2.5 cup all-purpose flour
2 tablespoon granulated sugar
1 tablespoon baking powder
0.5 teaspoon salt
0.333 cup butter
2 eggs, lightly beaten
0.75 cup whipping cream
0.25 cup chopped dried cranberries
0.25 cup finely chopped white chocolate (with cocoa butter) or miniature semisweet chocolate pieces
0.5 teaspoon finely shredded orange peel (optional)
Whipping cream or milk
1 Orange Drizzle
1 cup powdered sugar
1 tablespoon orange juice
0.25 teaspoon vanilla

Steps:

  • Preheat oven to 400°F. In a large bowl combine flour, granulated sugar, baking powder, and salt. Using a pastry blender, cut in butter by repeatedly pushing down through the butter until mixture resembles coarse crumbs (rotate the pastry blender and bowl to cut in uniformly). Use the back of a spoon to make a well in the center of the flour mixture; set aside.
  • In a medium bowl combine eggs, the 3/4 cup cream, the cranberries, chopped white chocolate, and, if desired, orange peel. Add egg mixture all at once to flour mixture. Using a fork, stir just until moistened.
  • Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing for 10 to 12 strokes or just until dough comes together (to ensure tender scones, be careful not to knead too much). Divide dough in half. Pat or lightly roll each half into a 6-inch circle. Cut each circle into six wedges.
  • Place wedges 2 inches apart on an ungreased baking sheet. Brush wedges with additional whipping cream. Bake for 12 to 14 minutes or until golden brown. Cool slightly on baking sheet. Drizzle with Orange Drizzle. Serve warm or at room temperature. Orange Drizzle
  • In a small bowl combine powdered sugar,1 tablespoon of the orange juice, and vanilla. Stir in additional orange juice, 1 teaspoon at a time, to reach a drizzling consistency.

1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons chilled unsalted butter, cut into pieces
6 tablespoons half-and-half
1 large egg, beaten
1/2 cup fresh or frozen cranberries or 1/2 cup dried cranberries (craisins)
1/2 cup white chocolate chips (or pieces)

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl by hand or using an electric mixer, blend together the flour, sugar, baking powder, salt, and butter.
  • Add the half and half, beaten egg, cranberries (I like the dried ones), and the white chocolate chips, and stir until the dough holds together.
  • Turn out onto a lightly floured board and knead for 2 minutes.
  • Form into a 1/2-inch thick round, then cut the round into 8 wedges (you can also make two smaller rounds of smaller wedges, if you like).
  • Spray a baking sheet with vegetable oil, then transfer the wedges to the sheet.
  • Bake the scones at 400 degrees F for 14 minutes or until golden brown.

1 teaspoon grated orange zest
1/2 teaspoon salt

1/4 cup cold butter
1 cup plain yogurt
1 large egg yolk
1/2 cup dried cranberries
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk yogurt and egg yolk; stir into crumb mixture just until moistened. Stir in cranberries and chocolate chips., Turn onto a floured surface; knead gently 10 times. Pat dough into an 8-in. circle. Cut into 12 wedges. Place wedges on a baking sheet coated with cooking spray. Bake 10-12 minutes or until golden brown. Serve warm. Freeze option: Freeze cooled scones in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each scone on high for 20-30 seconds or until heated through.

325 g plain (all purp) flour ((2 ½ cups / 11.4oz))
35 g icing (powdered / confectioners) sugar ((¼ cup / 1.2oz))
3 ½ teaspoons baking powder
¼ teaspoon salt
75 g unsalted butter, cold and grated ((3 oz / ¾ stick))
zest of half an orange
½ cup white chocolate chips ((90g / 3.2oz))
⅔ cup dried cranberries ((85g / 3oz))
1 cup cold milk (put aside 2 teaspoons) ((250ml))
1 egg yolk, from a large egg
130 g icing (powdered / confectioners) sugar ((1 cup / 4.6oz))
3 teaspoons milk

Steps:

  • Preheat oven to 200C / 400F / 180C fan forced. Line a large baking tray with baking paper.
  • In a large bowl, use a whisk to combine the flour, icing sugar, baking powder, salt and orange zest.
  • Add the cold grated butter and using either your fingertips, a knife or pastry cutter, gently blend the butter into the flour until only small pieces remain.
  • Reserve 2 teaspoons of milk, then use a spoon to stir the rest through the dry mixture, along with the chocolate chips and cranberries until you have a sticky dough.
  • Turn the dough out into a sheet of baking paper and gently pull together then flatten the dough into a disk about 1 inch high.
  • Use a sharp knife, dipped in flour, to cut the dough into 8 triangles. Transfer to the prepared baking tray.
  • Mix together the reserved milk and egg yolk, then brush over the tops of the triangles.
  • Bake for 16-18 minutes until golden on top. Allow to cool for 15 minutes.

2 c all purpose flour
1/4 c sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c butter, cold
1/2 c buttermilk
1 large egg
1/2 c white chocolate chips
1/2 c dried cranberries and/or blueberries
3 Tbsp sugar for sprinkling on tops

Steps:

  • 1. Combine flour, 1/4 cup sugar, baking powder, baking sode and salt in food processor. Mix well. Add butter cut into small chunks and pulse until mixed. Do not over mix or scones will be tough.
  • 2. Whisk together buttermilk and egg in a small bowl, slowly add mixture to processor and process until dough forms.
  • 3. Dump dough into large bowl, add cranberries and white chocolate chips, mix into dough.
  • 4. Turn dough onto floured surface, shape into a rectangle about 1/2 inch thick. Cut into wedge shapes. (cut into squares then cut squares in half). ** I like to use a small scoop to make smaller bite size scones, just drop by heaping tablespoon onto baking sheet if you do it this way.
  • 5. Place wedges on a parchment lined baking sheet and top with sugar. Bake for 14 to 16 minutes until golden on top. ** if you make the smaller scones, bake for 12 to 14 minutes until golden on top.
  • 6. Remove from oven, cool slightly and serve. You can also add a topping such as a light powder sugar glaze depending on how sweet you want them.

A very tasty scone recipe that takes no time at all. Though the recipe calls for dried cranberries, I usually use a mix of dried cherries and berries for variety and often use more than the 1/2 cup called for. I also sprinkle turbinado sugar on the top for a bit of crunch. I specify cutting this in sixths, which makes a good size scone, but if you want smaller ones, try eighths and cut down on baking time.

1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons butter, chilled
1 egg
1/3 cup buttermilk or 1/3 cup soured milk
1/2 cup white chocolate chips
1/2 cup dried cranberries

Steps:

  • Preheat oven to 400 degrees.
  • Mix together dry ingredients.
  • Cut butter into the dry ingredients with a pastry blender or two knives until coarse crumbs are formed.
  • Stir in cranberries and chips.
  • Whisk together egg and milk.
  • Make a well in the middle of the dry ingredients and add the liquid mixture. Stir together until moistened.
  • Dust bread board or counter top with flour and turn the dough out.
  • Fold the dough until it forms a large lump of dough.
  • Pat the dough into a disk about 8 to 10 inches in diameter. Cut into 6 wedges (I use a pizza cutter) and place them on an ungreased baking sheet, leaving them a little room to spread ( I use parchment paper).
  • Bake for 11 - 12 minutes or until they are golden. Place on a wire rack to cool.
