CREAM CHEESE & SEAFOOD SPREAD
This is one of those recipes that when served to guests you had better have lots of it. It is a real crowd pleaser that your guests just can't stop eating. The beauty of it is that it is so simple to make with only three ingredients. You can double the recipe but use two plates instead of one. You will simply have two appetizers. If you take this appetizer to a potluck or party, spread the mixture on a sturdy plastic or styrofoam plate and you won't have to worry about getting your plate back. My personal preference to accompany this spread is Ritz or rice crackers but use what you like, you won't be disappointed.

Steps:
- Spread softened cream cheese into the bottom of a 9" plate.
- A pie plate works well for this.
- Spread the seafood sauce on top of the cream cheese covering to the edges.
- Sprinkle imitation crab meat over the top.
- (genuine crab can be used for this recipe but the imitation works really well).
- Serve using little spreading knives (I suggest you have at least four of these knives) with assorted crackers.
- YUM!

- In a small bowl, combine the first six ingredients. To serve chilled, cover and refrigerate until serving. Sprinkle with paprika., To serve warm, spoon into a greased 3-cup baking dish. Sprinkle with paprika. Bake, uncovered, at 375° for 15 minutes or until heated through. Serve with crackers or vegetables.

CRAB SALAD WITH CREAM CHEESE
This recipe is made with imitation crab salad and is great on croissants. It is different from the usual crab salad as it is made with cream cheese. Very easy, we take crackers and eat it while boating all the time!

- Put crab meat in a mixing bowl and stir until crab has shredded into small pieces.
- Add cream cheese, mix until well combined.
- Add the remaining ingredients, mix until well combined.
- Place in fridge until cold.
- Serve cold on croissants, crackers, bread etc!
- *The salad will not have big pieces of crab, when mixing it breaks it down*.

CREAM CHEESE CRAB SPREAD WITH HOMEMADE CROSTINI

- Combine the cream cheese and all but 1/2 cup of the crabmeat in a medium bowl. Mix until thoroughly combined. Roll into an 8-inch log and refrigerate until firmed up slightly, about 1 hour. Refrigerate the remaining 1/2 cup crabmeat until serving.
- Meanwhile, combine the ketchup, horseradish, lemon juice, salt and some pepper in a medium bowl. Taste and adjust to your liking.
- Place the log on a serving platter. Spoon some of the sauce over it, reserving the remaining sauce in a small bowl to serve on the side. Sprinkle the reserved 1/2 cup crabmeat on top and garnish with the chives. Rub the garlic onto one side of each slice of bread and arrange the bread on the serving platter.
