2 boneless, skinless chicken breasts, sliced
2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
2 onions, sliced
4 cloves garlic, minced
5 oz spinach
5 cups milk
1 lb fettuccine
½ cup pesto
1 cup parmesan cheese, plus more for serving
fresh parsley, chopped, for serving

Steps:

  • In a large pot or Dutch oven over medium-high heat, cook the bacon until crispy. Add chicken and season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, then remove from the pot and set aside.
  • Add the onions and garlic and cook to the pot and cook until softened. When onions are caramelized, add spinach and cook until wilted. Add the milk and bring to boil. Add the fettuccine to the boiling milk and cover. Cook the fettuccine over medium heat until the milk thickens and the pasta is cooked, about 7 minutes.
  • Return the chicken to the pot. Stir in the pesto and Parmesan. Garnish with parsley and more Parmesan.

2 tablespoons olive oil
1 small onion, chopped
8 cloves garlic, sliced
½ cup butter

1 cup prepared basil pesto
1 pound cooked shrimp, peeled and deveined
20 mushrooms, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat olive oil in a large skillet over medium heat. Saute onion until tender and translucent. Stir in garlic and butter, and saute until garlic is soft and fragrant, about 1 minute. Heavy cream contains at least 36% milkfat. Half-and-half, just like the name says, is half milk and half cream and is no more than 18% milkfat. If half-and-half is used, the sauce will only be half as thick as it would if heavy cream were used. Also, if the amount of butter is reduced, that will also make the sauce thinner, as butter is 80% milkfat.

3 slices bacon (about 2 ounces), cut into 1/2-inch pieces
1 small onion, peeled, thinly sliced
2 tablespoons mascarpone cheese
1/4 cup farmer's cheese
Freshly grated nutmeg
Freshly ground black pepper
6 ounces Pizza Dough, recipe follows
1/2 cup grated mozzarella
2 tablespoons grated Parmesan
2 tablespoons fresh thyme leaves
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
  • In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
  • In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
  • On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
  • Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

¾ teaspoon instant yeast
1 teaspoon salt
¼ cup hot water
3 ¾ teaspoons olive oil, plus more for drizzling

2 tablespoons lemon juice, optional
⅓ cup olive oil
2 cloves garlic
1 ½ cups fresh basil leaves
¾ cup mozzarella cheese

Steps:

  • Preheat oven to 425ºF/220ºC and prepare a sheet pan with parchment paper or corn meal.
  • Add flour, yeast, and salt to the Vitamix and pulse at variable 5 several times. Remove the lid plug and slowly add the water and olive oil while pulsing at variable 6. Stop pulsing once all of the water and oil have been added, and the dough forms a ball.
  • Place dough in an oiled bowl and flip it over so both sides get oiled. Rest until ready to use (at least 15 to 20 minutes).
  • In the 16-oz container, blend Parmesan, pine nuts, olive oil, and garlic cloves on variable 4 until smooth.

  • On the sheet pan, stretch out half of the dough to form a 12-14-inch (30 - 35 cm) pizza crust. Save remaining dough for later. (Tip: Leftover pizza dough makes for great cinnamon rolls!)
  • Spread half of the pesto onto the pizza dough and sprinkle with mozzarella. (Save remaining pesto for another time or freeze for up to 1 month.)
  • Add onions and chicken to the top of the pizza and bake for 10 to 15 minutes, or until cheese has melted and crust is light golden brown. Sprinkle with chopped tomatoes and a few fresh basil leaves.

Bacon Onion Pizza with Pesto Cream Sauce
Yield: 1 Pizza
ingredients:
8 oz of your favorite dough recipe (or store bought Shh! I won't tell!)
½ head of roasted garlic
Olive oil
¼ cup ricotta
¼ cup sour cream
½ cup basil pesto
Flour for rolling the dough (~1 Tbls)
¼ lb bacon, in a large dice
1 medium onion, thinly sliced
1 oz whiskey (or 1 heaping tsp sugar)
½ cup mozzarella

Steps:

  • directions: 1. Make the dough, if not already prepared. 2. If you don't have roasted garlic laying around, cut the top off of a head of garlic. Drizzle with olive oil. Bake in a dish at 450 degrees for about 30 minutes or until fragrant. Cool, and remove from the head by squeezing the base of the bulb. 3. In a medium bowl, mix together ricotta and sour cream. Fold in the pesto. Season with freshly ground pepper. Put in refrigerator to meld until assembly. 4. In a large skillet, cook the bacon until crispy (but not burned). Remove from pan in a slotted spoon, and drain on a paper towel. 5. In the reserved bacon fat, start to cook the onions over medium heat. Salt, and slowly cook until just starting to brown (about 20 minutes). Finish the onions by adding the whiskey or sugar. Cook until alcohol is dissolve, or onions are fully caramelized and sugar is cooked down. 6. Assembly! Roll out the dough - I made mine into a square half-sheet pan lined with parchment, but adjust based on your pizza skill. 7. Spread pesto-cream mixture over the dough, be sure to leave room for crust. 8. Sprinkle with cheese. 9. Dot with ½ head of roasted garlic. 10. Sprinkle bacon and onion over the top. 11. Bake at 400 degrees for about 8-12 minutes - but adjust the temperature and cooking time to suit your baking method (my pie took a little longer because of the dark base of the baking sheet). Check often if you're unsure (with the light, don't open the door!) or a pizza novice.
