These cookies are delicate when made with a press, or hardy when dropped by spoonfuls. I fill centers of press cookies with preserves or a chocolate chip for added variety.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.
- In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Beat in egg yolk and vanilla. Stir in flour until well blended. Drop dough by spoonfuls or use a cookie press to place onto prepared cookie sheets. If using floral cookie press design, make an indentation in the center with a thimble, fill with preserves, or press candy into center.
- Bake for 15 minutes in preheated oven. Cookies should be pale.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Combine cream cheese and butter in a large bowl; beat with an electric mixer until smooth and creamy. Add cake mix, egg, and vanilla extract and mix until batter is smooth.
- Scoop out 1-inch balls of dough and set them on the prepared baking sheet, 1 1/2 inches apart.
- Bake in the preheated oven until slightly golden brown on top, 13 to 15 minutes. Leave on the baking sheet for 1 to 3 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar if you like. Store cookies in an airtight container. They will keep for 3 to 5 days.

CREAM CHEESE COOKIES- SO EASY
When I make these cookies for our College Class at church, there's never any leftovers! They really love the orange cookies which amazes me.

- 1. Cream cheese and butter. Blend in egg and vanilla. Add cake mix (dry), 1/3 at a time, mixing well after each addition.
- 2. Cover. Chill 30 minutes or more. Heat oven to 375 degrees. Drop by scant teaspoonfuls onto ungreased baking sheet.
- 3. Bake 8-10 minutes or until light brown. cool slightly before removing from baking sheet. Note: I've used yellow, orange & chocolate mixes & am still trying out different ones & they all are delicious.
CREAM CHEESE CUTOUTS WITH ROYAL ICING
Steps:
- In the bowl of an electric mixer, beat the butter, cream cheese, sugar and salt until light and fluffy. Add the egg and vanilla and continue to beat until combined. Gradually add the flour and beat until a dough forms. Cover and refrigerate for 2 hours or until firm.
- Preheat the oven to 350 degrees.
- On a floured surface, roll out the dough using a rolling pin to a 1/8 inch thickness. Cut the dough with cookie cutters dipped in flour. Place the cutouts on a baking sheet lined with parchment paper.
- Bake for approximately 7-8 minutes or until the edges begin to brown. Cool on the pan for 1 minute and then transfer to a cooling rack to cool completely.
- In the bowl of an electric mixer, mix the egg whites and vanilla until frothy. Gradually, add the sugar and mix on low speed until the sugar is incorporated and the icing is shiny. Turn the mixer to med-high and beat until the mixture forms stiff, shiny peaks, approximately 5-7 minutes.
- Stir in food coloring if desired.
- For immediate use, transfer to a pastry bag fitted with a tip and pipe onto the cookies. (Or if you're using a zip top bag, clip corner and pipe onto cookies.)
- Icing can be stored in an airtight container for up to 3 days.

I love this recipe because it is so easy to roll out, and the taste is great. This is our favorite Christmas cookie recipe to make, but I also make them for Easter and Halloween. Sometimes I ice them or just sprinkle with colored sugar while they bake. I always double this recipe for us.

- Cream margarine and cream cheese, then add the sugar, egg yolk, and vanilla, and flour last.
- I like to chill dough over night or at least several hours.
- Roll out chilled dough and cut in desired shapes with your favorite cookie cutters.
- Bake at 350° for 10 minutes.
- Ice and decorate.

EASY CREAM CHEESE COOKIES
These Cream Cheese Cookies are soft and chewy little treats that melt in your mouth! The cream cheese and almond extract make them stand out and shine on your cookie platter.

- In a large mixing bowl, mix butter and cream cheese for 30 seconds with a hand mixer.
- Add sugar and mix in for 1 minute.
- Add egg, vanilla, and almond extract. Mix in well.
- In another mixing bowl, whisk together flour, baking powder, and salt. See note below on properly measuring out the flour.
- Add dry ingredients to the cream cheese mixture and mix at low speed just until combined. The dough will be sticky.
- Cover the bowl with dough and chill in the fridge for 30 minutes. This will make it easier to roll.
- In the meantime, line baking sheets with a silicone baking mat or parchment paper and preheat the oven to 375° F.
- Scoop 1 ½ tablespoons of dough and roll in your hands.
- Place balls of dough on a prepared baking sheet and bake for 9 to 11 minutes.
- Once done, cool cookies on the pan for 5 minutes, then remove onto a cooling rack to cool completely.
- Dust with powdered sugar before serving.
