1 lb peeled louisiana crawfish tails or shrimp or crab meat
1 large loaf french bread
1/2 stick butter
1/2 c onions, finely diced
1/4 c red bell pepper, finely diced
1 bunch green onions, thinly sliced
1 Tbsp garlic, minced
1/2 - 1 tsp cajun seasoning (tony chachere's)
1/3 c mozzarella or colby jack cheese,shredded
1/3 c cheddar cheese, shredded

Steps:

  • 1. Slice French bread in half lengthwise and scoop out the inside of the loaf. Set aside.
  • 2. In a large skillet, melt butter over medium-high heat. Sauté onions, bell peppers, green onions, and garlic until tender and translucent.
  • 3. Blend in cajun seasoning, add cheeses and crawfish / shrimp / crab meat and blend until melted. Taste and adjust seasoning as needed.
  • 4. Spread crawfish mixture inside the bread then put halves back together.
  • 5. Wrap it in foil and bake at 350°F for 20-30 minutes.
  • 6. Let the bread sit for 10-15 minutes then unwrap and cut the stuffed bread into 2 " slices and serve hot.
  • 7. *Notes: An equal amount of (71-80, 81-90 count) shrimp works great in this recipe, too. *Tip: to make individual breads use pastry dough and cut into circles. Stuff half of the dough with filling and fold over to make a half-circle. Seal edges well. Bake bread according to pastry dough directions or deep fry until golden.

1 lb peeled, cleaned and deveined crawfish tail meat
1/2 stick butter
1 clove minced garlic
3/4 cup ripe, chopped and drained tomatoes
1 tablespoon Cajun seasoning
3/4 cup Monterey Jack cheese
1/4 cup grated Parmesan cheese
1/2 cup mayonnaise
3 tablespoons chopped fresh parsley
1 loaf French bread

Steps:

  • Preheat the oven to 350 °F.
  • Rinse the crawfish. In a large skillet, melt the butter over medium heat. Add the garlic and cook for a few minutes. Add the tomatoes, Cajun seasoning and crawfish. Sauté for 1 minute. Remove from the heat.
  • In a bowl, mix together the cheeses, mayonnaise and parsley. Add the tomato and crawfish mixture to the mayo mixture.
  • Cut the loaf of bread in half and then cut the bread lengthwise. Spoon the mixture on the bread and bake for 10 to 15 minutes. Then broil for an additional 3 to 5 minutes. Watch closely, as not to burn. Cut the bread into individual portions.

1 (12-ounce) loaf French bread, halved lengthwise
½ cup mayonnaise
2 tablespoons butter
¾ cup finely chopped sweet onion
3 cloves garlic, minced
1 pound cooked crawfish tails
¾ cup chopped green onion
1 tablespoon chopped fresh parsley
1 teaspoon Cajun seasoning*
1 (8-ounce) package cream cheese, softened
½ cup grated Parmesan cheese
¾ cup shredded Monterey Jack cheese with peppers
½ teaspoon sweet paprika
Garnish: parsley

Steps:

  • Preheat oven to 375°. Place bread halves, cut side up, on a baking sheet. Divide mayonnaise between bread halves, spreading evenly. Set aside. In a large skillet, melt butter over medium heat. Add sweet onion, and cook until softened, 5 minutes. Add garlic, and cook until fragrant, about 2 minutes. Add crawfish, green onion, and parsley, stirring to combine. Cook until crawfish is heated through, about 5 minutes. Add Cajun seasoning and cream cheese. Remove from heat, and stir until cheese is incorporated. Divide mixture between bread halves, spreading evenly to cover. Top each half with cheeses and paprika. Bake until cheese has melted, about 15 minutes. Increase oven temperature to broil. Broil 6 inches from heat until cheese has browned, about 2 minutes. Top with parsley, if desired. Serve warm.

1 loaf French bread, sliced lengthwise
1 (16 ounce) package frozen crayfish tails
1/4 teaspoon cayenne pepper
2 tablespoons butter
1 (16 ounce) jar alfredo sauce
1 (16 ounce) package frozen chopped spinach
1 (8 ounce) jar marinated artichokes
1 (3 ounce) package cream cheese
3 cups shredded monterey jack cheese
snipped fresh parsley

Steps:

  • Saute crawfish tails in butter until heated through. Add cayenne and saute a minute more. Set aside and cool.
  • Thaw spinach and cool as directed, thoroughly squeeze excess water out. Drain and chop artichokes. Mix spinach, artichokes, cream cheese and 1 cup of cheese until well blended. Microwave untilsmooth and creamy.
  • Spread bread with alfredo sauce, then generously layer spinach dip,crawfish tails, and rest of cheese on bread.
  • Bake at 350 until bread is crispy and cheese is bubbly. May need to broil the last 5 minutes to reach brownness. Sprinkle with parsley for garnish.

