Cinnamon Spritz image

With lots of cinnamon flavor, these rich buttery cookies are similar to a classic Snickerdoodle. The dough is so easy to work with.

1 cup butter, softened
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons ground cinnamon
1/4 teaspoon salt
Semisweet chocolate chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk and vanilla. Combine the flour, cinnamon and salt; gradually add to creamed mixture and mix well., Using a cookie press fitted with the disk of your choice, press dough 2 in. apart onto ungreased baking sheets. Press chocolate chips into cookies as desired. Bake at 375° for 8-10 minutes or until set. Remove to wire racks. Store in an airtight container.

8 ounces Aperol
4 ounces cranberry juice, chilled
1/2 cup lemon juice plus 4 lemon twists
2 teaspoons red wine vinegar
12 to 16 ounces sparkling wine, chilled

Steps:

  • Combine the Aperol, cranberry juice, lemon juice and vinegar in a large pitcher. Stir in the sparkling wine. Fill 4 large wine glasses with ice and pour the drink over. Serve each with a twist.

Partially freezing fruit juice gives it a refreshingly slushy texture.

2 1/2 cup(s) chilled cranberry juice
2/3 cup(s) clear apple juice
4 - cinnamon sticks
1 2/3 cup(s) chilled ginger ale

Steps:

  • Pour the cranberry juice into a shallow freezerproof container and freeze for about 2 hours or until a thick layer of ice crystal has formed around the edges.
  • Mash the semi-frozen juice with a fork to break up the ice, then return the mixture to the freezer for a further 2-3 hours or until it is almost solid.
  • Pour the apple juice into a small pan, add two cinnamon sticks and bring to just below boiling point. Pour into a jug(pitcher) and leave to cool, then remove the cinnamon sticks and set them aside. Cool then chill the juice.
  • Spoon the cranberry juice into a food processor or blender. Add the cinnamon-flavored apple juice and process briefly until slushy. Pile the mixture into cocktail glasses, top up with chilled ginger ale, decorate with cinnamon sticks and serve immediately.
