Ingredients

1 head romaine lettuce, torn
1 bunch fresh spinach, torn
1 cup dried cranberries
3 green onions, chopped
1/2 cup glazed almonds (instructions below)
3/4 cup fresh grated parmesan cheese
1/2 cup balsamic vinegar
1/2 cup olive oil
1/2 cup sugar
salt and pepper
2 tablespoons sugar
1/2 cup sliced almonds

Steps:

Combine dresssing ingredients in a jar with a lid and shake well.
Combine salad ingredients in a large bowl.
In a sauce pan or skillet combine sugar and almonds.
Stir constantly until nuts are glazed.
Be very careful not to burn.
Pour nuts on waxed paper separating them to cool.
Mix dressing with lettuce and top with almonds to serve.

Ingredients

3 Cups Leftover Turkey or Chicken, shredded
¾ Cup Celery, finely chopped
¼ Cup Red Onion, finely chopped
1/3 Cup Dried Cranberries
1/3 Cup Sliced Almonds
2 Tablespoons Fresh Parsley, finely chopped
¾ - 1 Cup Mayonnaise*
2 Teaspoons Whole Grain Mustard
2 Teaspoons Apple Cider Vinegar
Salt and Pepper, to taste
Sandwiched between 2 slices of toasted (or untoasted) bread
Wrapped up in a flour tortilla
Lettuce wraps
Crackers
Vegetables (Cucumber slices, carrot sticks, etc.)
On a bed of kale (or any other lettuce you like)

Steps:

Combine the turkey, celery, red onion, cranberries, almonds, and parsley in a large bowl. In a small bowl, whisk together the mayonnaise, mustard, and apple cider vinegar. Season well with salt and pepper and pour the dressing over the turkey mixture. Toss well. Chill for at least 20 minutes before serving.

1/2 pound (2 large) carrots, peeled and shaved with a vegetable peeler
12 ounces mixed greens
1/2 cup dried cranberries
1/2 cup Sweet and Spicy Almonds or toasted unblanched almonds
2 tablespoons plus 1 teaspoon white-wine vinegar
4 teaspoons Dijon mustard
4 teaspoons olive oil
Coarse salt and ground pepper

Steps:

In a large bowl, toss carrots, greens, and half the cranberries and almonds. In a small bowl, whisk vinegar, mustard, and oil.
Drizzle salad with vinaigrette; season with salt and pepper. Toss to combine. Garnish with remaining cranberries and almonds.
