3 tablespoons butter, softened
1 cup sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1 cup milk
2 cups cranberries
2 tablespoons grated orange or lemon peel
CREAM SAUCE:
1-1/3 cups sugar
1 cup heavy whipping cream
2/3 cup butter

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and nutmeg; add to the creamed mixture alternately with milk, beating well after each addition. Stir in cranberries and orange peel., Pour into a greased 11x7-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, in a small saucepan, combine sauce ingredients. Cook and stir over medium heat until heated through. Cut warm cake into squares; serve with cream sauce.

1 tablespoon baking soda
1 teaspoon salt
1 cup white sugar
3 tablespoons butter, melted
2 eggs, beaten
1 cup milk
3 cups fresh cranberries

½ cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, baking soda, and salt in a bowl. Beat 1 cup sugar and 3 tablespoons melted butter with a whisk until well mixed. Add eggs and beat until smooth. Stir flour mixture and milk into egg mixture until batter is well blended. Fold cranberries into batter until just mixed and pour into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.
  • For sauce, heat 1 cup sugar, 1/2 cup butter, heavy cream, and vanilla extract in a saucepan over medium-low heat; cook and stir cream sauce until sugar is dissolved, about 10 minutes. Pour hot sauce over hot cake. Allow cake to cool in the baking dish for 10 minutes before removing to cool completely on a wire rack.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. 1 teaspoon vanilla
2 cups all-purpose flour * (see note below for gluten-free alternative)
12 oz fresh cranberries

Steps:

  • Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl.
  • Add the butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.
  • Spread in a buttered 9x13 pan. (This pan is my favorite!) Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine for 43 minutes.)
  • Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party. Enjoy!

200g butter , softened, plus a little extra for greasing
100g raisin
200g pot glacé cherry , halved
100g dried cranberries
200g fresh or frozen cranberry
zest and juice 1 orange
50ml sherry , brandy, Disaronno or Frangelico
250g light soft brown sugar
1 tsp vanilla extract
4 large eggs
200g self-raising flour
100g ground almond
100g toasted hazelnut , chopped
1 tbsp mixed spice

Steps:

  • Heat oven to 160C/140C fan/gas 3. grease a deep 20cm cake tin and line with baking parchment - high enough to come 2.5cm above the top of the tin. Put the raisins, cherries, all the cranberries, orange zest and juice, and alcohol into a small pan. Bring to the boil and leave to simmer for 3 mins, until the cranberries have softened a little and most of the liquid has evaporated. Set aside to cool.
  • Put the sugar, butter and vanilla in a bowl and beat with an electric mixer until pale and fluffy. Add the eggs, flour, almonds, hazelnuts and mixed spice. Whisk again until just combined, then stir through the soaked fruit and any remaining juices. Tip the cake mixture into the tin and level the top, then bake for 1 hr 20 mins, until a skewer pushed into the centre of the cake comes out clean. If the skewer has any uncooked cake mixture on it, return it to the oven for 10 mins, then check again. Leave in the tin to cool. Will freeze for 4 months wrapped in cling film then foil.

2 tbsp (30mL) maple syrup

1 ¾ c (210g) whole wheat pastry flour (measured correctly)
1 ½ tsp (5) baking powder
½ tsp (2g) baking soda
1 tsp (3g) ground cinnamon
¼ tsp (2g) salt
1 tbsp (14g) unsalted butter, melted
1 large egg, room temperature
1 tbsp (15mL) vanilla extract
½ c (125g) plain nonfat Greek yogurt
1/3 c (80mL) maple syrup
6 tbsp (90mL) nonfat milk
1 ½ c (160g) fresh whole cranberries

Steps:

  • Preheat the oven to 350°F, and lightly coat an 8"-square pan with nonstick cooking spray.
  • To prepare the topping, stir together the flour and cinnamon. Thoroughly mix in the butter and maple syrup. Set aside.
  • To prepare the cake, whisk together the flour, baking powder, baking soda, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, and vanilla. Mix in the yogurt, stirring until no large lumps remain. Stir in the maple syrup. Alternate between adding the flour mixture and the milk to the egg mixture, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.) Fold in the cranberries.
  • Spread the batter into the prepared pan, and sprinkle the crumb topping over the batter. (The crumb topping tends to clump, so try to break it up into small chocolate chip-sized pieces.) Bake at 350°F for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for at least 10 minutes before slicing and serving.

Steps:

  • Prep an 9 x13 pan with non-stick baking spray.

Brandy spiked dried apricots, cranberries, and sultanas take centre stage in this full-flavoured cranberry Christmas cake recipe.

250g (8oz) butter, softened
250g (8oz) light soft brown sugar or light muscovado sugar
4 large eggs
300g (10oz) plain flour
1 level tbsp ground mixed spice
250g packet dried apricots, chopped
2 x 170g packets dried cranberries, eg, Craisins
500g (1lb) sultanas
6tbsp brandy
20cm (8in) round, or 18cm (7in) square, cake tin, lined with baking parchment

Steps:

  • To ensure that the cake will be central in the oven, position a shelf just below the centre. Set the oven to gas mark 2 or 150°C.
  • In a bowl, cream together the butter and sugar until the mixture is light and fluffy, then beat in the eggs, one at a time, adding a little flour with each egg. Beat the mixture well before adding the next egg. Sift the remaining flour, add to the bowl with the ground mixed spice and beat well again.
  • Tip the chopped apricots, dried cranberries and sultanas, into the bowl and then fold the ingredients together.
  • Spoon the mixture into the lined tin and level the surface. Smooth over the surface with a wet hand.
  • Place the cake in the centre of the oven and bake for 3-3½ hrs, or until the cake feels firm to the touch in the centre, and a skewer comes out clean after being inserted into the cake.
  • Remove cake from the oven, place the tin on a wire rack and leave it to cool for about 15 mins. Spoon the brandy over the cake and then leave it to cool completely in the tin.
  • The cake can be stored for up to six months, wrapped in baking parchment and then in foil. Keep in a cool, dry place.

1/2 cup brandy

  • Preheat oven to 325 degrees F, & grease a 9-inch tube baking pan with removable bottom.
  • In a bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder & 1 teaspoon salt, & set aside.
  • In a larger covered container, shake together 2 cups walnuts, 1 1/2 cups raisins, 1 cup cranberries & 1 tablespoon flour to coat, then set aside.
  • In a large mixing bowl, beat sugar & butter on low speed until blended, then beat on high speed 2 minutes.
  • On low speed, beat in eggs, brandy vanilla & the flour & baking powder & salt mixture, until well blended.
  • Stir in walnut/raisin/cranberry micture, then spoon batter into prepared pan.
  • Top with 3/4 cup walnut halves, & bake about 75 minutes or until a wooden pick inserted in center comes out clean.
  • Remove from oven & cool in pan for 10 minutes.
  • Run a small metal spatula around cake to loosen from side of pan, then invert cake onto wire rack.
  • Cool completely, then melt apple jelly & brush over cake. Refrigerate.

We eat this colorful, moist cake at our women's church meetings. It's really easy to make and very tasty. The almond flavoring really blends well with the cranberries. I buy bags of cranberries when there are sales during the holidays, then freeze some so I can enjoy this treat all year round. For those with hard nut allergies, leave them out, or try sunflower seeds or peanuts. Vanilla extract can be substituted for almond extract.
