This is a breakfast that is most often served in Amish homes according to my mother. But my dad called s.o.s and said he had it in the army.

1/4-1/2 cup margarine or 1/4-1/2 cup butter
1 (12 ounce) jar dried beef
4 green onions
2 tablespoons flour
1 pint milk
5 -6 slices toast

Steps:

  • Cut the beef and onions very fine.
  • Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
  • Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.
  • Gradually add the milk, continue stirring until the mixture boils, then turn the fire down and cook slowly.
  • It should thicken enough to be a good gravy consistency.
  • Serve over toast.
  • Some people serve it on the toast with chopped hard boiled eggs.
  • I am sorry there is no stove temperature.

6 ounces dried thinly sliced beef (roughly chopped into bite sized bits)
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon coarsely ground black pepper
pinch cayenne pepper
1 1/2 cups milk
1/2 cup half and half
4 slices bread (toasted)
2 teaspoons fresh parsley (chopped, optional)

Steps:

  • Melt the butter over medium high heat in a medium skillet with 2-3" high sides.
  • Sprinkle the flour, black pepper and cayenne pepper over the flour and whisk until the flour is completely mixed with the butter and no dry bits remain.
  • Cook, whisking constantly for one minute.
  • Whisk in the milk and half and half and stir constantly until the mixture comes to a boil. Cook for one minute, again, stirring constantly so it doesn't burn or stick to the bottom of the skillet.
  • Remove from heat and stir in the beef to mix well.
  • Place a piece of toast on each plate and divide the creamed chipped beef over the toast. Sprinkle with parsley and serve.

Have you ever tried SOS creamed chipped beef? This easy and filling recipe is a favorite food for many soldiers in the military.

3 Tbsp butter
3 Tbsp all-purpose flour
2 cups milk
pinch ground nutmeg
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp coarse black pepper
3 dashes Worcestershire sauce
1/2 tsp mustard
1 2.5 oz jar chipped beef
8 slices bread

Steps:

  • Chop your chipped beef roughly and set it aside. If you are sensitive to salt, rinse the beef.
  • Melt butter in a small saucepan over medium heat. Whisk in the flour and cook the roux for a minute. Whisk in the milk gradually and season with ground nutmeg, ground onion powder, ground garlic powder, a few drops of Worcestershire sauce, and a squirt of mustard. Cook until thick and season the white sauce with black pepper. Stir in the chipped beef and set the heat to low.
  • Meanwhile, toast your bread. Once toasted, top with the beef mixture and sprinkle with parsley.

1 jar Hormel Dried Beef, (4.5oz)
4 Tablespoons Butter
1/3 cup All Purpose Flour
3 cups Whole Milk, at room temperature
½ teaspoon Worcestershire Sauce (optional)
½ teaspoon Black Pepper

Steps:

  • Cut the dried beef into thin strips.
  • Place strips in a small bowl and cover with warm water.
  • Soak the strips for 30 minutes, drain, discard the water.
  • Place a skillet over Medium heat on your stove top.
  • Add butter, let melt.
  • Add the flour, stirring it in quickly until combined with butter.
  • Add the milk, stirring quickly until fully combined and it starts to thicken.
  • Add the Worcestershire sauce if desired.
  • Add the black pepper.
  • Add the strips of dried beef, stir until fully coated.
  • Let simmer for about 2 minutes.
  • Spoon over toast or biscuits.
  • Enjoy!

4 tablespoon butter, unsalted
1/3 cup flour
1 1/2 cups milk
1 1/2 cups half and half (or can use all milk)
1 pound shaved chipped baked ham (or can use chopped dried beef)
3 1/2 cups peas (canned or frozen - thawed)
1 teaspoon black pepper
1/2 teaspoon salt
8 slices of bread, toasted - don't forget about the 'anchor' crusts!

Steps:

  • In a medium saucepan over medium heat, melt the butter.
  • Add in the flour and whisk for a minute to cook the flour.
  • SLOWLY add in the milk whisking constantly to break up the clumps.
  • Reduce heat to medium low and cook, whisking often until the mixture thickens. ~3-6 minutes. Watch so it doesn't burn!
  • Once the mixture thickens add in the ham and using a rubber tipped spatula, mix to combine, gently scraping on the base on the pan.
  • Cook for 1 minute.
  • Add in the peas, stir gently and turn off the heat.
  • Toast the bread and place 2 slices of toast on a plate.
  • Ladle a generous portion over the toast.

¼ cup unsalted butter
¼ cup all-purpose flour
3 cups milk
½ teaspoon onion powder

8 slices Texas toast, (brioche, or thick-cut white sandwich bread)

Steps:

  • Cut the Buddig Beef into strips, then into short segments. (Approximately ½ X 1 inch)
  • Place a large skillet over medium heat. Add the butter. Once melted, whisk in the flour to create a roux. Cook the roux for 2-3 minutes until light-gold in color.
  • Whisk in the milk. Then add the onion powder, thyme, and cayenne. Simmer to thicken for 2-3 minutes. Then add in the dried beef. Cook another 1-2 minutes to warm the beef and thicken. (If the gravy thickens too much, add another splash of milk.)
  • Meanwhile, toast the white bread slices in a toaster. Once the creamed chipped beef is your preferred thickness, place 2 slices of toast on each plate and cover with chipped beef gravy.

1 jar of dried beef slices (rinsed well & chopped)
4 tbsp butter
4 tbsp flour
Pinch of cayenne
2 cups milk
Sea salt and freshly cracked pepper (to taste)
Bread (toasted)

Steps:

  • Rinse the slices of dried beef really well - they are VERY salty! Once you have rinsed well, pat dry with a paper towel.
  • Chop the beef into small bite-sized pieces. Set aside.
  • Heat the butter in the large saucepan over medium heat.
  • Add the flour and pinch of cayenne pepper to the melted butter and whisk until well combined and cooked through, about 45 seconds.
  • Very slowly add the milk while whisking continually.
  • Once the milk has all been added, add the chopped dried beef.
  • Cook, stirring occasionally, for a few minutes until thickened.
  • Taste and season with sea salt and freshly cracked pepper, to taste, if needed.
  • Serve on top of dry toast immediately. Enjoy.
