CHEDDAR & CHIVE 7-UP BISCUITS
I made these biscuits for dinner on yesterday, and they are as good today as they were on yesterday, with just 30 seconds heated in the microwave. They are moist, and very flavorful, and very cheesy. I use the sharp cheddar cheese to give the biscuits a little extra flavor. This is just the basic 7 up biscuits recipe with a few...

Steps:
- 1. Preheat oven to 400 degrees F. Add bisquick to medium size bowl then add chive and sour cream.
- 2. Stir to blend then add the shredded cheddar cheese and 7-up. Stir till mixed together and dough is tacky.
- 3. Pour mixture onto a floured surface and roll out then cut with a cookie cutter, or do as I do, Shape into biscuits by hand using a little extra bisquick to prevent dough from sticking to hands. Roll & shape into biscuits. Add melted butter to bottom of 9X9 size pan, then place biscuits side by side till all are done. I brushed extra butter on top before baking, or you can spray with Butter flavored cooking spray, I have used both methods and they both work.
- 4. Bake in preheated 400 degree F. oven and bake forabout 20 to 22 minutes till golden brown.
- 5. Remove from oven and serve with pats of butter while biscuits are still hot.
CHIVE AND ONION CREAM CHEESE
This could be used as a dip or a spread. I made it up when I realized I needed it for a recipe I was about to make: recipe#204602. I thought it turned out very flavorful and yummy.

Steps:
- Heat the oven to 425 F. Line a baking sheet with a silicone mat or parchment paper. In a large mixing bowl, combine the flour, baking powder, soda, sugar, and salt. Stir with a whisk to blend thoroughly. Cut the butter and cream cheese into small pieces and add to the dry mixture. Work in with a pastry blender and/or fingers until the mixture resembles coarse meal. This can also be done in a food processor, but pulse just until the mixture resembles coarse meal. Stir in the chives and then add the buttermilk. Stir the dough with a fork just until the dry ingredients moistened, then turn the mixture out onto a floured surface. Knead the 4 or 5 times, or just until the dough holds together and forms a smooth, soft dough. Don't overwork the dough or the biscuits will be tough. Work in a little more flour, if necessary. Pat the dough or roll it into a circle about 3/4 inch thick. Cut round or square shapes out with a biscuit cutter and arrange the biscuits on the prepared baking sheet. Gently bring the scraps together and continue cutting out biscuits. Brush each biscuit top with melted butter. Bake for 12 to 16 minutes, or until the tops are until lightly browned. Makes 12 to 14 standard size 2 1/2-inch biscuits, or about 20 2-inch biscuits. Expert Tips ■ For extra-flaky biscuits, freeze the cream cheese and butter. ■ Combine the fat with the dry ingredients until the crumbs are coarse, or about 1/4-inch in size. The small pieces of butter and cream cheese create the flaky pockets in the biscuits. ■ Substitute 1/2 cup whole wheat flour 1/2 cup of the all-purpose flour in the recipe.
CHEDDAR BISCUITS WITH CHIVE BUTTER
Chives are the first herb to come up in the spring, and their delicate flavor pairs well with these biscuits. A little bit of Parmesan cheese makes the flavor of Cheddar cheese really pop; try it next time you make mac and cheese!

- In a large bowl, combine flour, baking powder and soda, salt and chives, stirring well to coat. Using your hands, a fork or a pastry blender, add the butter and mix until coarse crumbles form. I like to use my hands for this and I spend about 5 full minutes rubbing the butter and flour through my fingers until the consistency is the same throughout the mix. Once finished, add in the cream cheese in spoonfuls. You’re going to do the same as you did with the butter – but you don’t want to mix the cream cheese in as much. A spoon works better here and just combine it until there are a few larger chunks of cream cheese and it’s worked into the flour.
- Add the buttermilk and stir until it is JUST combined – do not overmix! Add some flour to your workspace and place the dough on top. I sprinkle some additional flour on top of the dough, then use my hands and pat it into a circle that is about one inch thick. Take a small biscuit cutter or even the (clean) lid to one of your spice containers and cut the biscuits into rounds. You want to use an instrument that is roughly one inch in diameter. Place on a nonstick baking sheet. Bake for 6-8 minutes, until slightly golden. These are best served warm when the cream cheese is still soft!

- In a large bowl or food procesor, add the flour, baking powder, and salt. Cut the butter in to 1 tablespoon size pieces and add them to the flour. Pulse until the butter is slightly larger than peas. You can also cut the butter in with two forks, your hands or a pastry blender.
- Add in the chives and stir just to mix them in. Add the buttermilk and mix; turn out onto a lightly floured surface and knead 8 to 10 times to bring in any loose or dry pieces or bits of flour.
- Cut the cream cheese in to three pieces and spread it over the dough all the way to the edges. Stack the layers on top of each other, turning the top piece cream-cheese side down. You'll have two layers of cream cheese together but that's okay.

- Preheat the oven to 425. Whisk together the dry ingredients (including the cheddar) until everything is well combined.
- Use clean hands to work the butter and the cream cheese until it is nice and crumbly. If there are a few larger crumbs, that’s even better!
- Add the milk and mix with a fork. The dough is still going to be a little crumbly, but pick up a little bit and press it together – it should stick together. If not just add a little bit more milk until it does.
- Put the dough on a floured silicone mat or other surface and mix it together a little more with your hands until it is all holding together. Pat it into an 8-inch square and cut it into 2-inch squares, or if you like your biscuits round you can use a biscuit cutter. Place the biscuits on an ungreased baking sheet.
