LOW CARB MEATLOAF

1 pound lean ground beef
1 green bell pepper
1/2 onion
1 clove garlic
2 large eggs
1/2 cup almond flour *see note
1/2 cup shredded cheddar
1/4 cup powdered Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
3 slices thin-cut bacon
3 tablespoons sugar free ketchup
1 tablespoon bottled Italian salad dressing

Steps:

  • Preheat oven to 375 degrees.
  • Mince the green pepper, onion, and garlic.
  • Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
  • Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
  • Cut the bacon slices in half and drape over the meatloaf.
  • Bake for 25 minutes.
  • Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
  • Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
  • Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
  • Let rest 5 minutes before slicing and serving.

1 Tablespoon olive oil
½ small onion (diced)
2 cloves garlic (minced)
1 ½ lbs lean ground beef
½ teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
2 Tablespoons fresh parsley
1 large egg
¼ cup shredded parmesan cheese
¼ cup almond flour
⅓ cup low carb tomato sauce
1 tablespoon swerve brown sugar

Steps:

  • Preheat oven to 400°F. Line a small pan with foil and spray with cooking spray.
  • Cook onion and garlic in olive oil until tender. Cool completely.
  • Combine all meatloaf ingredients in a bowl and mix well.
  • Form into a 3"x8" loaf and place on prepared pan.
  • Bake 30 minutes uncovered. Top with topping and bake an additional 30-40 minutes or until loaf reaches 160°F.
  • Rest for 5-10 minutes prior to serving.

1.5 lbs ground beef (or ground pork (or half of each for extra flavor))
1/4 cup chopped onion
1/2 tsp fresh minced garlic
1/2 cup crushed pork rinds (ground flaxseed, or almond flour)
2 eggs
1 tbsp Italian Seasoning
1/2 tsp ground black pepper
1 tbsp mustard powder
1 tsp liquid aminos (or soy sauce if you prefer)
8 oz cream cheese (softened)
1/2 cup cooked bacon
2 jalapeno peppers (diced)
5 tbsp AlternaSweets Keto Ketchup

Steps:

  • Add the ground beef, chopped onion, garlic, pork rinds, eggs, Italian seasonings, pepper, mustard powder and liquid aminos in a large bowl and mix it until it's fully combined. Most of the time I use my (cleahands instead of a spoon to mix it all together just like Grandma used to do too.
  • Spray non stick cooking spray into the bread pan and pour half the meat mixture into the pan.
  • Spread the softened cream cheese on top of the bottom meatloaf layer.
  • Add the jalapenos and bacon bits.
  • Top the meatloaf with the second half of the meat mixture.
  • Add extra AlternaSweets Ketchup to the top of the meatloaf, then cover it with foil before you bake it.
  • Bake at 400 degrees for about an hour.
  • TIP: You can add it to one large bread pan or two small bread pans. If you use two small bread pans this meatloaf will cook faster! I've done this when my family hungry and wants dinner faster.

2 pounds ground beef
2 tablespoons dried minced onion
3/4 cup crushed pork rinds
1 6 oz can tomato paste
2 tablespoons low carb sugar substitute (or a touch of stevia (optional))
2 teaspoons white vinegar
2 eggs
2 tablespoons Worcestershire sauce
1/4 teaspoon dried basil
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon black pepper
low carb ketchup (optional topping)

Steps:

  • Lightly spray a 5x9 inch loaf pan with oil or line with foil.
  • Combine all ingredients in large bowl and mix until blended.
  • Pat into loaf shape and place in pan.
  • Bake at 350 degrees F until meat thermometer registers 165 degrees F (about 1 hr to 1 hr 15 min).
  • When meat is done, juices will be clear. Drain any fat and let sit about 10 minutes before slicing. If desired, brush top with ketchup and place under broiler for about 5 minutes.
