CREAM CHEESE BRUSCHETTA



Cream Cheese Bruschetta image

Cream Cheese Bruschetta is a spin on traditional tomato bruschetta. This version has a layer of creamy, basil cream cheese just beneath the tomato mixture that adds a wonderful taste and texture that takes this appetizer up a notch.

16 Slices French Baguette or Rustic Sourdough Loaf, toasted
4 Ounces Cream Cheese, softened
1 Tablespoon Fresh Basil, julienned
1 Pound Roma Tomatoes, diced
1/2 Cup Onions, chopped
1/2 Cup Basil, julienned
2 Medium Garlic Cloves, minced
2 Tablespoons Olive Oil
Salt and Pepper, to taste
1/4 Cup Parmesan Cheese, shredded off the block (optional)

Steps:

  • Preheat the oven to 350°F.
  • Slice the baguette into ½-inch thick slices, and place them on a baking sheet. Bake for about 10 minutes until the bread is lightly toasted. Remove from oven and set aside.
  • Place the softened cream cheese and basil in a small bowl. Use a spoon to combine. Set aside.
  • Place the tomatoes, onions, garlic, basil, and olive oil in a medium bowl. Stir to combine. Taste, and season with salt and pepper.
  • Spread approximately 1 tablespoon of basil cream cheese onto each slice of toasted bread. Top with about 1 - 1 ½ tablespoons of bruschetta mixture. If desired, sprinkle with Parmesan cheese.
  • Serve immediately. The bruschetta may be stored in the refrigerator for up to 3 days. Store unassembled in separate containers for best results.

1/2 cup chopped seeded tomato
2 tablespoons chopped green onion
1 tablespoon chopped ripe olives
4 ounces reduced-fat cream cheese
1 tablespoon minced fresh basil

Steps:

  • Place bread on an ungreased baking sheet. Broil 6-8 in. from the heat for 3-4 minutes or until golden brown. Meanwhile, in a small bowl, combine the tomato, onion and olives; set aside. , Combine cream cheese and basil; spread over the untoasted side of bread. Broil 3 minutes longer or until cheese is melted and edges are golden brown. Top with tomato mixture. Serve warm.

6 tablespoons orange juice
1 teaspoon grated orange zest
2 cups sliced fresh strawberries
1 cup each fresh blueberries, blackberries and raspberries

Whipped cream in a can

Steps:

  • In a small bowl, beat the cream cheese, orange juice and zest until blended. In a large bowl, combine the berries. Place a cake slice on each of six dessert plates; top with cream cheese mixture and berries. Garnish with whipped cream.

1 package (8 ounces) cream cheese, softened
1/2 cup prepared pesto
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups grape tomatoes
1 carton (8 ounces) fresh mozzarella cheese pearls, drained
Minced fresh basil, optional
French bread slices (1/2 inch thick), toasted

Steps:

  • In a small bowl, mix cream cheese, pesto, salt and pepper until combined. Transfer to a greased 3-qt. slow cooker. Top with tomatoes and mozzarella cheese. Cook, covered, on low until heated though and cheese begins to melt, 1-1/2-2 hours. If desired, sprinkle with basil. Serve with toasted bread.

I made this for the first time for a Chrismas pot luck party. It was such a hit that I made it again for my New Year's Eve party.

6 cloves garlic
1 tablespoon olive oil
1 loaf French bread
1 (16 ounce) package cream cheese
1 cup freshly grated parmesan cheese
1 cup chopped tomato
1 tablespoon sliced basil
1/4 cup minced white onion
1/2 tablespoon minced fresh garlic
1 -2 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
kosher salt

Steps:

  • Heat oven to 350 degrees F.
  • Remove peel from garlic and place on a piece of aluminum foil.
  • Drizzle with olive oil.
  • Wrap up garlic and roast in oven for about 30 minutes, or until soft.
  • In a medium bowl, toss tomatoes, basil, onion, minced garlic, olive oil, lemon juice, salt, and chill.
  • Remove roasted garlic from the oven.
  • Combine garlic with the cream cheese until smooth.
  • Slice bread, 1/2-inch thick, on the bias.
  • Toast the bread in the oven slightly and set aside.
  • Spread cream cheese mixture on the toast and sprinkle with parmesan cheese.
  • Return to oven to warm the cheese.
  • Remove from the oven and top with tomatoes mixture and serve.
