CREAMY BANANA BREAD
I have been using this recipe for a few years now, and it remains my family's favorite for banana bread! The combination of bananas and cream cheese make this a very moist bread.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4-inch loaf pans.
- Cream the margarine and cream cheese together. Gradually add the white sugar, and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla. Add flour, baking powder, and baking soda; mix until batter is just moist.
- In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.
- Divide half the batter between the two prepared loaf pans. Sprinkle pecan mixture over the batter in the pans, and top with remaining batter.
- Bake in the preheated oven until a toothpick inserted in the center of each loaf comes out clean, about 45 minutes.

Steps:
- Mix together cream cheese, sugar and butter until smooth.
- Add eggs and bananas and mix well.
- Combine dry ingredients and add to wet and mix until blended.
- Fold in nuts.
- Pour into greased and floured 9x5 loaf pan.
- Bake at 350 degrees for 1 hour and 10 minutes.
- Cool in pan for 10 minutes before moving to cooling rack.
- Serve warm or cool.

- Cream together shortening, cream cheese, brown sugar, and white sugar.
- Smash ripe bananas and mix in baking soda.
- Sift together flour, salt, baking powder, and pudding mix.
- Add eggs one at a time to shortening mix.
- Then add vanilla.
- Slowly add flower mixture to shortening
- Bake at 350 for 60 minute.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan with cooking spray.
- Combine butter, brown sugar, 1 egg, sour cream, 1/4 cup white sugar, and vanilla extract in a large bowl; whisk until smooth. Mash in bananas using a fork. Whisk in 1 cup flour, baking soda, baking powder, and salt until just combined.
- Whisk cream cheese, 1 egg, 1/4 cup white sugar, and 3 tablespoons flour together in a separate bowl.
- Pour half of the banana mixture into the prepared loaf pan. Spread cream cheese mixture evenly on top. Pour remaining banana mixture over cream cheese mixture.
- Bake in the preheated oven until top is firm, about 50 minutes. Cool in the pan, about 5 minutes.

- Bake the bread: Place a rack in the center of your oven and preheat the oven to 350 degrees F. Lightly grease an 8x4-inch loaf pan with nonstick spray and set aside.
- Mash the bananas in the bottom of a large bowl until mostly smooth. Whisk in the egg, then the yogurt and oil. If you're using coconut oil and it resolidifies, microwave the bowl for a few seconds to melt it. Whisk in the maple syrup, brown sugar, and vanilla. Sprinkle the baking soda, ginger, and salt over the top, then stir until combined. Gently stir in the flour until barely combined, then fold in 1/2 cup of the cranberries.
- Scrape the mixture into the prepared pan. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Check at the 35-minute mark and tent with foil if the bread is browning too quickly at the corners. Place the pan on a wire rack and let cool for 15 minutes. - While the bread cools, prepare the cream cheese white chocolate topping: In a mixing bowl, beat together the cream cheese, Greek yogurt, and vanilla extract on medium speed until smooth. Reduce mixer speed to low, then slowly add the powdered sugar until combined. In a microwave-safe bowl, combine the white chocolate and coconut oil. Microwave, uncovered, at 70% power for 20 seconds, then stir. Continue microwaving at 70% in 20-second bursts, stopping to stir between each. When the white chocolate is almost but not completely melted, remove from the microwave and stir until completely smooth, letting the residual heat melt the white chocolate the rest of the way.
