CRANBERRY ORANGE BARS
Packed with tart cranberries and crunchy almonds, these easy Cranberry Orange Bars are the perfect light dessert to serve after a holiday meal.

Steps:
- Preheat the oven to 350°F. Generously butter an 8-inch square baking pan and set aside.
- Whisk the eggs, orange juice, and melted butter together in a small bowl and set aside.
- Sift the flour, baking powder, salt, and sugar into a large mixing bowl and combine.
- Stir in the cranberries, orange zest, and almonds.
- Add the egg and butter mixture and combine just until incorporated. Do not overmix.
- Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then turn onto a cooling rack to cool completely before cutting into 2-inch square bars.
- Store up to 2 days, covered, at room temperature, or refrigerate in a tightly sealed container for up to 1 week.

CRANBERRY STREUSEL BARS
Steps:
- Preheat the oven to 300°F. Line the bottom and sides of an 8-inch baking pan with parchment paper, leaving enough overhang on all sides. Set aside.For the crust:Combine the melted butter, sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.For the filling: Combine the cranberries, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the cranberries are evenly coated. For the streusel: Combine the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender until the mixture resembles coarse crumbs. Remove the crust from the oven, increase heat to 350°F. Pour the cranberry mixture on top of the warm crust. Sprinkle the cranberry layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
CRANBERRY BARS
If you're from Wisconsin you have to love cranberries. This is one of my favorite bar recipes and it mixes up very fast and is sooo good.

Steps:
- This is good with a powder sugar glaze or lightly sifted powder sprinkled on top.
- Beat together eggs, butter, sugar and vanilla.
- Add flour and baking powder and mix well.
- Fold in nuts and cranberries.
- Mixture will be cookie-consistency. Spread into prepared 8x8 pan. (If using 9x12, you will need 1.5 times the recipe.).
- Bake@ 350 degrees 40-45 minutes (but start checking after 35).

- In a large bowl, combine the flour, brown sugar, baking soda and ginger; cut in butter until mixture resembles coarse crumbs. Stir in the oats, coconut and orange zest., Place 3 cups of mixture in another bowl; stir in pecans. Set aside for topping. Press remaining oat mixture into a greased 15x10-in. baking pan. Bake at 350° for 10-12 minutes or until golden brown., Combine cranberry sauce and orange marmalade; spread over crust. Top with reserved oat mixture. Bake for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

CRANBERRY ORANGE BARS
This is an old family favorite. Makes great snacks or can be served as dessert. Be sure to remove the seeds if present from the oranges.

- Grind cranberries and oranges, including peel; set aside.
- In a saucepan, combine sugar, cornstarch, ginger.add ground fruit -- bring to a boil.
- Reduce heat, cook and stir for 15 minutes or until thick.
- Remove from the heat; stir in nuts, if using.
- Set aside to cool.
- Meanwhile for crust:.
- Combine flour, sugar and lemon peel in large bowl.
- Cut in butter until coarse crumbs form.
- Add egg yolks, vanilla and just enough water so dough holds it shape.
- Pat two thirds of dough into 13x9 pan --
- Cover with cranberry orange mixture.
- Crumble remaining dough on top.
- Bake at 425°F for 20-25 minutes or until topping is golden brown.
- Cool and cut into bars.
CRANBERRY ORANGE STREUSEL BARS

- Let cranberries stand at room temp 1 hour.
- Place 1 rack in middle of oven and preheat to 350.
- Line 9x13 baking pan with foil, leaving overhand on all sides and generously grease foil.
- Combine flour, oats, sugar, nutmeg, baking powder and salt in a bowl.
- Work butter in with your fingers until creamy. Reserve 1 cup.
- Press into prepared pan. Bake until light golden brown, about 12 minutes.
- Grate 1 teaspoon orange peal and squeeze 1/3 cup juice from orange. In medium bowl, whisk with milk, egg yolks, vanilla until well combined.
- Sprinkle cranberries evenly over the hot crust. Pour mixture over berries. Use spatula to gently distribute evenly. Bake 7 minutes or until orange mixture just begins to form a skin around the edges.
- Remove pan from oven and sprinkle evenly with reserved topping, then almonds. Bake 30 minutes or until filling bubbles and topping is golden brown.
- Cool in pan on wire rack 1 hour.
- Carefully lift out of pan. Cool completely on wire rack.
- Remove foil and cut into 24 bars.
- Serve or store in airtight container up to 3 days or freezer up to 3 months.
CRANBERRY AND ORANGE STREUSEL CAKE
I found this recipe in a magazine and it hung about on my desk for ages, until I eventually got around to making it. Sweet, but not too sweet, it has become a firm favorite in this house.

- Preheat oven to 350 degrees F.
- Grease a 9 inch square pan.
- Make the struesel topping by combining the brown sugar, flour, nuts and butter together with a fork until crumbly. Set aside.
- Stir together the flour, sugar, baking powder, baking soda and salt in a large bowl.
- Add the melted butter, orange juice, boiling water and egg. Stir with a wooden spoon until combined.
- Fold in the cranberries.
- Pour into the prepared pan.
- Sprinkle struesel over the cake batter.
- Bake for about 45 minutes or until a cake tester inserted into the cake comes out clean.
- The cake may be frozen and reheated at 350 degrees F for 10 minutes.
