10 ounces sauerkraut
9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika
2 teaspoons chopped fresh dill
5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.

1 medium potato, cut into 1/4-inch cubes
1 pound smoked kielbasa, cut into 1/2-inch cubes
1 can (32 ounces) sauerkraut, rinsed and well drained
4 cups chicken broth
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 pound sliced fresh mushrooms
1 cup cubed cooked chicken
2 medium carrots, sliced
2 celery ribs, sliced
2 tablespoons white vinegar
2 teaspoons dill weed
1/2 teaspoon pepper
3 to 4 bacon strips, cooked and crumbled

  • In a 5-qt. slow cooker, combine the first 12 ingredients. Cover and cook on high for 5-6 hours or until the vegetables are tender. Skim fat. Garnish with bacon.

This sauerkraut soup is a most unusual and delicious soup. The sauerkraut gives it a lovely texture and zing and the bacon provides a subtle smokiness. It's hearty, filling and will warm your belly.

1 Tbsp olive oil
8 oz bacon (chopped)
1 stick celery (finely diced)
1 medium onion (finely diced)
2 medium carrots (thinly sliced)
3 medium (1 lb potatoes, peeled and sliced into 1/3" thick pieces)
1/4 cup quinoa (rinsed, optional)
2-3 cups sauerkraut (triple rinsed & drained (we use 3 cups or about 2 lbs))
8 cups low sodium chicken broth
2 cups water (or to taste)
1 15 oz can white beans (click to learn how to cook your own beans)
1 bay leaf
Salt (Pepper and Mrs. Dash seasoning, to taste)

Steps:

  • Heat 1 Tbsp oil in a large soup pot or Dutch oven. Add chopped bacon and sautee until browned then remove with a slotted spoon and reserve.
  • Add finely chopped celery and onion. Saute until softened and golden (5 min).
  • Add sliced carrots, potatoes, 1/4 cup quinoa (if using), 8 cups broth and 2 cups water. Bring to a boil then reduce heat and simmer 15 min.
  • Add 2-3 cups of well rinsed and drained sauerkraut and half of cooked bacon (I keep some for garnish), white beans with their juice, and 1 bay leaf and continue to cook until potatoes are tender (about 10 min). Season soup to taste (I added 1/2 tsp salt, 1/4 tsp pepper and 1/2 tsp Mrs Dash). Serve with fresh crusty bread.

1 pound smoked or fresh pork spareribs
10 cups water
1 large chopped onion
1 clove minced garlic (optional)
1 bay leaf
6 black peppercorns
1 large peeled and sliced carrot
1 large peeled and diced potato
1 ounce dried mushrooms or 1/2 cup fresh sliced mushrooms
2 pounds sauerkraut drained and rinsed or unrinsed (to taste)
2 tablespoons all-purpose flour
2 tablespoons sour cream
Optional: salt (to taste)
Garnish: chopped dill or parsley

Steps:

  • Gather the ingredients.
  • In a large Dutch oven or soup pot, place spareribs, water, chopped onion, garlic (if using), bay leaf , and peppercorns. Bring to a boil, skimming off the foam that rises to the surface.
  • Reduce heat and simmer until the meat is ready to fall off the bones. You may need to add more water.
  • Remove meat and, when cool enough to handle, chop into bite-size pieces. Reserve.
  • To the Dutch oven with boiling liquid, add carrots, potatoes, mushrooms (along with strained soaking liquid if using dried mushrooms), and sauerkraut.
  • Bring to a boil, reduce heat, and simmer until sauerkraut is tender, about 30 minutes. Add more water, if necessary.
  • Adjust the seasonings. Fork blend 2 tablespoons flour with 2 tablespoons sour cream. Temper this mixture with a few ladles of hot soup . Return the tempered sour cream to soup and whisk until well incorporated and the soup has thickened slightly.
  • Return the meat to the soup, heat through and serve with fresh parsley or dill sprigs and rye bread on the side.

12 oz polish sausage or kielbasa (sliced 1/4 inch thick)
1 stalk celery (chopped)
1/2 green bell pepper (chopped)
1/2 yellow onion (chopped)
2 cloves garlic (minced)
2 cups chicken broth
1 16-oz jar sauerkraut (with brine)
1 cup heavy whipping cream
1/2 tsp dried dill
1/2 tsp ground black pepper
1/4 tsp caraway seeds (optional)
salt (to taste)

Steps:

  • Melt butter in dutch oven or pot over medium/high heat. Toss in polish sausage pieces and brown for about 5 minute.
  • Once sausage is browned, add celery, bell pepper, onion and garlic and saute until onion is translucent, about 5-8 minutes.
  • Pour in chicken broth, and scrape the bottom of the pan to incorporate all of the brown bits (hello, flavor!). Then add sauerkraut, heavy cream, dill, ground pepper, and caraway seeds.
  • Bring to a boil, then reduce the temperature to low and simmer for 10 minutes. Add salt to taste.

  • In a soup pot fry the bacon until done. Add the onions and cook until lightly caramelized, 5-7 minutes. Add the garlic and cook another minute. Stir in the tomato paste and spices and cook another minute. Add the chicken broth and sauerkraut and bring to a boil. Reduce the heat to medium and simmer, covered, for 20 minutes. Stir in the crème fraîche or sour cream and heat through (do not boil).

