MEXICAN STYLE CORN



Mexican Style Corn image

On the streets of Santa Maria, California, street vendors (think an ice cream man with a 'trash can' full of hot corn on the cob instead of ice cream) roam the sidewalks selling corn on the cob for a dollar an ear! They slide a wooden skewer in one end for you to hold the corn. We crave it often and it's become a regular on our Saturday grill nights! Give it a try. You'll be surprised!

4 ears corn on the cob, husks and silk removed
¼ cup mayonnaise (such as Hellmann's®/Best Foods®), or to taste - divided
¼ cup margarine in a squeezable container, or to taste - divided
¼ cup grated Parmesan cheese, or to taste - divided
1 teaspoon chili powder, or to taste - divided

Steps:

  • Bring a large pot of water to a boil and gently place ears of corn into the boiling water. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.
  • Remove an ear of corn with tongs and spread about 1 tablespoon of mayonnaise all over the kernels. Squeeze about 1 tablespoon of margarine over the ear of corn in a zig-zag line, turning the ear as you squeeze. Generously sprinkle Parmesan cheese over the ear and dust with chili powder. Repeat with remaining ears of corn.

6 ears of corn (shucked)
mayonnaise
Cajun spice
Parmesan cheese (shredded)
melted butter

Steps:

  • 1. When shucking the corn, leave the end knob on each ear because you'll want to use this for a handle.
  • 2. Brush a light coat of melted butter onto corn and wrap each ear seperately with foil. Place on the grill, not on immediate fire.
  • 3. Keep rotating the corn until fully cooked. (Time varies for each grill.)
  • 4. Put a layer of mayonnaise on the corn. Then sprinkle on the Cajun seasoning and follow up with the Parmesan cheese on top of that.
  • 5. Repeat for each ear of corn. Delicious!!

Steps:

  • Preheat oven to 350°. Melt the butter in a casserole dish. Beat the remaining ingredients with a hand mixer, pour them in the casserole dish, add some black pepper on top. Bake for 45-55 minutes, until center is set.

4 corn on the cob (with husks)
4 tablespoons garlic butter (room temperature, divided 4 ways)
4 teaspoons seasoning salt (divided 4 ways)
2 teaspoons ground black pepper (divided 4 ways)

Steps:

  • - Pull husks down without removing them. Pull off the silk and throw out. Stand corn up in a bowl cover the pulled down husks and soak in water for 10-15 minutes.
  • - Hold the cob at the end and spread 1 tablespoon of garlic butter (each cob), sprinkle with salt and pepper.
  • - Pull husks back up over cob.
  • - Roll each cob in a sheet of foil twisting on the ends.
  • - BBQ or Bake (in oven place on a baking sheet) 350 degrees for 20-25 minutes (turning every 5 minutes).
  • - Remove foil and husks, discard and enjoy.
  • *All steps can be done ahead of time up to cooking (refrigerate until ready to cook). This is a great time saver for camping, company or just because.
  • *Depending on your taste you could also sprinkle on a small amount of cumin OR smoked chili powder.

Incredible street corn chicken tacos made with flavorful sazon grilled chicken, seasoned grilled corn, fresh avocado salsa and an addicting jalapeño lime cashew sauce. These delicious grilled street corn chicken tacos are the perfect summer recipe the whole family will love!

For the sazon chicken:
1 pounds boneless skinless chicken thighs
1 tablespoons olive oil
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon garlic powder
1/2 teaspoon oregano
Optional: ¼ teaspoon cayenne (only if you like a little heat)
½ teaspoon salt
Freshly ground black pepper
For the grilled corn:
2 ears of corn, washed
2 tsp olive oil
½ teaspoon cumin
½ teaspoon chili powder
For the salsa:
1 avocado, diced
1 jalapeno, thinly sliced
1/3 cup finely diced cilantro
¼ cup finely diced red onion
1 lime, juiced
Freshly ground salt and pepper, to taste
For the jalapeno lime cashew sauce:
1/2 cup raw cashews
1/3 cup water, plus more to thin if necessary
1 medium jalapeno, seeded
1 clove garlic
2 tablespoons fresh lime juice
3/4 teaspoon salt
1/4 teaspoon onion powder
Freshly ground black pepper
For serving:
8 soft corn tortillas
Extra thinly sliced jalapenos
Extra cilantro

Steps:

  • Soak the cashews in 2 cups of warm water for at least 2 hours; otherwise I've found that you can easily speed up the process by adding the raw cashews to a pot with water and placing over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for about 30 minutes in the hot water, then drain.
  • Once the cashews have finished soaking you'll be ready to make the sauce: add drained cashews, fresh water, jalapeno, garlic, fresh lime juice, salt, onion powder and black pepper to a blender. Blend on high until sauce comes together. If you want a bit of a thinner sauce, add 1-2 tablespoons more water. Set aside.
  • While your cashews are soaking, you can marinate your chicken: in a large bowl add chicken, olive oil, cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper. Toss together to coat the chicken and allow it to marinate for 30 minutes-1 hour, or up to 24 hours.
  • Next prepare your corn: drizzle corn with olive oil and rub with chili powder, cumin and salt and pepper.
  • Now it's time to grill both the chicken and the corn: preheat grill to 400 degrees F. Place the corn and chicken directly on the grill. Turn corn occasionally until charred and cooked for about 15-20 minutes. Grill chicken thighs for 6-8 minutes per side or until fully cooked and the meat thermometer reads 165 degrees F. Transfer cooked chicken to a plate and cover with foil to keep warm, then chop into bite sized pieces.
  • Allow corn to cool a bit before cutting it off the cob and placing corn into a medium bowl along with following ingredients for the salsa: diced or sliced avocado, jalapeno, cilantro, red onion, lime and salt and pepper, to taste. Toss to combine.
  • Char your tortillas if you'd like, then top each with a spoonful of the jalapeno cashew lime sauce, chicken, street corn mixture, extra jalapenos and an extra drizzle of cashew lime sauce on top. Enjoy! Serves 4; 2 street corn chicken tacos each.

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut each tortilla in 1/2. Cut each 1/2 into 3 triangles.
  • Spray a baking sheet lightly with nonstick spray. Place tortilla triangles close together on the sheet.
  • Cover triangles with a 1-second spray of nonstick spray (optional). Evenly sprinkle with salt.
  • Bake in the oven until crispy, about 8 minutes, carefully flipping about halfway through bake time.
  • Serve with salsa for dipping, if using. Enjoy!

1/2 cup light corn syrup
1/4 cup butter, melted
3 tablespoons assorted colored sprinkles or colored sugar
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Steps:

  • Place popcorn in a large bowl. In a microwave-safe bowl, combine corn syrup and butter. Cover and microwave on high for 20-40 seconds; stir. Pour over popcorn; stir to coat. Immediately add colored sprinkles, sugar and cinnamon; toss to coat., Transfer to two greased 15x10x1-in. baking pans; let stand for 1 hour or until dry. Store in an airtight container.

Steps:

  • Boil a pot of water. While waiting for water to boil husk the corn. Cook corn for at least 20 minutes. Allow to cool for a minute or two. When ready to serve take a butter knife and spread on Mayo, then mustard and sprinkle with cheese. Use your own judgement.
