CREAM CHEESE MUFFIN PUFFS
My mother in law had this recipe and I just had to try it. As a variation, instead of rolling the cheese in the sugar I add a 1/4 t of strawberry or blueberry jam before folding the dough over.

Steps:
- Heat oven to 375°.
- Melt margarine in a bowl.
- Cut cream cheese into 10 cubes.
- In a second small bowl, combine sugar, cinnamon and extract.
- Dip cheese cube in sugar mixture, then place in the center of a biscuit.
- Fold dough over cheese, pinching to seal.
- Roll dough into ball, dip the doughball into margarine and then the sugar mixture again.
- Place seam side down in an ungreased muffin tin.
- Repeat with the remaining 9 biscuits and cheese cubes.
- Bake for 12-18 minutes at 375° or until golden brown.

CREAM PUFFS IN A PAN
This so easy and so much simpler than making individual ones.

Steps:
- 1. Bring water and butter to a rapid boil. Add 1 cup flour and beat with a fork. Mixture will mound like dough.
- 2. Turn into mixing bowl and add the eggs, one at a time and beat well after each one.
- 3. Spread on a well-greased 11 x 15 inch jelly roll pan. Bake at 350 degrees for 25-30 minutes or until lightly browned. Press down some if it mounds in the middle. Cool.
- 4. Cream softened cream cheese with the pudding and milk. Spread over puff pastry. Top with Cool Whip and then drizzle approximately 1/2 can of Hershey syrup, lengthwise over the dessert. (I only used about 1/4 cup drizzling over top.)
SOUR CREAM CHEESE PUFFS
I used to make these delicious puffs all the time, and freeze them to always have on hand. They are great for any occasion. I once made them for a rehearsal dinner and they were gone in no time. They are also great for a football party. I usually doubled the batch. Recipe is from my Aug/Sept 2009 Taste of Home magazine.

Steps:
- Mix filling ingredients with mixer.
- Set aside.
- Preheat oven to 350 degrees.
- Oil bottoms only of medium muffin tins.
- Beat eggs; stir in milk and oil; set aside.
- Mix together flour, sugar, baking powder, and salt until well blended.
- Pour liquids, all at once, into flour mixture; stir until moistened.
- Fill muffin cups about 1/2 full.
- Spoon 1 teaspoon filling onto batter.
- Top with batter to 3/4 full.
- Bake 30-35 minutes.
- Don't brown; should be light in color.
- Roll hot muffins in powdered sugar.

SOFT BAKED MINI CREAM CHEESE PUFFS - AVERIE COOKS

- Preheat oven to 425F and spray mini muffin pans with floured cooking spray, or grease and flour the pans; set aside.
- In a large mixing bowl, combine all ingredients except milk and beat with an electric mixer to combine, about 2 minutes on medium high speed. Mixture will be very crumbly, with pebbles and sandy bits.
- Slowly drizzle in up to 3/4 cup milk; just enough so that batter will combine and come together. Note – this batter is very thick and paste-like, and I only used 3/4 cup milk. If yours is thick to the point you can’t stir it, add milk, as necessary to thin it.
- Using a tablespoon or small cookie scoop that’s been sprayed with cooking spray (helps batter slide off spoon or scoop easily), form rounded 1 tablespoon mounds and place mounds into prepared pans. Each cavity of pan should be filled about 3/4 full. The cavities are small and the batter is thick, and it’s okay if they’re not all filled exactly uniformly. As the bake, batter that was placed in the pan in a very rounded fashion (like a perfect scoop of ice cream) will bake up more domed and puffed than batter that was just smooshed in. They rise very well; be careful not to overfill.