This was found years ago in Bon Appetite when a reader requested the recipe for this soup made at Billie's Boathouse in Saugatuck, Michigan. It was called Potage a la Russe. I made it and it became my DH's favorite. I found the ingredient list intriguing and was pleasantly surprised with the result.

1 chicken, about 2 1/2 pounds
6 -8 cups water
1 bay leaf
1 cup celery, finely chopped
1 cup onion, finely chopped
1 cup carrot, finely chopped
4 chicken bouillon cubes
1 1/2 cups whipping cream (or half and half)
1/4 cup butter
1/4 cup all-purpose flour
1 (14 ounce) can sauerkraut, chopped, rinsed and drained
salt
white pepper

Steps:

  • Combine chicken, water and bay leaf in large pot and bring to boil over medium-high heat.
  • Reduce heat to medium-low and simmer until chicken is cooked, about 45 minutes.
  • Remove chicken and set aside until cool enough to handle. Remove and discard bay leaf. When chicken is cool, discard skin and bones. Cut meat into bite size pieces.
  • Set aside 1 cup of chicken broth from the pot.
  • Add celery, onion, carrot and bouillon cubes to broth in the pot.
  • Place over medium-low heat and simmer until vegetables are tender, about 12-15 minutes.
  • Reduce heat to low, stir in cream and bring mixture to a gentle simmer.
  • Meanwhile, melt butter in small saucepan over low heat. Add flour and whisk constantly 3 minutes.
  • Blend in the 1 cup of reserved broth. Increase heat to medium and cook until thickened, stirring constantly.
  • Gradually whisk this gravy into the vegetable mixture in the pot and simmer until slightly thickened.
  • Add cut up chicken pieces to the soup and stir in the rinsed and well drained sauerkraut. (Chopped sauerkraut is easier to eat with a spoon.).
  • Season to taste with salt and white pepper.

Easy Sauerkraut Soup image

This easy Sauerkraut soup is simply delicious. Made with lots of sauerkraut, potatoes, onions, bits of pancetta bacon, and a bunch of yummy spices, it's a warm, hearty soup for any cabbage lover!

2 medium-sized yellow onions
2 garlic cloves
1 medium-large potato
5 ounces pancetta bacon
2 tablespoons tomato paste
2 teaspoons paprika
4 cups sauerkraut
4 cups vegetable broth
salt and pepper to taste
2-3 tablespoons sour cream

Steps:

  • First, peel the onions and the potato and chop both into small pieces. Also, peel and cut up the garlic or press it through a garlic press.
  • Drain the sauerkraut and squeeze out any excess liquid. This is especially important if you're using sauerkraut that is kept in a vinegar-based solution. If you don't squeeze out some of the liquid, the soup will taste very vinegary.
  • Cut the pancetta bacon into small pieces if it's not already pre-cut.
  • Heat oil in a large pot, then add the pancetta bacon and fry it on medium-high heat for around 5 minutes until the fatty pieces appear clear. Then add the chopped onion pieces and sauté them on medium heat for around 5-6 minutes until translucent. Stir regularly.
  • Once the onions are soft and the pancetta bacon has browned slightly, add the chopped potato and garlic. Sauté them for 2-3 minutes as well.
  • Next, add the tomato paste and paprika powder. Stir everything together.
  • Now add the sauerkraut to the pot and give everything a stir. Then pour in enough vegetable broth so that it covers the contents in the pot. In our case, this is 4 cups of broth but it might be slightly more or less for you.
  • Bring the contents of the pot to a boil, then place the lid on the pot and turn down the heat. Let the soup simmer for around 25-30 minutes or until the potato pieces are soft.
  • Add salt and pepper to taste and remove the pot from the heat. Stir in the sour cream.
  • Serve the soup hot with some fresh crusty bread.

3 slices thick bacon ( please please use pasture raised, no additives)
1 medium onion
2 ( or more) stalks of celery with tops
16oz. jar of sauerkraut
32 oz. chicken broth or stock
1 bay leaf
32 oz half and half, or 16-24 oz full raw cream is my recommendation
sour cream
salt and pepper to taste

Steps:

  • In stock pot, cook bacon over med/high heat until crispy. While Bacon is cooking, finely chop the onion and celery. ( you could use the food processor) When bacon is crisp, remove, drain, and crumble. Add onion and celery to the pot and saute in the bacon drippings until tender. Meanwhile, drain and rinse sauerkraut. ( I skipped this step, there wasn’t much liquid and I wanted to add it to the soup) Finely chop the sauerkraut ( again you could use the processor and again I did not. I wanted more texture) When the onion and celery are tender, add the sauerkraut, chicken broth, and bay leaf. Cook on a low heat, uncovered, for 30 minutes. Add half and half, or cream, and bring back up to a serving temperature. To serve, ladle into individual bowls. Top with a dollop of sour cream and some crumbled bacon. Season as desired with salt and pepper. ( I opted to not use bacon and made some meatballs out of a mix of equal amounts of ground pork and turkey thigh, mustard, pepper, 1 egg, 1/4c. brown rice crumbs. The sauerkraut I used had caraway seeds in it, so I added a tsp. of caraway seeds to the soup broth.

  • Dice 3-4 medium sized onions and sautee these on pork lard. Once the onions become translucent, add sliced garlic (3-4 cloves), about 150g (5oz) diced bacon and 200g (7oz) sliced smoked sausage. Sautee for a few more minutes.
