CREAM OF BROCCOLI SOUP
This soup is a great meal starter, but I also serve it as the main course when I'm in need of a quick nourishing lunch or dinner. Just add a green salad and a biscuit or roll.

LOW-CARB CREAM OF BROCCOLI SOUP
While this recipe is high in fat it works great for people on the Atkins diet. Even after eating two bowls per day I was still in ketosis. Heavy cream has no carbs which is why this works so well for folks on low-carb diets. Also fat is more filling, leading you to eat less and feel more full. Leftovers can be stored in the refrigerator. It's even better the second day. However, I've found if it sits longer than that the broccoli can become too strong.

Steps:
- Melt butter in a large pot, and cook the leeks over medium heat until soft and translucent, about 5 minutes. Stir in salt, pepper, and coriander. Reserve about 1/4 cup of small broccoli florets, and cook the rest of the broccoli with the leeks until the broccoli is bright green, about 5 more minutes. Pour in the chicken stock, bring the soup to a boil, cover, then simmer until the broccoli is very tender, 10 to 15 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
- Return the blended soup to the pot, stir in the reserved broccoli florets, and bring to a simmer over medium-low heat, stirring often. Simmer until the broccoli florets are tender, 5 to 7 minutes. Remove from heat, and mix in the condensed milk. Serve hot.

CREAM OF BROCCOLI SOUP BUT LOWER FAT!
I love Cream of Broccoli soup but the fat and calories do not like me. This is a lower fat but great tasting recipe to use. Keep in mind that if you use homemade chicken broth, remove the fat first ( let broth cool then skim off the fatty topping)

- In a large saucepan, add the chicken broth, kosher salt, black pepper, onion powder, garlic powder, and thyme. Whisk to combine.
- Add the broccoli. Bring to a boil over high heat. This should take about 5 minutes if using fresh broccoli, 10 minutes if using frozen.
- Turn the heat off. In batches in a blender or in a food processor (carefully!), or using an immersion blender, blend the soup until smooth. The soup will be smoother if you use a food processor or a stand blender than if you use an immersion blender. But an immersion blender is obviously easier.

- Add broccoli and broth; bring to a boil. Reduce heat to medium; cover and cook until the broccoli is tender, about 12 minutes. Stir in thyme and salt. Remove center piece of blender lid to allow steam to escape; secure lid on blender. Place a clean kitchen towel over opening in lid. Process until smooth, about 2 minutes. Use caution when blending hot liquids.) Add half-and-half and process just until incorporated, about 15 seconds. Serve immediately, topped with chives.
