1 tablespoon olive oil
6 medium mushrooms, thinly sliced
1 medium onion, finely chopped
1 medium bell pepper, chopped
2 garlic cloves, finely chopped
1 pinch saffron (hefty)
3/4 teaspoon chili powder
3/4 teaspoon dried basil leaves, crushed
3/4 teaspoon dried oregano leaves, crushed
1/4-1/2 teaspoon dried chili pepper flakes
2 medium zucchini, cut in 1/2 inch dice
2 cups marinara sauce (Use a good quality jar sauce.)
1 (6 ounce) can minced clams, drained
1/8 cup kalamata olive, coarsely chopped
8 ounces linguine, cooked and drained
parmesan cheese, grated

Steps:

  • Over medium high heat, heat olive oil in heavy skillet. Add mushrooms and cook until brown. Add onion, garlic and bell pepper cook stirring occasionally until wilted.
  • Stir in saffron, basil, oregano and red chili flakes, cook 1 minute. Add diced zucchini and cook until zucchini begins to wilt. Stir in sauce and bring to a boil over medium high heat. Reduce heat to low, stir in clams and diced olives. Cook until heated through.
  • Serve over hot linguine and sprinkle with cheese.

Inspired by and adapted from a recipe in the NY Times, for those who cannot get fresh clams. For garlic lovers only, keep your windows open! Cherry or grape tomatoes can be used instead of regular tomatoes.

12 garlic cloves
1 1/2 lbs mixed red and yellow tomatoes, quartered
1/4 cup green olives, of your choice halved and pitted
6 tablespoons olive oil, divided
1/4 teaspoon fine sea salt
1 teaspoon fresh coarse ground black pepper, divided
12 ounces dry linguine
1/2 teaspoon crushed red pepper flakes
3/4 teaspoon dried oregano
1/2 cup dry white wine
2 (10 ounce) cans baby clams, drained and liquid reserved

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • Smash and peel 6 garlic cloves (do not chop), peel and finely chop the remaining 6 and set aside.
  • Toss the smashed garlic with the tomatoes, olives, 2-3 tablespoons of olive oil, sea salt, and 1/4 teaspoon black pepper.
  • Spread the tomato mixture in one layer on one or two baking sheets, making sure it is not crowded (crowding will result in steaming, not roasting).
  • Roast tomato mixture, tossing occasionally, for 15 to 25 minutes (cherry/grape tomatoes should begin to burst).
  • Warm the remaining oil in a deep skillet, then add the reserved garlic and the red pepper flakes. Cook for 30 seconds. Add the wine, oregano, reserved clam liquid, and roasted tomatoes, garlic, and olives and simmer 10 minutes to meld ingredients and reduce sauce.
  • In a large pot of salted water cook the pasta until it is about 2 minutes from being done to taste. Drain.
  • Add the pasta and reserved black pepper to the sauce. Cook, tossing, until pasta is just cooked through. Add the reserved clams, toss well to just heat the clams, and serve, drizzing with a little more olive oil.

I got this recipe from all recipes, however I added my own personal touch and WOW, what a hit; everyone loves it and wants the recipe. Very important to use all fresh herbs.

1 (16 ounce) package dry linguine
1 onion, chopped
6 garlic cloves, minced
1 red bell pepper, chopped
1 jalapeno pepper
1 tablespoon of chopped fresh basil
1 tablespoon of chopped fresh parsley
1 tablespoon of chopped fresh oregano
4 tablespoons olive oil
4 (6 1/2 ounce) cans minced clams
1/2 cup butter
salt and pepper
2 tablespoons dry white wine

Steps:

  • In a large skillet, sauté the onion and garlic in olive oil until the onions are translucent. Add the butter, stir until melted. Add the peppers and herbs, simmer for about 5 minutes.
  • While the peppers and herbs are simmering start cooking the linguini according to the package.
  • Drain the cans of minced clams, reserving half of the juice.
  • Stir in the clams, reserved juice, salt and pepper, and wine into the large skillet with the peppers and herbs. Simmer the mixture for 25 minutes, until the sauce has reduced 1/3 and has thickened.
  • You want to spoon the clam sauce over the linguine as soon as the linguine is done and serve.

