Cream of Tuna image

A quick nutritous meal when you don't really feel like cooking. Nothing fancy, just quick and easy to make. If you don't want to make a roux you can substitute it for a cream of mushroom soup (or whichever you prefer). This can also be served over noodles or toast if you prefer.

4 tablespoons margarine
4 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 (15 ounce) can mixed vegetables
1 (12 ounce) can tuna
4 cups uncooked rice

Steps:

  • Boil 4 cups of water, add rice, and set aside.
  • Drain tuna and vegetables and set aside.
  • In medium sauce pan, melt margerine over medium heat.
  • Once melted add flour, salt, and pepper. Stir together until a paste is formed.
  • With a wire whisk, add milk. Stir regularly until sauce is thickened.
  • When sauce is at desired consistency, add vegetables and tuna.
  • Serve sauce over rice and enjoy.

1/4 cup margarine
1/4 cup flour
2 cups milk
1 can drained tuna fish
1 cup frozen peas (or to taste)
salt and pepper
bread (for toasting)

Steps:

  • Thaw frozen peas in a collendar.
  • Melt the margarine in a saucepan.
  • Add the flour and blend.
  • Add the milk, stirring constantly to prevent clumping and stir until creamy.
  • Add the tuna, peas, salt and pepper and warm through.
  • As the tuna is warming, toast bread.
  • After toasted, cut in triangles and spoon tuna mixture over the toast.

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.
