CRANBERRY-CHOCOLATE CHUNK COOKIES

There must have been some magic baking up in the Betty Crocker Kitchens when this recipe was developed, because this deceptively simple cookie is about to steal the show (and your heart). Perfect for bake sales, book clubs, Christmas cookie exchanges and anything in between, this genius recipe will disappear in almost the same short amount of time it takes to make them-maybe even faster. To keep it simple, we started with Betty Crocker's sugar cookie mix, added a few heaps of dark chocolate chunks, tossed in dried cranberries and for a dazzling finish we sprinkled these confections with coarse sparkling sugar. We could have picked a different dried fruit, but the sweet-tart cranberries balance out the rich dark chocolate so perfectly that we'd say this combination is a match made in flavor heaven. Plus, with just 20 minutes of prep, you can make this always-impressive cookie in almost no time flat!

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
1 bag (6 oz) 70% cacao bittersweet chocolate chunks (about 1 1/4 cups)
3/4 cup dried cranberries
2 teaspoons coarse sparkling white sugar

Steps:

  • Heat oven to 375°F.
  • Make dough as directed on pouch for drop cookies. Stir in chocolate chunks and cranberries. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. Sprinkle sugar on tops.
  • Bake 10 to 12 minutes or until edges are set. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes. Store in airtight container.

2/3 cup dried cranberries
2/3 cup cashews

Steps:

  • In a heavy saucepan or microwave, melt the chocolate chips; stir until smooth. Stir in the cranberries and cashews. Drop by teaspoonfuls onto a waxed paper-lined baking sheet. Let stand until set. Store in an airtight container.

3/4 cup coarsely crushed pretzels
1/4 cup raisins
2 tablespoons pine nuts, toasted
1-1/3 cups semisweet chocolate chips
1/2 teaspoon instant coffee granules
1/4 teaspoon ground cinnamon
1/4 cup sour cream
Coarse sea salt

Steps:

  • Place pretzels, raisins and pine nuts in a bowl. In a microwave, melt chocolate chips; stir until smooth. Stir in coffee granules, cinnamon and sour cream. To rewarm, microwave in additional 5- to 10-second intervals. Add to pretzel mixture; toss until combined., Drop mixture by heaping tablespoonfuls onto a waxed paper-lined baking sheet. Sprinkle with salt., Refrigerate until set, about 10 minutes. Store in an airtight container in the refrigerator.

8 oz good quality dark chocolate chips (although I've used Nestles semi-sweet chocolate chips and they are still very good)
1 c coarsely chopped walnuts, pecans or almonds (make sure the pieces are not too small)
1/2 c dried cranberries (Craisins) or you can use raisins

Steps:

  • 1. Line a small baking sheet with waxed paper.
  • 2. Place chocolate chips in a 2 cup Pyrex measuring cup and microwave on 50% power for approx 25 seconds - then stir well. Continue doing this until the chocolate chips are almost completely melted - reducing the time as you go. Be careful to not let the chocolate burn.
  • 3. Add the nuts and dried cranberries to the melted chocolate and mix well.
  • 4. Drop tablespoon fulls of the chocolate mixture onto the waxed paper-covered cookie sheet.
  • 5. Place in the fridge for at least 15 minutes. Enjoy.
  • 6. I like to store mine in the freezer.

1 cup sugar
1/2 cup water plus 2 tablespoons
1 1/4 cups fresh cranberries
1 1/4 cups chopped best-quality white chocolate

Steps:

  • Combine the sugar and 1/2 cup of water in a saucepan over medium heat. Stir until the sugar is dissolved. Increase the heat to high and, without stirring, cook until the syrup is golden amber or until a candy thermometer reads between 250 to 265 degrees F (hard-ball stage), about 10 minutes (see Cook's Note*). Promptly remove the saucepan from the heat.
  • Working quickly, drop 3 cranberries into the caramel. Use 2 forks to coat the cranberries completely in the syrup and pull together into a cluster. Place the cranberry cluster on a waxed paper lined baking tray. Repeat with the remaining cranberries. Reheat the syrup briefly over low heat if it starts to thicken. Let the clusters cool to harden.
  • Melt the white chocolate in a stainless-steel bowl over barely simmering water. Stir constantly with a rubber spatula until the white chocolate is almost completely melted. Be careful that no moisture gets into the chocolate, or it will harden. Remove the bowl from the heat and allow the white chocolate to cool slightly.
  • Dip the bottom of the cranberry cluster into the white chocolate and place on a parchment paper lined baking sheet to set for approximately 20 minutes. Place clusters in paper candy cups and store in an airtight container.

Tasty, not dry scones, fast to make, but a bit messy. You could replace the cranberries and chocolate chips with about anything else that you can think of, but this is my favorite combo.

3 cups flour
1/3 cup sugar
1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup reduced fat margarine
1 cup buttermilk
3/4 cup fresh cranberries
1/2 cup chocolate chips
1 teaspoon cinnamon
2 tablespoons cream
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Mix flour, first sugar, baking soda and salt.
  • Stir in buttermilk and cut in reduced fat margarine.
  • Mix in cranberries, chocolate chips and first cinnamon.
  • Gather into a ball, press together and knead 12 times on floured board.
  • Divide in two pieces.
  • Grease a very large cookie sheet and push each piece into a large half inch thick circle on the cookie sheet, don't let them touch.
  • Cut each into 8 triangular pieces with a large kitchen knife, you will need to cut again after baking.
  • Mix cream, second sugar and cinnamon into a sort of paste, and paint over both circles of dough.
  • Bake about 20-25 minutes in a 400° preheated oven.
  • Let cool and cut again into 8 wedges each, following original cut marks.
