1 pkg. (12 oz.) cranberries
1/2 cup sugar
1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Cranberry Flavor Gelatin, or any red flavor
1/2 tsp. ground cinnamon
1-1/2 cups cold water
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Process cranberries in food processor until finely chopped; spoon into medium bowl. Add sugar; mix well.
  • Add boiling water to combined dry gelatin mix and cinnamon in large bowl; stir 2 min. until gelatin is completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until thickened.
  • Stir oranges and cranberry mixture into gelatin mixture. Spoon into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold just before serving.

1 tablespoon finely chopped crystallized ginger, if desired
1 bag (12 oz) fresh or frozen cranberries (3 cups)
1 unpeeled orange

Steps:

  • Place sugar and ginger in medium bowl.
  • Wash and dry cranberries; remove any stems or blemished berries.
  • Wash and dry orange; cut into 1-inch pieces (with peel) and remove seeds.
  • In food processor, place half of the cranberries and orange pieces. Cover and process, using short on-and-off motions, about 15 seconds or until evenly chopped. Stir cranberry mixture into sugar mixture. Repeat with remaining cranberries and orange pieces.
  • Cover and refrigerate at least 24 hours to blend flavors but no longer than 1 week.

1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

1-1/2 cups fresh cranberries
2 green onions, minced
1 seeded jalapeno pepper, minced
1/3 cup sugar
3 tablespoons minced fresh mint
2 tablespoons lime juice
1 tablespoon orange juice
1/4 teaspoon ground ginger
2 pork tenderloins (3/4 pound each)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • To make relish, pulse cranberries in food processor until finely chopped. Combine with next seven ingredients. Reserve 1/2 cup relish for grilling; cover and refrigerate the rest., Brush tenderloins with olive oil; sprinkle with salt and pepper. Grill, covered, over direct heat 12-15 minutes, turning occasionally and spooning with reserved relish, until thermometer reads 145°. Let stand 10-15 minutes. Discard used relish. Slice meat; serve with refrigerated relish.

1/4 cup loosely packed dark brown sugar
1/4 cup maple syrup
3/4 cup water
1 tablespoon ground cinnamon
1 teaspoon freshly grated nutmeg
1 pound fresh or frozen cranberries, cleaned
4 navel oranges, peeled and divided into segments
1/2 cup coarsely chopped walnut pieces

Steps:

  • Bring the sugars, syrup, water, cinnamon and nutmeg to a boil. Reduce to a simmer and cook gently 5 minutes. Add the cranberries and continue to simmer, uncovered, until half the berries "pop". Remove from the heat and stir in the orange segments. Cool, stir in the walnut pieces and serve.

Working over a medium bowl, cut between membranes to release orange segments. Coarsely chop segments; add to cranberries. Stir 3/4 cup sugar, 1/2 cup minced red onion, 1/4 cup chopped fresh mint, 1 tablespoon minced peeled ginger, and reserved zest into cranberry mixture.
