A dear friend brought me some of this soup when I was ill-and it instantly hit the spot. I asked her for the recipe and I've made it several times since, especially when I have leftover turkey to use up. Now I like to take it to friends when they're not feeling well. - In a large saucepan, saute onion and mushrooms in butter until onion is tender. Add water, broth and rice mix with seasoning; bring to a boil. Reduce heat; simmer for 20-25 minutes or until rice is tender. Stir in turkey and cream; heat through. Sprinkle with parsley.

CREAMY CHICKEN AND WILD RICE SOUP
A supremely filling, hearty soup. I serve this on cold rainy days with a loaf of homemade bread. Hint: this is perfect for leftover rotisserie chicken or chicken you've pulled from the bone after making homemade chicken stock! This soup makes great leftovers, but you might want to thin it slightly with skim milk or water when reheating.

- In a large pot over medium heat, combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
- In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
- Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.

- In a Dutch oven, heat butter over medium-high heat. Add carrots, celery and onion; cook and stir until tender., Stir in flour until blended; cook until bubbly. Gradually stir in broth. - In a large pot over medium heat, combine chicken broth, water, green onions and wild rice. Bring to a boil, then reduce heat and simmer until rice is tender, 35 to 40 minutes.

- Prepare each rice according to package, drain and set aside.
- In a large pot, heat olive oil.
- Add in celery, carrots and onions and cook until carrots are tender.
- Add garlic and cook until garlic is fragrant.
- Pour in chicken broth and spices.
- Bring to a simmer.
- While soup is simmering, melt butter in a large saucepan over medium heat.
- Stir in flour and cook until flour is golden, about 2-3 minutes.
- Slowly pour in half and half while continuing to stir.

- Preheat a heavy pot over medium-high heat. Once hot, drop in a tablespoon of butter. When the butter foams, add the onions and sauté until soft. Add the carrots and celery. Continue to cook for an additional few minutes before adding the garlic. Cook for one more minute or until fragrant.
- Sprinkle in the flour and stir to combine. Squeeze in lemon juice and pour in the chicken stock, scraping up any bits of fond at the bottom of the pot.
- Season with Gnome on the Range Mushroom Blend and fresh thyme. Stir in the wild rice.
- Reduce the heat to medium-low and let the pot simmer for 30 minutes. The rice should almost be cooked through, and the liquids slightly reduced.
- Pour in the cream and cook for another 15-20 minutes, or until the rice is tender. Taste and adjust with extra seasonings if needed.
- When the soup is almost ready to serve, heat a separate frying pan over medium-high heat. Drop in the remaining two tablespoons of butter and fry the shredded turkey for a couple minutes on each side. Don't overcrowd the pan-work in batches so that the meat is brown and crispy.
- Serve the soup with a heap of fried turkey on top and garnish with chopped celery leaves.

CREAM OF WILD RICE SOUP

- Gather the ingredients.
- Bring 4 to 6 cups of water to a boil. Add the wild rice and salt. Cook until the wild rice is tender to the bite, about 30 minutes. Drain and set the rice aside.

If you keep them separate, you won't have that problem and your left-overs will be as great as the freshly made soup!
