  • Place potatoes in a large pot and add enough cool water to cover by 1-inch. Add a pinch of kosher salt and bring to a boil. Cook for 15-20 minutes, until potatoes are tender and a knife can be inserted into the center of the wedges easily. Drain potatoes into a colander and return them to the hot pot.
  • Add butter, cream cheese, 1/2 cup milk or half and half, kosher salt, and pepper. Use a hand mixer or a stand mixer fitted with the paddle attachment to gently combine until smooth, adding additional milk as needed to reach your desired consistency. (I often use the full cup; keep in mind that potatoes will thicken upon standing.) Don't over-whip, or potatoes will become gluey.
  • (Alternatively, I often use a potato ricer to rice the potatoes and then stir in the rest of the ingredients by hand, heating the potatoes on the stove as needed to fully combine the cream cheese.)

  • Peel potatoes and then cut into a 1-inch pieces. Place in a large deep pot. Cover with cold water. Season water with a little bit of salt. Bring to a boil. Boil potatoes until they are VERY fork-tender. About 20-25 minutes.
  • Drain potatoes. Let them sit in the colendar until VERY dry, about 3-4 minutes. Make sure there is no excess moisture on the potatoes. While the potatoes dry out, add the butter and milk to a microwave-safe liquid measuring cup or bowl. Microwave until the butter has melted and the milk is hot.
  • Rice the potatoes into the pot you cooked the potatoes in. Add milk and butter mixture, cream cheese, chives, and salt. Use a hand mixer on a medium speed to whip the potatoes just until the ingredients are incorporated. (It's very important your cream cheese is VERY soft, if needed place it into the microwave in 15 second increments until very very soft.) DO NOT OVERMIX! Season potatoes with salt and pepper. Serve.

  • I recommend taking the cream cheese and the butter out of the fridge at least 30 minutes prior to starting the recipe, but if you forget, you can microwave the cream cheese for 20-30 seconds (the butter will melt easily enough).
  • I didn't peel the Yukon Gold's I used for this recipe, but you can if you prefer (or peel half of them). Cut the potatoes into halves (or thirds if they're large). Add them to a large pot of salted water and boil until a sharp knife easily pierces them.
  • Meanwhile, while the potatoes are boiling, add the cream cheese, butter, cream, garlic, scallions, and salt & pepper to a small saucepan over low heat. Let it slowly warm through (turn off the heat once it's warm or it'll get too thick). Give it a stir occasionally, but don't worry if the cream cheese doesn't completely melt in.
  • Drain the potatoes and leave them in the pot. Pour in half the cream cheese mixture and mash them a bit then add the other half and finish mashing until it's all incorporated and creamy. Try not to over-mash or they may end up gluey.

  • Start by boiling a large pot of water with 3 tablespoons of salt. Yes, that feels like a lot of salt, but seasoning the water makes the potatoes SO much better. Just trust me on this one.For 5 pounds of potatoes, I use a 7 quart stock pot.
  • While the water is coming to a boil, you'll wash and peel your potatoes. I like mine with a little skin left on, but you can peel them all the way if you want.
  • Once your potatoes are clean and peeled (or peeled-ish) cut them into cubes. Try to keep your cubes about 1 inch square. The larger the cubes, the longer they take to cook. Try to cut them as uniform as you can.
  • Drop your potatoes into the pot of boiling water. Boil until the potatoes are tender. My 1-inch cubes took about 20 minutes. You'll know they're done when you stick a fork in it and the potato splits and starts to fall apart.
