This soup is wonderful served hot or cold. Half & half or milk may be substituted for the cream if fat content is a concern, although it won't taste quite as good.

1 lb fresh asparagus spear
1 medium onion, diced
1 tablespoon unsalted butter
24 ounces reduced-sodium chicken broth (quantity to taste) or 24 ounces chicken broth (quantity to taste)
1 medium potato, peeled and diced
1 celery rib, chopped
1 teaspoon dried thyme (or fresh thyme)
8 ounces cream (You may want to use evaporated skim milk to cut more fat)
salt or salt substitute
fresh ground white pepper

Steps:

  • Soak and rinse asparagus.
  • Remove top 1 inch of each spear, discard tough lower part, and reserve middle portion of stalks.
  • In a 3-quart saucepan, over medium heat, sauté onion in butter for 3 to 5 minutes or until translucent.
  • Add chicken stock, asparagus tips and stems, potato, celery, thyme, and pepper.
  • Cover and bring to a boil.
  • Reduce heat to low and simmer for 12 to 15 minutes or until vegetables are soft.
  • Remove from heat and let cool.
  • Remove asparagus tips and set aside.
  • Place half of the soup at a time in a blender container.
  • Cover and blend at high speed for 20 to 30 seconds or until very smooth.
  • Pass through a fine sieve and return blended soup to saucepan.
  • Add reserved asparagus tips and cream (or half and half, or milk) and heat thoroughly, or refrigerate to be served cold.
  • Be sure to adjust the seasoning after you add the cream (or half& half, or milk), especially if you plan to serve it cold.

Note: This is for a 5-quart crock pot, which is larger than the usual. Cut down the proportions if you have a smaller crock pot.

1 lb fresh asparagus
2 onions, minced finely
2 potatoes, peeled, diced small
2 celery ribs, diced small, with tops included
2 carrots, diced
2 garlic cloves, minced
8 teaspoons vegetable bouillon granules or 8 bouillon cubes
1 bay leaf
1 tablespoon Worcestershire sauce
1/4 cup fresh parsley, chopped or 1 tablespoon dried parsley
2 sprigs fresh thyme or 1 teaspoon dried thyme
1 sprig fresh tarragon, chopped or 1 teaspoon dried tarragon
1/4 cup fresh basil, minced or 2 teaspoons dried basil
1 teaspoon seasoning salt (or to taste)
1/2 teaspoon white pepper
1/4 cup cornstarch
2 cups half-and-half
sour cream
chives, chopped

Steps:

  • Break off and discard the tough, thick end of each asparagus spear.
  • Chop the spears into 1/4-inch slices and add to the crock pot along with all remaining ingredients down to and including the white pepper.
  • Add water to within 1 inch of the top of the crock pot.
  • Cover the crock pot and cook on high for 6-7 hours.
  • About two hours before serving, use a slotted spoon to remove most of the vegetables to a blender.
  • Use a ladle to add some of the liquid from the crock pot to the blender.
  • Puree the mixture and add back in to the crock pot.
  • Repeat once or twice more as necessary (you can leave some of the pieces in the crock pot for effect.) Add approximately 1 cup of the half-and-half to the crock pot.
  • Add the corn starch to the remaining half-and-half in the carton.
  • Close the carton well and shake vigorously.
  • Add the mixture to the crock pot.
  • Continue to cook on high for 1 hour, stirring occasionally.
  • Serve in bowls with a dollop of sour cream and chopped chives sprinkled on the sour cream.

4 cups chicken stock
8 tablespoons butter
4 tablespoons all-purpose gluten-free flour (or regular flour)
2 cups half-and-half cream
kosher salt
pepper

Steps:

  • Put asparagus and stock into a medium pot and bring to a boil over high heat.
  • Reduce heat to medium and simmer until asparagus is very soft, about 10 to 15 minutes, Set aside 2 cups of the broth; keep warm.
  • Puree asparagus and remaining broth in blender; return to pot and set aside.
  • (I puree in batches) Melt butter in a medium heavy saucepan over low heat.
  • Add flour and cook stirring constantly with a wire whisk for 2 minutes.
  • Whisk in reserved warm broth.
  • Increase heat to medium and cook, stirring, until smooth and thickened, about 5 minutes.
  • Transfer to pot with asparagus puree.
  • Bring to a simmer over medium heat, stirring often.
  • Slowly add half-n-half.
  • Season to taste with salt and pepper.

2 cups diced peeled potatoes
1/2 pound fresh asparagus, chopped
1/2 cup chopped onion
2 celery ribs, chopped
1 tablespoon chicken bouillon granules
4 cups water
1/4 cup butter, cubed
1/2 cup all-purpose flour
1 cup heavy whipping cream
1/2 cup milk
1/2 teaspoon salt
Dash pepper
12 bacon strips, cooked and crumbled
3/4 cup shredded cheddar cheese

Steps:

  • In a large saucepan or soup kettle, combine the potatoes, asparagus, onion, celery, bouillon and water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Stir in the butter., In a bowl, combine flour, cream, milk, salt and pepper until smooth; add to the vegetable mixture. 3 tablespoons extra virgin olive oil
1 large bunch asparagus, ends trimmed, cut into 2-inch pieces
2 stalks celery, chopped
1 large onion, chopped
2 quarts vegetable stock (or faux chicken stock)
1 bay leaf
1 cup thick cashew cream, plus more for garnish (Cashew Cream(Regular and Thick))
fresh ground black pepper
2 cups fresh Baby Spinach
baby greens (to garnish, or use chopped chives, or chopped or slivered cooked beets)

Steps:

  • Place a large stockpot over medium heat. Sprinkle the bottom with a pinch of sea salt and heat for 1 minute. Add the oil and heat for 30 seconds, being careful not to let it smoke. This will creat a nonstick effect.
  • Add the asparagus, celery, and onion and saute for 6-10 minutes, just until celery is soft. Add the stock and bay leaf, bring to a boil, reduce the heat and simmer for 10 more minutes. Remove and discard the bay leaf. Season to taste with salt and pepper.
  • Working in batches, pour the soup into a blender. Cover the lid with a towel(the hot liquid may spout out of the blender), blend on high. Add the spinach to the last batch and continue blending until smooth. Pour the soup into a large bowl and stir to incorporate the spinach batch.
  • Ladle into bowls and garnish with baby greens(or use chives or beets) and drops of Cashew Cream. Enjoy!

1 small onion, chopped
1 garlic clove, minced
2 pounds fresh asparagus, trimmed and cut into 1-inch pieces (about 5 cups)
1 can (14-1/2 ounces) reduced-sodium chicken broth
4 tablespoons all-purpose flour, divided
2-1/2 cups fat-free milk, divided
2 tablespoons butter
3/4 teaspoon salt
1/8 teaspoon dried thyme

2 tablespoons white wine
1 tablespoon lemon juice

Steps:
