Steps:
- Cut leeks into 1/4-in. slices. In a soup kettle or Dutch oven, saute leeks and garlic in butter until tender. Stir in the flour, nutmeg, salt and pepper. Cook and stir until bubbly. Gradually add broth; bring to a boil. Reduce heat; simmer, uncovered, for 25-30 minutes. , Remove from the heat; cool slightly. Process in batches in a blender until smooth; return to pan. Add milk and cream; heat through. Garnish with chives.

CREAM OF LEEK SOUP
This soup is super creamy in texture, but it contains no actual cream. The butter and flour mixture -- what's called a roux -- gives it body and silkiness.

- In a medium pot, melt butter over medium. Add leeks and cook, stirring occasionally, until softened, 8 minutes.
- Add flour and cook, stirring, until combined, 1 minute.
- Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes. Add tarragon.
- Transfer mixture to a large bowl. In batches, fill a blender halfway with mixture and puree until smooth; to allow heat to escape, remove cap from hole in lid, cover lid with a dish towel, and hold down firmly while blending. Return soup to pot as pureed.
- Heat over medium until warmed through. Season with salt and pepper. Thin with broth or water, if desired.

EASY POTATO AND LEEK SOUP
A quick and easy soup that tastes great. I like to take a potato masher and roughly mash some of the potatoes. This helps to thicken the soup. I also like to use seasoned chicken broth. You can use heavy cream or half-and-half, depending on how rich you want the soup to be.

Steps:
- In a medium pot over medium heat, combine the potatoes and broth and allow to simmer for 20 minutes, or until potatoes are tender.
- In a separate skillet over medium heat, saute the leeks in the butter or margarine for 5 to 10 minutes, or until tender. Add the leeks and the cream to the potatoes and stir well. (Note: This is the point I like to take a potato masher and slightly thicken the soup.)

CREAMY LEEK SOUP
Steps:
- Wash sliced leeks in a large bowl of cold water, agitating them, then lift out and drain well in a colander.
- Cook leeks, onion, carrot, celery, salt, and pepper in 4 tablespoons butter in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until softened, about 8 minutes. Peel potato and cut into 1/2-inch cubes, then add to onion mixture along with wine, stock, water, and bay leaf. Bring to a boil, then reduce heat and simmer, partially covered, until vegetables are tender, about 15 minutes.
- Stir in parsley and simmer soup, uncovered, 5 minutes. Discard bay leaf and keep soup at a bare simmer.
- Melt remaining 4 tablespoons butter in a 1-quart heavy saucepan over moderate heat, then add flour and cook roux, whisking, until golden, about 3 minutes. Remove from heat and add 2 cups simmering stock (from soup), whisking vigorously (mixture will be thick), then whisk mixture into remaining soup and return to a simmer, whisking.
- Blend soup in 4 batches in a blender until smooth (use caution when blending hot liquids), about 1 minute per batch, transferring to a 3- to 4-quart saucepan. Reheat if necessary, then season with salt and pepper.
- Beat cream in a bowl with an electric mixer at medium speed until it almost forms soft peaks. Serve soup topped with cream.
LEEK, ONION AND POTATO SOUP
This has to be one of my own top of the pops favourites and has proven to be one of my most popular recipes with everyone over the years. The chilled version of this soup is a classic vichyssoise. Either way, it's an absolute winner.

Steps:
- Begin by trimming the leeks, discarding the tough outer layer. Now split them in half lengthways and slice them quite finely, then wash them thoroughly in two or three changes of water. Drain well. In a large, thick-based saucepan, gently melt the butter, then add the leeks, onions and potatoes, stirring them all round with a wooden spoon so they get a nice coating of butter. Season with salt and pepper, then cover and let the vegetables sweat over a very low heat for about 15 minutes. After that, add the stock and milk, bring to simmering point, cover and let the soup simmer very gently for a further 20 minutes or until the vegetables are soft - if you have the heat too high the milk in it may cause it to boil over. Now you can put the whole lot into a blender - leave it to cool a little first - and blend to a purée. If you have to blend the soup in batches, make sure you have a bowl to hand to put the first batch into. Now return the soup to the saucepan and reheat gently, tasting to check the seasoning. Add a swirl of cream or crème fraîche before serving and sprinkle with freshly snipped chives or parsley.

CREAM OF LEEK SOUP WITH ONIONS
Despite all of the onions, this soup is very mild, and sort of sweet, because of the leeks. The smoked gouda cheese is optional (I've already skipped it totally because I had none, or used sharp cheddar or Swiss instead), but the smokey flavor of the cheese goes well with the sweetness of the leeks.

- In a large soup pot over medium heat, melt butter. Add in leeks, and onions and saute for about 10 minutes or until they are tender, but not browned.
- Stir in flour; mix well.

LEEK AND ONION SOUP
Steps:
- Gently fry the leeks and onion for 10 minutes, or until soft and translucent.
- Add the potato and stock, then bring to a simmering point. Let it simmer for 15 minutes or until the potato is cooked.
- Pour in the almond milk, and let it simmer for another 2 minutes.
- Transfer everything to a food processor and blend until smooth. Alternatively, you can you a stick blender and do it straight in the pot.
- Season to taste then divide the soup between four bowls.
- Sprinkle with chives and drizzle with vegan cream. Serve with your favourite bread. Enjoy!

LEEK CREAM SOUP

- Take a heavy-based saucepan and put it over medium heat. When the pan is slightly hot, add olive oil into it and then put in the onion. Cook until tender then add leeks. Cook for few extra minutes.
- Once the leeks are nice and tender, take the pan off the heat and add the flour to it; making sure that you constantly stir it so that it doesn't stick to the base of the pan. Once you have evenly mixed the flour, put the pan back on the stove.
- Add in the chicken broth and mix it well so that you are sure that there are no lumps in the mixture. Let it come to a nice boil.
- After the mixture starts to boil a little bit, add the cut cubes of potato. Let everything cook for another 15 - 20 minutes or until the cut potatoes are also tender.
- With the help of your mixer, mix the soup until it is smooth.
- Add in the milk and stir. Don't bring it to boil.
- Towards the end, add a hint of chopped parsley (or any other herb you desire) and serve it hot with buns, breadsticks or garlic bread slices. If you don't mind the extra calories you can replace the milk with cream . If you want to keep the calorie count lower, the soup is still delicious with the milk.
