- In a medium bowl, stir together the cream cheese, raisins, bacon, green onions and sour cream. Form into a ball, and wrap in plastic wrap. Refrigerate for at least 3 hours or overnight before serving.
- To serve, place the cheese ball on a serving tray, and pour the mango chutney over it. Surround with crackers for dipping.

- In a large bowl, add the cream cheese and sour cream, and mix to combine. Add the currants, walnuts, scallions, curry powder and salt, and stir to combine. On a clean work surface, lay out a sheet of plastic wrap. Transfer cheese mixture to the plastic. Use the plastic wrap to form into a ball. Place in refrigerator for at least 30 minutes. Remove cheese ball from refrigerator and unwrap plastic wrap. Transfer cheese ball to a platter. Pour chutney over the cheese ball to cover. Sprinkle coconut flakes on the cheese ball to cover. Serve with rice crackers.

- Add the cream cheese, chutney, green onions, curry powder, salt and pepper to the bowl of an electric mixer. Beat until everything is combined, scraping the bowl a few times to make sure everything is incorporated. Fold in the cheddar cheese. Taste the mixture on a cracker. Add more salt and pepper as needed.
- Lay out a sheet of plastic wrap. Add the cheese to center of the plastic wrap. Pull up the sides. Wrap in a round shape. Or if you want to skip the "cheese ball", you can just add it to a ramekin. Chill for at least an hour, or a few days.
- Roll the cheese ball in chopped pecans and serve with crackers. Or, garnish the top of the ramekin with some more chutney, chopped pecans, and green onions. You could even bake this and serve it warm.