1/4 pound crawfish tails, cooked
1/2 cup grated cheddar
2 tablespoon cooked, crumbled andouille sausage
1 tablespoon chopped green onion
1 teaspoon Creole spice (Essence), recipe follows
2 tablespoon butter
2 3/4-inch thick slices white bread
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat griddle to medium-high. Combine crawfish, cheese, sausage, green onion and Creole spice. Butter bread. Heap filling on unbuttered side of one bread slice, then spread it out evenly to corners. Cover with second bread slice, buttered-side up. Cook on griddle until first side is golden brown. Flip and cook until second side is golden brown and sandwich is hot all the way through. Remove and slice it up.
  • Combine all ingredients thoroughly.

2 Tbsp unsalted butter
1 Tbsp olive oil
½ cup white onion (finely diced)
2 stalks celery (finely diced)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 Tbsp minced garlic
¼ cup white wine
1 tsp Cajun seasoning
16 oz. crawfish tails (see note)
8 oz. cream cheese (cut into small cubes)
¼ cup chopped green onions
4 oz. pepperjack cheese (shredded)
1 large loaf soft French bread (halved lengthwise)
chopped Italian parsley

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • Using a large skillet, add butter and olive oil; place over medium-high heat.
  • Once hot, add onion, celery and bell peppers; stir until well combined. Sauté, stirring occasionally, for 5-6 minutes, or until bell peppers have softened slightly.
  • Add garlic; stir and continue sautéing for 1-2 minutes, stirring often.
  • Add wine, Cajun seasoning, crawfish tails and cream cheese; stir until well combined. Continue sautéing, stirring occasionally, until cream cheese has fully melted and most of the liquid has evaporated. Remove from heat and set aside to cool.
  • Once cooled, add green onions and pepperjack cheese; stir until well combined.
  • Preheat oven to 350°F.
  • Spread mixture evenly on top of two halves of French bread.
  • Bake for 12-15 minutes, or until cheese has melted.
  • Switch oven to broil and broil for 2-3 minutes, or until top of mixture has browned slightly.
  • Remove from oven and top with chopped parsley.
  • Slice and serve warm.

2 tablespoons unsalted butter
½ cup finely chopped onion
½ cup finely chopped celery
½ cup finely chopped green bell pepper
1 ½ tablespoons minced garlic
1 pound cooked Louisiana crawfish tails (with any fat)
1 teaspoon Worcestershire sauce
½ teaspoon Tiger Sauce® or other hot sauce
½ teaspoon salt
¼ teaspoon cayenne pepper
¼ cup chopped green onions
½ cup Blue Plate® Mayonnaise
1 teaspoon Creole mustard (or other whole-grain spicy mustard)
8 ounces grated provolone or mozzarella cheese
2 (15-inch) loaves of poboy bread (soft French bread)

Steps:

  • MELT butter over medium heat in large skillet; when hot, add onion, celery, and bell pepper. COOK, stirring occasionally, until vegetables have wilted, about 5 minutes. Add garlic; cook and stir for 2 minutes. ADD crawfish tails, Worcestershire, Tiger Sauce® and salt; cook and stir until crawfish have warmed through and released any liquid and the liquid has evaporated, about 3 minutes. Stir in green onions, then set crawfish mixture aside to cool. PREHEAT oven to 350°F. STIR mayonnaise, Creole mustard and cheese into cooled crawfish mixture until well combined. Taste and adjust seasoning if necessary. CUT both loaves of bread nearly in half lengthwise and divide crawfish mixture evenly on bottom portion of each loaf. FOLD top portion of bread back over crawfish filling, then wrap each loaf tightly in aluminum foil. Place on a baking sheet and bake until filling is heated through and cheese is melted, 25 to 30 minutes. SLICE loaves into desired portions and serve hot.

1 (11-ounce) roll refrigerated French bread dough
½ pound shredded pizza cheese mix or mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees. Grease a baking sheet. In a large skillet, melt the butter with the olive oil over medium heat. Sauté the green onions, celery, bell pepper and garlic until wilted. Add the wine and the crawfish tails with their fat. Stir well and add the cream cheese. Stir until melted. Add the Creole seasoning and cook until the mixture is thickened, just a few minutes. Remove from the heat and let the flavors blend. Carefully roll out French bread dough to a thickness of ½ inch on the baking sheet. Spoon the crawfish mixture down the center of the dough, and sprinkle with the shredded cheese. Fold the dough over the mixture to make a loaf. Cut 2 small slits in the top of the dough. Place in oven and bake for about 20 minutes, or until the loaf is golden brown. Remove from oven and let sit for a few minutes before slicing into serving-size pieces.
