CREAM CHEESE CLOUDS
This attractive dessert is like a meringue but without all the fuss. The "clouds" are made the night before and quickly filled just before and quickly filled just before serving. In a pinch, I've used canned pie filling for the fresh strawberries.

EASY CLOUD BREAD
Cloud bread is soft and fluffy - like a cloud! It's a great substitute for 'regular' bread and is low in carbs. Although it's not firm enough to replace bread in a regular sandwich, I like to top one 'slice' with peanut butter and bananas, toast it with jam or with my favorite lunch meat and fillings!

- Put softened cream cheese, butter, Swerve sweetener, vanilla extract and whole strawberries in your food processor.
- Using a pastry bag or similar tool, make candy shapes onto foil, parchment paper or silicone baking mats.
- Alternatively, put the mix into some small, cute candy molds. (This is quicker and easier, especially if you're a slob about it like me.)

- Pre-heat oven to 325 degrees. You will need two baking sheets lined with parchment paper. The danishes are large and only about 6 will fit. They spread so give them some space.
- First, add cream cheese to a bowl and use a hand mixer to mix until smooth. Add sweetener and egg yolk and beat until it’s all mixed together well. You can do this by hand but you want to make sure it’s smooth. Then put the cream cheese into a baggie and cut the dip so you can pipe it into the danish base. I actually use the back of a spatula pipe the filling onto and then a knife to place it on top of the base. This helped a lot because the base is very airy and moves with the cream cheese.
- In a stand mixer or with the hand mixer, beat the egg whites and cream of tartar until it forms stiff peaks. Should be able 2-3 minutes.
- While that is mixing, in another bowl, mix together the egg yolks and cream cheese. Then add sweetener, whey protein, and vanilla.

- Firstly, prep everything. Once you start going, you'll need to move quickly so have everything handy. Pre-heat the oven to 325f degrees and arrange a rack in the middle. Line a baking sheet with parchment paper and set aside. Grab your tools: hand mixer (you can use a stand mixer, but I find it to be better for whipping egg whites so I can stay in control), all ingredients, any additional seasonings, two mixing bowls (the larger one should be used for egg whites), a large spoon to scoop and drop the bread with.
- Using a full-fat can of coconut milk that has been refrigerated overnight or several hours, spoon out the top coconut cream and add to the smaller bowl.
- Separate eggs into the two bowls, adding the yolk to the bowl with the cream and be careful to not let the yolk get into the whites in the larger bowl.
- Using a hand mixer, beat the yolk and cream together first until nice and creamy, make sure there are no clumps of coconut left.
