1-1/4 cups all-purpose flour, divided
2 tablespoons plus 1 cup sugar, divided
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 large egg
1/4 cup fat-free milk
2 tablespoons canola oil
1/8 teaspoon salt
2 cups fresh or frozen raspberries, thawed
2 cups fresh or frozen blueberries, thawed
Low-fat vanilla frozen yogurt, optional

Steps:

  • Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In another bowl, whisk together egg, milk and oil; add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a 5-qt. slow cooker coated with cooking spray., Mix salt and the remaining flour and sugar; toss with berries. Spoon over batter. Cook, covered, on high until berry mixture is bubbly, 1-3/4 to 2 hours. If desired, serve with frozen yogurt.

1/2 cup Butter
1 Cup Milk
1 Cup Sugar
1 Cup Flour
2 teaspoons Baking Powder
1 teaspoon Cinnamon
30 oz Peaches in Heavy Syrup ((2-15 oz cans))

Steps:

  • Melt butter and place in the bottom of your 6 quart slow cooker
  • In a mixing bowl combine the remaining ingredients except the peaches
  • Pour batter into the slow cooker
  • Spoon peaches and syrup on top of the batter-- do not mix.
  • Set slow cooker on high and cook for 1½ - 2 hours OR until top of cobbler is set.
  • Note: You may want to put a paper towel under the lid while baking to catch condensation.

7 cups peeled and sliced fresh peaches (about 8 medium peaches)
2 tablespoons orange juice
2 tablespoons cornstarch
½ teaspoon ground cinnamon

1 cup whole-wheat pastry flour
2 teaspoons baking powder
½ teaspoon salt
¼ cup cold unsalted butter, cubed
⅓ cup whole milk

Steps:

  • Lightly grease a 6-quart slow cooker. Combine peaches, orange juice, cornstarch, cinnamon, ginger, nutmeg and 1/4 cup brown sugar in a large bowl. Transfer to the prepared slow cooker.
  • Whisk flour, baking powder, salt and the remaining 1/2 cup brown sugar in a medium bowl. Cut cold butter into the flour mixture with a pastry cutter (or 2 knives or your fingers) until the mixture resembles coarse meal. Add milk and stir to combine.
  • Dollop large spoonfuls of the batter evenly over the peach mixture. Sprinkle the batter evenly with granulated sugar. Place several layers of paper towels over the slow cooker, allowing 1 to 2 inches to hang over the sides. Place the lid on the slow cooker, securing the paper towels in place. (They will help absorb moisture as the cobbler cooks.) Cook on High until the peaches are tender and syrupy and the topping is caramelized around the edges and cooked through, 2 to 3 hours. Turn off the slow cooker and remove the lid and paper towels. Let cool for 15 minutes before serving. Serve warm.