6 cloves garlic, minced
1/2 cup olive oil
1 (6 1/2 ounce) can minced clams, undrained
1/2 cup chablis or 1/2 cup other dry white wine
1 teaspoon dried basil
1 teaspoon dried thyme
salt, to taste
fresh coarse ground black pepper, to taste
1 (8 ounce) package linguine, cooked
1/2 cup chopped fresh parsley

Steps:

  • In a skillet, cook and stir the onion and garlic in hot olive oil.
  • Drain the clams and reserve 1/2 cup juice.
  • Add 1/2 cup clam juice and wine to the skillet.
  • Cook over medium-high for 10 minutes or until reduced by half.
  • Add in clams, basil, thyme, salt and pepper to taste; stir to combine.
  • Simmer for 5 minutes.
  • To serve: put cooked linguine on individual serving plates; top with clam sauce; sprinkle with parsley.

1/4 cup olive oil
4 -8 garlic cloves, crushed (to taste)
1/4-1/2 teaspoon red pepper flakes
1/2-1 teaspoon italian seasoning
2 (6 ounce) cans clams
1/2 cup hot pasta water
1 lb of your favorite pasta
parmesan cheese, to sprinkle on top
toasted pine nuts (optional)

Steps:

  • Start cooking pasta according to package instructions.
  • While pasta is cooking put olive oil, crushed garlic and red pepper in sauce pan and cook on med-low until garlic just starts to turn golden.
  • Then add the italian seasoning and cook 30 seconds more.
  • Add clams and their juice and 1/2 cup boiling pasta water from the pasta pot and simmer for 1 minute then take it off the heat.
  • Drain pasta and put it back it the pot you cooked it in and pour clam sauce over the top.
  • Put back on low heat and let simmer for a minute.
  • Plate up and sprinkle with parmesan cheese and pine nuts.
  • Great with parmesan roasted tomato slices and crusty french bread!

A very easy to make recipe that has a very nice clam taste. I developed this recipe many years ago and it has been enjoyed by all that have tried it.

1 tablespoon extra virgin olive oil
4 cloves garlic, finely chopped
12 fluid ounces canned baby clams, include liquid
1/8 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1 tablespoon lemon juice, freshly squeezed
3 tablespoons finely chopped fresh parsley
8 ounces linguine, dry
4 tablespoons grated parmigiano-reggiano cheese

Steps:

  • In a large frying pan over medium heat, heat olive oil.
  • Add chopped garlic and saute gently until just golden, about 1 to 2 minutes: DO NOT BROWN.
  • Add clams including liquid, cayenne, oregano and lemon juice and simmer for 2 to 3 minutes.
  • Add chopped parsley and continue to simmer for 1 minute longer.
  • Cook linguine according to package directions.
  • Drain and transfer cooked linguine to a large serving bowl.
  • Pour prepared sauce over pasta and toss to coat.
  • Sprinkle with grated parmesan cheese and toss lightly.
  • Serve immediately.

1 small onion (chopped very thinly)
1 garlic clove (chopped very thinly)
250 ml cream
125 ml white wine (chardonnay, good quality)
1 sachet saffron thread
1 tablespoon clarified butter
salt and pepper

Steps:

  • Melt clarified butter in a pan and add the onion.
  • When onion turns translucent add garlic and stir.
  • Add white wine and let simmer.
  • Keep one TB cream back, add the rest to the pan. Let reduce sauce until desired consistency is reached.
  • Dissolve the saffron threads in the remaining TB of cream and add to the sauce.
  • Salt and pepper to taste.
  • Serve.
