These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

2 pounds sweet potatoes, peeled
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat the oven to 400.
  • Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil.
  • Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
  • Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. Serve hot.

California Burgers with Sweet Potato Fries image

1 15-ounce bag frozen sweet potato fries
1 pound ground beef
2 scallions, minced
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 small head iceberg lettuce, leaves torn or cut into burger-size pieces
1/2 cup roasted red pepper hummus
1/4 seedless cucumber, thinly sliced
2 precooked beets, thinly sliced
2 or 3 radishes, thinly sliced
1/2 avocado, thinly sliced
3/4 cup sprouts

Steps:

  • Bake the sweet potato fries as the label directs. Meanwhile, combine the beef, scallions, 3/4 teaspoon salt and a few grinds of pepper in a large bowl; mix well. Form the mixture into 4 equal patties, 3 1/2 to 4 inches wide. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the patties and cook until browned, about 3 minutes. Flip and cook to medium doneness, another 2 minutes.
  • Divide the lettuce leaves among plates, layering a few leaves to create 2 "buns" per plate. Put a burger on one of the lettuce buns on each plate. Top each with 2 tablespoons hummus, slices of the cucumber, beets, radishes and avocado and some sprouts. Serve with the sweet potato fries.
