HOMEMADE CAESAR SALAD DRESSING
My family loves this rich and creamy Caesar salad dressing. It's not overly garlicky or fishy -- it's just right.

Steps:
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
- Note: Anchovy paste can be found near the canned tuna in the supermarket.

This Homemade Classic Caesar Salad has a homemade creamy Caesar dressing that uses anchovy paste, mayo, Parmesan, lemon and plenty of garlic!

- Combine all of the ingredients into a container that you can use an immersion or hand blender in to mix the ingredients. Alternatively, you can place this all in your blender.
- Process and blend all of the ingredients together, adding in more garlic and lemon to taste if you want. ( I am Ukrainian so there is always room for more garlic!) Set aside
- Place the lettuce in a large bowl.
- Toss with the dressing until the lettuce is coated completely.
- Top with the bacon, croutons and the Parmesan. I do NOT mix it in because as you know, they all go to the very bottom!
- Right before serving, mix the toppings into the top layer of lettuce, not the bottom, just slightly so that you have a layer of toppings for everyone to dig into.

- In a bowl, combine the garlic, mayo, anchovy paste, grated parmesan, Worcestershire, mustard, and lemon juice. Whisk to combine well. Add kosher salt and fresh ground pepper to taste. Chill.
- When ready to serve, add torn lettuce into a large serving bowl. Drizzle desired amount of dressing and toss. Add shaved parmesan and toss gently. Top with croutons.
- Serve immediately.
CRAZY CAESAR'S SALAD
Salad with an identity crisis - part pasta salad, part dinner salad. I tweaked a recipe I found over at allrecipes.com (Chicken Caesar Pasta, posted bsteimle) - streamlined it for harried nights I just don't feel like standing over the stove, and added in more veggies. Some of the vegetable amounts will be approximates, as I just usually eyeball what I throw in. You can add more or less, as you please.

- Start off by getting a large mixing bowl. In the bowl, mix together the Caesar dressing and red wine vinegar. Once that's well combined, stir in the Parmesan cheese. Place the bowl in the refrigerator until needed later.
- Bring a large pot of water to a boil. Boil pasta until al dente, usually 8-10 minutes. (Check your pasta package for recommended times.).
- Carefully drain off the pasta in a strainer or colander. Run the pasta under cold water to cool off the pasta. Drain well.
- Remove the mixing bowl from the refrigerator. Add in the pasta and the remaining ingredients. Stir thoroughly. Keep any leftovers in the refrigerator in a covered bowl.
- Notes about the lettuce - the bags of salad mix vary widely in weight, depending on the type of lettuce/greens in the mix, usually 5-10 oz per bag. Regardless of the weight, they usually contain in volume roughly 6 cups of greens. Feel free to sub this amount of your preferred lettuce type.
- ***If you are making this batch ahead or going to eat over a course of a few days and don't want the lettuce to get wilty, you can leave the lettuce out of the mixture, and serve the mixed salad over lettuce greens when you are ready to eat. I've made this up a couple of times to take to work for lunch; I just put my lettuce in the salad container and scoop the pasta mixture on top.

This is my recipe for ceasar salad, and I am sure you will love it. I make it all the time, once you know how, its so easy if your having company over or whatever, and who wants to buy those store brands anymore. I know you'll be happy! Sometimes I substitute Romaine for Butter Lettuce, thats fantastic.

- mix all together, including bacon, and set in the fridge for atleast 30 minutes to let the flavours combine.
- Cut and clean salad, and mix all. Serve with croutons. You can then shred more parmesan cheese on top if you like.
- To make croutons cut up a baguette of your choice into cubes, drizzle with olive oil, oregano, basil. salt and pepper and put in oven at 375 for about 6-8 minutes depending on your oven. Bon Apettit!
