter
1 quart whole milk
½ pound dried beef, shredded
½ cup all-purpose flour
½ pound diced fresh mushrooms
½ cup butter
16 eggs
1 cup evaporated milk

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Butter a 9x13-inch casserole dish.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.
  • Melt 1/4 cup butter in a skillet over medium-low heat; add milk, beef, and flour. Cook and stir beef mixture until smooth, about 3 minutes. Mix mushrooms into creamed beef and cook until thick and bubbling, 5 to 7 minutes.
  • Melt 1/2 cup butter in a large skillet over medium heat. Whisk eggs and evaporated milk together in the melted butter; cook until eggs are almost set, about 5 minutes.
  • Spread about 2/3 of the creamed beef into the prepared casserole dish; top with the scrambled eggs. Add the remaining creamed beef to eggs and sprinkle bacon over the top.
  • Bake in the preheated oven until eggs are set, 20 to 30 minutes.

My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

2 tablespoons all-purpose flour
1 ½ cups warm milk
1 (8 ounce) jar dried beef
1 pinch cayenne pepper

Steps:

  • In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.

1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk
1/2 lb cheese
2 hard-boiled eggs, diced
2 tablespoons onions, finely chopped
1 cup uncooked macaroni
1/4 lb chipped beef

Steps:

  • Chop beef and cover with boiling water.
  • Let stand 5 min and drain.
  • Mix together all ingredients EXCEPT Eggs.
  • Add eggs and stir gently.
  • Turn into 1 1/2 qt greased casserole dish.
  • Cover and store in refrigerator overnight
  • Bake uncovered at 350 for one hour.

Steps:

  • Lightly grease 9x13 glass casserole dish and line with dried beef.
  • Wrap bacon around chicken breasts and lay on dried beef.
  • Mix sour cream and chicken soup together and pour over chicken.
  • Cook for 1 hour at 350 degrees or until tender.

Steps:

  • Melt butter in a cast-iron skillet over medium heat until bubbling. Stir in flour, and then add whole milk, whisking until flour is completely incorporated. Stir constantly until the sauce has thickened.
  • Add pepper and strips of dried beef to sauce mixture, stirring until pepper is incorporated and beef is evenly coated. Spoon over Texas toast or biscuit halves; serve warm and top with additional ground pepper, if desired.
