CHICKEN LIVERS STROGANOFF
A different and delicious way to enjoy chicken livers. To make this dish healthier, I like to use yolkless noodles. I have made this for many of my friends over the past 20 years, and have always received rave reviews, even from some who thought that they would not like chicken livers.

Steps:
- Bring a large pot of lightly salted water to a boil. Add noodles, and cook until tender, about 8 minutes. Drain, and set aside.
- While the noodles are getting started, heat olive oil in a large heavy skillet. Add onions, and cook, stirring until tender, about 5 minutes. Add mushrooms, and continue cooking for a few minutes, until starting to brown. Add the chicken livers, and season with paprika, salt and pepper. Cook for 8 to 10 minutes, until livers are nicely browned on the outside, but still slightly pink in the center. Do not over cook - the livers will become tough and leathery.
- Remove the skillet from the heat, and gradually whisk in the sherry, then the sour cream until well blended. Serve over hot egg noodles.

CREAMED CHICKEN LIVERS

Steps:
- 1. Fry the bacon until its crispy ; remove from skillet and reserve drippings.
- 2. Combine the flour with the garlic powder and a dash of pepper ; coat the livers and fry them and the onions in about 4 TBS. of the bacon drippings until livers are browned ; Cover and cook for 8-10 minutes.
- 3. Mix the soup and water together and stir into the livers ; cook until heated through.
- 4. Serve on top of hot rice and pour gravy over top of livers , top with bacon.
CREAMED CHICKEN LIVERS FOR 2
Nice chicken liver dish. Definitely don't skip the sherry; it is what sets the dish apart from 'blah'.

Steps:
- Fry bacon till crisp; remove from skillet and drain, reserving drippings.
- Combine flour and dash pepper; coat livers.
- Brown livers and onion in 2 tablespoons bacon drippings.
- Cover and cook over low heat for 8 to 10 minutes.
- Blend soup with 1/4 cup water; stir into livers; heat through.
- To seve, spoon over hot cooked rice; top with cooked, crumbled bacon.
- Try with cream of onion soup too.
PERI-PERI CHICKEN LIVERS
Steps:
- In a very hot skillet/frying pan, melt the butter and fry the chicken livers until golden brown on both sides.
- Add the garlic and peri-peri sauce and allow to fry for another minute until fragrant then add the lemon juice and cream.
- Season with salt and pepper and allow to simmer for 5-7 minutes.
- Serve with crusty bread.
